So back to this No-Bake Tiramisu Protein Bar recipe — after mixing up the cottage cheese and protein powder, coconut flour and stevia-based baking blend are added and then the dough is divided into two equal portions. To one portion, micronized instant coffee (like Starbucks Via) and unsweetened cocoa is added. To the other portion, more with Clean Lean Protein from Nuzest. Pro tip: a spatula is only going to get you so far in mixing in the final ingredients. You’ll need to get in there with clean hands and knead everything in until combined with no more crumbles. 

Roll out each section on wax paper and then carefully stack. Cut this again and then stack on the “stack.” Cut in to bars, store in the fridge.

Making homemade protein bars is easy and economical! These tiramisu dessert inspired bars have hints of chocolate, coffe and cream with only 77 calories, 5g net carbs and 10g protein.

Ingredients
  • 1 cup 1% cottage cheese
  • 3 tablespoons water
  • 1/4 cup stevia baking blend a cup-for-cup equivalent product
  • 1/3 cup coconut flour
  • 2/3 cup Nuzest Lean Clean Protein Powder (vanilla) or other plant-based powder
  • 3 tablespoons Nuzest Lean Clean Protein Powder (vanilla) in addition to above
  • 2 tablespoon unsweetened cocoa powder
  • 1 packet individual micronized instant coffee like Starbucks Via
Instructions
  1. Add cottage cheese, water and stevia to blender and blend until smooth.

  2. Use spatula to scrape into bowl, mix in 2/3 cup protein powder and coconut flour.

  3. Divide mixture into half, putting in 2 separate bowls. 

  4. In one bowl add additional 3 tablespoons of protein powder and use clean hands to knead everything together into a dough ball.

  5. To other half of dough, add instant coffee and cocoa powder, using hands again to knead into a dough ball.

  6. Roll out dough onto sheets of waxed paper to about 1/4" thickness, trying to maintain a rectangle shape.

  7. Carefully place one dough on top of other, trimming off rough edges into a rectangle.

  8. Cut this "stack" in half and place on top of each other to create 4 layers high.

  9. Cut into 9 bars.

  10. Use any dough remnants from cut off edges to create protein balls.
