Chocolate Speckled and Seeded Protein Cookie (Single Serve) + Toaster Oven Giveaway

This post and giveaway sponsored by Hamilton Beach, but all opinions and enthusiasm are my own!

I never thought I needed a toaster oven and, boy, was I soooo wrong. I changed my mind when recently developed a recipe for Hamilton Beach that would work in their fancy 4 Slice Easy Reach™ Toaster Oven with Roll-Top Door. Honestly, it was my first time using a countertop toaster since back in my childhood days when this is how I made my buttery, cinnamon toast for breakfast! I love the convenience and quick clean up so much, I’m giving away one of these amazing appliances to one of you (enter at bottom of post).

Single Serve Chocolate Speckled and Seeded Breakfast Cookie for Toaster Oven can be made in a conventional or toaster oven! It's also gluten-free and nut-free, plus sugar-free and dairy free without the chocolate chips. 268 calories and 16g protein for this jumbo, giant cookie!

Chocolate Speckled and Seeded Breakfast CookieThe recipe I made for Hamilton Beach was a single serve breakfast cookie Chocolate Speckled and Seeded Breakfast Cookie, a much healthier option than the sugar and butter on white bread treat I would cook up as a kid. Fresh baked from the toaster oven, this cookie is packed with flavor and nutrition thanks to whole grains, seeds, and just a smattering of chocolate to soothe a sweet tooth. The entire huge cookie has just 268 calories and 16g protein – plus it’s gluten-free and nut-free plus sugar free and dairy-free (if you don’t use the chocolate chips). So, what’s so awesome about a toaster oven?  Well, for one thing, it doesn’t heat the whole house up, and that’s a major concern here in Texas! But you still get that fresh-baked, crispy texture on foods that the microwave just can’t deliver – the little slide out tray will accommodate so many healthy food options – broil salmon, roast asparagus, bake eggs, make muffins and, yes, even make toast! It fits four slices of toast or even a 9” pizza! A smaller appliance is also so convenient when just preparing a meal for one or two people and works well in a dorm room, RV, cabin, office kitchen or other places where space is tight. Plus, the 4 Slice Easy Reach™ Toaster Oven with Roll-Top Door has several unique features including a removable roll-top door than makes it super easy to clean up!

  1. I would make baked oatmeal with bananas, walnuts, dried cranberries, cardamom and honey.

  2. I’d make weight watchers bread pudding without the bread! Basically it’s a custard – makes a great healthy start to the day when you eat it for breakfast!

  3. I love tuna melts in the toaster over. Using high fiber bread, lo cal mayo and lots of chopped veggies can reduce the calories way down, but not the taste.

  4. i would roast some brussels sprouts in the toaster oven. i can’t wait to have the chance to use the toaster oven instead of heating up the whole house.

  5. I’d try to make cookies like the ones you made in this post. They look delicious and unlike anything I’ve seen before!

  6. I want to make french bread pizzas, just like in jr high school.
(but with better toppings than greasy pepperoni)

  7. I make everything in a toaster oven. I really like to bake a bunch of chicken breasts in parchment then store them in the fridge to eat during the week. I usually throw together different salads using the ready-made chicken.

  8. I would use this to cook fish sticks and nuggets for our kids, saving me from having to heat up the entire oven for a dozen fish sticks.

  9. I would make mini pizzas, casseroles, baked asparagus and roasted brussel sprouts to begin with.

  10. I would use it to warm up chicken nuggets and fries for my little guy. Thanks for the chance to win!

  11. I would use it to toast my sandwiches. Warm up the meat and melt the cheese. So yummy!

  12. I would make baked fish in the toaster oven. I love how compact this is, and the ease of use!

    • It was super easy! I’ve even double or tripled the dough recipe and kept in fridge so I could bake a fresh one for a couple days in a row!

  13. I would love it for warming up leftovers instead of using the microwave all the time!

  14. I entered previously but had to change my social media accounts to the following FB Tracie Michelle Cooper, Instagram @traciemichelle05, Twitter @traciemich05, pinterest Tracie Michelle Cooper and my email is traciemichelle0515@gmail.com

  15. I’d make my “mama’s pizza” basically it’s a flatbread with tomato paste then sprinkled with oregano and thyme and a little shredded cheese. My kids love it but I hate having to crank up the oven especially in the Florida summer for a little mini pizza. This would be perfect.

  16. I would heat up tiny pizzas. It would be perfect to make child sized portions. It’s a waste to preheat and cook 5 chicken nuggets in the oven.

  17. I would cook some boneless chicken with ranch dressing and bacon strips on top and I would bake it until the chicken and bacon is almost done and then I would add some cheddar and jack cheese and toast that for a few more minutes and what a great meal this would be.
