No-Bake Green Chia Protein Cheesecakes

Today I ate cheesecake for breakfast. Before you think I’ve lost my mind, let me assure you this was no dessert sugar and fat bomb – it fact, quite the opposite. My No-Bake Green Chia Protein Cheesecakes are practically overflowing with wholesome goodness and make a smart, simply yummy choice for a healthier dessert, afternoon snack or, yup, even a morning meal.  No Bake Green Chia Protein Cheesecakes are an easy, high-protein recipe for breakfast, dessert or snack time.

The creamy portion of these Green Chia Protein Cheesecakes is simply low-fat cottage cheese and vanilla protein powder blended together until smooth. The crust is a no-bake “dough” of almond meal, nut butter and unsweetened coconut powder pressed into the bottom of a bowl. The topping is a gel of chia seeds and a powdered “green” supplement containing nutritious greens, phytonutrient-packed fruits, veggies and cereal grasses, digestive enzymes and probiotics. There are several brands on the market, I used Green Superfood from Amazing Grass.

No Bake Green Chia Protein Cheesecakes are an easy, high-protein recipe for breakfast, dessert or snack time.

Ingredients are mixed according the recipe directions (see below) and layered into individual  8-ounce ramekins or small glass containers (in the photo, I’ve used repurposed glass yogurt jars) – wide-mouth canning jars with lids are perfect too! I’ve topped with cacao nibs but you can garnish as your heart and taste buds desire – try nuts, seeds, or diced fruit!

Each of these yummy little green cheesecakes has just 256 calories, 14g fat, and 20g protein and low carb with 13.5 total carbs (7.6g of which are dietary fiber). Also, boasts so many other nutrients including 22% of your daily need for calcium, 10% iron, 16% magnesium, 22% vitamin E and 15% vitamin A.

Personal-sized cheesecakes so nutritious you can enjoy at breakfast thanks to cottage cheese, protien powder, a green superfood supplement and a yummy crust of almond meal, coconut and nut butter! Another bonus -- no cook!

Ingredients
  • 1 scoop Amazing Grass Green Superfood or similar product
  • 4 tablespoons chia seeds
  • 8 little packets stevia divided
  • 1 cup almond milk divided
  • 3 tablespoons almond flour
  • 3 tablespoons shredded unsweetened coconut
  • 2 tablespoons nut butter of choice
  • 1 cup no-fat cottage cheese
  • 2/3 cup vanilla protein powder of choice
Instructions
  1. Shake together green superfood powder, chia seeds and 3 little packets of stevia with 3/4 cup + 1 tablespoon of almond milk in mason jar. Set in fridge to gel up for 2 to 3 hours.


  2. Meanwhile, mix 3 tbsp. almond meal, 3 tbsp. shredded unsweetened coconut, and 2 tbsp. nut butter together into a crumbly dough. Divide and press into the bottom of four 6- to 8-ounce jars, cups or ramekins.

  3. In blender, blend cottage cheese, 2/3 cup vanilla protein powder, 5 little packet stevia, and remaining 3 tbsp. almond milk until mostly creamy.


  4. To assemble, spoon cheese mixture evenly over crusts, then top with even portions of the gelled green chia mixture. Garnish with cacao nibs, or whatever desired.

    These are friggin’ GENIUS! And I haven’t incorporated chia seeds into my diet in a LONG ASS TIME so I need to get to the store ASAP and get em innnnn!
