That is, unless you actually like gummy simple carbs and are willing to put your bod through the resulting blood sugar surge/crash and gathering of gluten all from eating one puny slice.

This kinda weird, but decidedly delicious flatbread has none of that nonsense. The texture of a Stokes Purple® is a little drier and denser than a traditional sweet potato, rendering it perfect for a substitute flour filler in my grain-free, gluten-free flatbread recipe. Purple sweet potatoes offer similar nutritional benefits of regular orange sweet potatoes in the fact that they are both healthy source of complex carbs with a low GI impact, are full of dietary fiber and many essential vitamins and minerals. So back to the sweet potato flatbread details, the recipe also features almond meal, and coarsely chopped pumpkin and sunflower seeds. There are a couple eggs in the recipe, but otherwise it’s dairy-free and suitable for a vegetarian or gluten-free diet. If you have an allergy to nuts, sub out the almond meal for an equivalent amount of oat-flour to keep it nut-free.

But, a little more interesting and flavorful than that “sweet potato toast” trend on Pinterest. You can also use two slices to bookend your favorite sandwich fillings – since I made these right after the holidays, my gluten-free sandwich is layered with leftovers including turkey, cranberry relish and spinach!

Instructions
  1. Heat oven to 400F degrees. In small food processor, coarsely chop sunflower and pumpkin seeds. Add to small bowl, along with other dry ingredients including almond flour, salt, pepper, chili powder and garlic powder.
  2. In small blender, add milk, eggs and 1 cup of pre-cooked sweet potato mash and process until smooth. Stir in remaining cooked sweet potatoes with spatula, adding a splash more milk if needed, but consistency should remain fairly thick.
  3. Scrape this wet mixture into bowl with dry ingredients and mix with spatula until well combined.
  4. Line rimmed baking sheet with parchment paper, and spread batter from end to end, corner to corner, keeping even thickness. Sprinkle with additional pumpkin and sunflower seeds, if desired.
  5. Bake for approximately 25 minutes or until edges and top are turning lightly golden brown. Remove from oven to cool on wire rack.
  6. Cut into pieces and serve warm or at room temperature. Save leftovers in zip-top bag in refrigerator – reheat in microwave or toaster oven before serving.

Vegan Chipotle Sweet Potato Soup with Cilantro Chimichurri

When I’m looking to make a meat-free soup into an entire meal, I have couple non-negotiable. The soup needs to be hearty and thick (as opposed to thin and brothy), it needs to have tons of flavor, and also should have a decent showing of protein.  Vegan Chipotle Sweet Potato SoupMy recipe for Vegan Chipotle Sweet Potato Soup with Cilantro Chimichurri meets all of these requirements and more — the “more” bonus is that it’s super easy to make and is loaded with healthy carbs to fuel my long runs and intense workouts. Slightly spicy while simultaneously smoky and just a tad sweet, a big hearty bowl of this meat-free, dairy-free, vegan soup will get you warmed up and keep you filled up until the next meal! My serving size is very generous and, sans the chimichurri, has 400 calories, 20 grams of protein, 80g healthy complex carb, 4g fat – plus is very high in potassium, vitamin A, and vitamin C.

As I mentioned, this is a great go-to soup when I’m carb-loading for winter marathons, Spartan races and other endurance events.

Blooming most spices helps to intensify their depth and complexity — the smoky flavor of ground chipotle pepper really opens up with this front-end method.

I originally developed this recipe for Litehouse Food’s Living Litehouse Blog using their Instantly Fresh Guacamole Blend as a quick fix in both the soup and the quick-fix Cilantro Chimichurri.  I highly recommend this freeze-dried herb product, it’s one of my all-time favorites with multiple uses beyond just guacamole making – try it in soups, stews, casseroles, stir-frys, and skillet dinners. However, if you can’t find the product in your market, I’ve asterisked the recipe with substitutions.

Cilantro ChimichurriThe Cilantro Chimichurri blended up to dress the soup is a bright and vibrant contrast to the more scarf-and-sweater vibe of the hearty soup. Plus, it adds a drizzle of heart-healthy olive oil to a soup recipe that is nearly fat-free.  You can also use this Cilantro Chimichurri on drizzled on steak and fish, as a salad dressing, or mixed into Greek yogurt as a dip.

Instructions
  1. Slice potatoes in half lengthwise. Place potatoes, cut sides down, in an 11 x 7-inch microwave-safe baking dish. Add 1/3 cup water; cover with plastic wrap. Microwave at HIGH 15 minutes or until potatoes are tender. Cool slightly, discard potato skins. Heat stock pot over medium-high heat. Add oil; swirl to coat. Add chipotle chili powder and sauté 1 minute or until fragrant.
  2. Place undrained beans in blender with approximately ½ cup of chicken broth, pulse until smooth. Add to stock pot.
  3. Scoop sweet potatoes out of skin and add to blender with remaining chicken broth and ¼ cup Guacamole Blend herbs. Process until smooth, working in batches if necessary. Add mixture to stock pot. Bring to simmer over medium heat, stirring frequently. If soup seems too thick add additional water or chicken broth to suit preferences.
  4. To prepare Chimichurri, add olive oil, fresh cilantro, Guacamole Blend herbs, lime juice, vinegar and salt to blender. Pulse until mixture coarsely combined.
  5. To serve, scoop soup into bowls and garnish with a dollop of Chimichurri.
  6. If you can't find Instantly Fresh Guacamole Blend, use this as substitute: For Soup, instead of 1/4 cup Guacamole Blend, use 3 tablespoons finely chopped cilantro, 1 teaspoon onion powder, 1/2 teaspoon dried red pepper flakes, 2 teaspoons minced garlic For Chimichurri, instead of 1/4 cup Instantly Fresh Guacamole Blend, use 3 tablespoons finely chopped cilantro, 1 teaspoon onion powder, 1/2 teaspoon dried red pepper flakes, 2 teaspoons minced garlic

3 Ways to Chow a Cherimoya + My #MustHaveBox

Just when I think I’ve tasted every type of fruit and vegetable there is to eat (ever been to Produce Convention), I realize that a tasty treat has slipped past my radar – the Cherimoya. Mark Twain once likened the cherimoya “deliciousness itself!”  – how did I ever miss the memo on this quite large and armored lizard-skinned looking fruit!

Once set aside solely for ancient Incan royalty, this “King of Fruit” is still a prized possession – they are delicious and hard to find . . . and usually fairly big-bucks if you do. But, so worth the investment as you will gobble up this healthy treat in a single sitting, especially if you have a friend sitting nearby with a spoon. The flesh inside is amazingly fragrant, soft, sweet and scoopable – there some seeds inside, but they aren’t too hard to flick away.  When selecting afruit, pick a cherimoya that is still green but showing minor signs of turning brown soon. Like an avocado, the fruit is ripened with the flesh yields to a gentle touch. So, if your fruit is still green and hard, let it ripen on the counter for up to three days – or stick in a paper bag to speed the process along.  Check out my friends at Frieda’s for other great Cherimoya Recipes and Tips.

So, my top 3 ways to chow a cherimoya are:

Cherimoya sprinkle with cinnamon and nutmeg1)  Sprinkle with Spices: Sliced in half and sprinkled with cinnamon, dash of nutmeg and a bit of honey drizzle – I swear it tastes just like apple pie. My kids think it tastes more like a pineapple and banana that got married and laid a big prehistoric egg.  Either way, it’s a taste bud winner – haha!

Pureed Frozen Cherimoya - Smoothie and Meal Pret2) Mixed into Oatmeal: I put chunks or puree of cherimoya in my morning oatmeal.  This is a great way for me to boost up the vitamin C, potassium, and in my fiber in my daily diet. If I find the fruit on sale or can’t eat what I’ve purchased before going too ripe, I simply puree the fruit in the blender with a tiny splash of lemon juice and freeze in heavy-duty zip-top bags (above picture). This will keep in the back of your freezer for 6 months! You can also sub in for 1/2 the oil in baked goods as you would applesauce, pumpkin or another fruit puree.

3) Blended into Smoothie: Blending cherimoya with orange juice is traditional but my recipe for Cherimoya Apple Cider Smoothie is super yummy.  I use one of the delicious, cold-pressed, 100% juice apple ciders from Litehouse Foods — so fresh you need to look for it in the produce department!

Directions: Add 2 tablespoons oats to bottom of blender, pulse for a few seconds to grind up. Add ½ cup cherimoya puree (preferably frozen) or fresh chunks, 3/4 cup unsweetened vanilla almond milk, ½ cup apple cider, ½ teaspoon cinnamon and 1 tablespoon honey (or sugar-free alternative) to blender and blend for 1 minute, adding a few ice cubes to achieve desired consistency. Serves 1.

Getting Sick AFTER Stress & How to Lessen “Let Down Effect”

!Have you ever become all-out sick, or at a minimum felt like crap on a crumby cracker, a few days after finishing a physically or mentally intense event like a marathon or Ironman, huge work deadline or even hosting a mother-in-law (not mine, of course)?  Falling under the weather after the black cloud of stress has lifted isn’t a coincidence; it’s an all-to-real occurrence that is referred to as the “Let Down Effect.” Physically and mentally stressful events may lessen immunity AFTER they happen.

Various studies have correlated the dissipation or “let down” of real or perceived stress with an increase in common colds, illnesses, flare-ups of chronic conditions like asthma, migraines, tummy trouble and other medical ailments.  By now, you’ve heard that chronic stress can make you sick and eventually even kill you, but many are surprised to learn that getting sick after a high-stress event (and while perhaps feeling quite relaxed about life) is all too common. This “Let Down Effect’ happens, in simple terms, due to the weakened state our bodies are left in left in after “things get better” – we use a lot of energy and resources to function in high alert mode without a break

When stressed, physically or mentally, increased levels of cortisol, adrenaline and other hormones put your body in fight-or-flight mode and mask the perception of pain. We are cleverly designed like this to safely and quickly extract ourselves during the threat of danger, so it’s not necessarily a bad thing. However, the immune system can be compromised, especially after prolonged periods of stress, and latent or chronic conditions can flare up.

In addition to these tolls of physical stress, the let down from emotional stress can cause many of the same problems. For example, dopamine (the pleasure and reward hormone) levels can drop, initiating possibly addictive behaviors like over eating, drinking and substance abuse as a person tries to subconsciously find relief.  

So, how do you prevent or at least lessen your chances of falling victim to the “Let Down Effect”?

Sleep Well:  Sleep deprivation compromises the immune system, so don’t pull all-nighters thinking you’ll come out ahead. Instead, do the best you can to get 7 to 8 hours a night by staying away from large late evening meals (including alcohol and caffeine), avoiding the blue light emitted from screens several hours before bed, taking a warm bath and using a diffuser to mist essential oils like lavender and chamomile.

Exercise Regularly: Moderate-intensity exercise done on a regular basis can keep your body from downshifting too quickly after a high stress event. If you don’t have time for an official jog or workout, try to include at least some extra walking or other movements in your day.

Decompress Frequently: If life is throwing too much your way, schedule non-negotiable “breaks” to relax whether it’s a 10 minute morning meditation, an entire hour devoted to yoga or even just 1 of minute of positive visualization every couple hours.

Nourish Your Immune System: Try vitamin C rich foods like oranges and grapefruit, vitamin E rich foods like sunflower seeds or spinach, zinc rich foods like beef and egg yolks. Instructions
  1. Generously spray large coffee mug with cooking spray.
  2. Add eggs, water and salt/pepper and whisk together with fork. Stir in beef and vegetables.
  3. Microwave on high for 30 seconds, remove and stir to “scramble”
  4. Return to microwave and cook for an additional 30 seconds, or until cooked through.
  5. Top with green onions and grated cheese, if desired.

Hunger Slaying Dragon Fruit Coconut Smoothie Bowl

I must say, I slayed yesterday’s tempo run and I think it was the dragon fruit smoothie I made for my afternoon snack.  Just like the perfect run, where speed comes without too much suffering, can be elusive . . . so is the dragon fruit.  You don’t see this beautiful tropical fruit very often, mainstream markets don’t usually carry them – so if you ever do see one, snatch it up! jennifer dragon fruitThe Dragon Fruit, also known as a Pitaya, Strawberry Pear or Mood Flower, is the unusually striking fruit of a cactus – don’t worry, there are no thorns or stickers on it!  There are different varieties – pink or yellow exterior and white or magenta interiors speckled with tiny edible seeds. Despite their showy appearance, the taste is quite mild, similar to a kiwi – I have found the yellow variety to be the sweetest.

Health Benefits of Dragon Fruit: First of all, like most fruits, dragon fruit is hydrating and provides healthy complex carbohydrates to fuel to body and brain. Dragon fruit is also surprisingly high in phytonutrients. Rich with beneficial antioxidants, this pretty (and pretty powerful fruit) a serving contains 10% Daily Value of vitamin C, polyunsaturated (good) fatty acids, a bit of protein, carotene, and several B vitamins that are essential for the optimal metabolism of carbohydrates.

dannon dragon fruit yogurt1I recently came into a huge windfall of dragon fruit from Frieda’s Produce, so I ate all I could simple by slicing open and digging out the flesh with a spoon! I’ve also sliced the fruit and put on my salads, in my yogurt and used in salsas.  They keep for about a week in the fridge (wrap in plastic wrap to extend the life) and can also be cut up or pureed to freeze. Later this week, before I go into freezer storage mode,  I’ll be  making Dragon Fruit Chia Jam. Stay tuned for that!

Today, I’m sharing that smoothie I hinted at, the one that made me run fast – haha!  My recipe for a Dragon Fruit Coconut Smoothie Bowl is a nourishing sweet treat that is a quick fix for breakfast, a pre or post workout snack or healthy dessert. It was almost too pretty to eat. Almost.  If you can’t find the fruit fresh, I’ve noticed that many upscale grocery stores sell it in the frozen fruit section.

Dragon Fruit Coconut Smoothie Bowl

  • 1 cup dragon fruit flesh (fresh or frozen)
  • 12 ounces almondmilk/coconutmilk (the carton kind from refrigerated section like Blue Diamond)
  • 1 scoop vanilla protien powder (or substitute 1/2 banana)
  • Ice
  • 2 tablespoons shredded unsweetened coconut
  • 1 tablespoon cacao nibs (I like the ones from NOW Foods)
  • Additional dragon fruit for garnish

To prepare, add dragon fruit, unsweetened coconut milk, and protein powder to blender. Process until smooth. Pulse in enough ice until desired consistency achieved. Pour into bowl (or tall glass)  and top with shredded coconut, cacao nibs and additional dragon fruit if desired. Serves 1
