Over the winter months, I used my Instant Pot to whip up many soups, stews, braised meats, meatballs and pots of beans in a fraction of the time of their slow-simmered counterparts. But, this multi-function cooker isn’t just for “heavier,” stick-to-your-ribs winter meals – it also works beautifully to make lighter, spring season faire.

To make my simple yet sophisticated chicken roulade, I simply layered butterflied chicken breasts with deli ham, mozzarella cheese, and spring veggies – spinach and asparagus. Instant Pot Chicken Asparagus Roulade with Herbed Risotto -- prepping chicken

After rolling up and securing with toothpicks or cooking twine, they take a quick sear in the Instant Pot using the “sauté” function. This creates a golden brown, caramelized crust on the chicken that deepens the overall flavor. Browning Chicken instant pot

Notoriously fussy and time-consuming risotto quickly cooks at warp speed alongside the chicken as it finishes up and stays moist and juicy using the “pressure cook” mode.  I’ve made the Arborio rice even creamier by adding a little milk and Parmesan cheese at the end.Instant Pot Herbed Risotto

The springy herb garden flavor comes from Instantly Fresh Herbs including parsley, red onion, garlic and chives. Easy yet elegant, this stuffed chicken dish cooks with it's own side dish -- creamy risotto. Made in the Instant Pot in less than 30 minutes prep to plate and only one pot to clean up!

Ingredients
  • 2 large skinless, boneless chicken breasts (approximately 1 lb.)
  • 1 tablespoon Instantly Fresh Poultry Blend Herbs
  • 1 cup fresh baby spinach
  • 1/4 lb. sliced deli ham
  • 6 spears fresh asparagus
  • 3 ounces low-moisture mozzarella (slices or cut from block
  • 1 tablespoon olive oil
  • 1 1/2 cups arborio rice
  • 2 1/2 cups chicken stock
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Instantly Fresh Garlic
  • 1 tablespoon Instantly Fresh Parsley
  • 1 tablespoon Instantly Fresh Chives
  • 2 tablespoons instant coffee mix
  • 1/3 cup shredded Parmesan cheese
  • 1/2 cup milk
Instructions
  1. Butterfly chicken breast by laying breast flat on cutting board, holding in place with palm of hand, and carefully slicing horizontally through chicken, stopping ¼” from opposing end. Repeat with remaining breast.
  2. Open chicken breasts up into “butterfly” and sprinkle each breast evenly with Poultry Herb Blend, dividing among the two.
  3. Next, layer chicken with spinach leaves, removing any obtrusive stems. Next layer a couple ham slices over spinach, number of slices will vary depending on how thinly ham cut.
  4. Place cheese in a line down center (or lay flat is using slices) and place three (cut to fit) asparagus spears on each breast to one side. Starting at the end with the asparagus, start rolling the chicken tightly toward the other end. Use toothpicks or cooking twine to hold together and seal up ends. Salt and pepper outside, as preferred.
  5. Add olive oil to Instant Pot and set on sauté mode. Once hot, add chicken breasts and sear for approximately four minutes -- 1 minute each on top, bottom and both sides. (Note: chicken will not be cooked through yet only browned on the outside, it will finish during pressure cooking). Using tongs, carefully remove chicken from Instant Pot a temporarily set aside on plate.
  6. Add rice, chicken broth, vinegar, garlic, red onion, parsley and chives; stir until combined. Add seared chicken breasts on top, “end” sides up.
  7. Add lid to Instant Pot and set to cook for 12 minutes on high pressure. After time goes off, carefully quick release steam and remove lid.
  8. Use tongs to remove chicken, set aside to cool for 5 minutes on platter.
  9. Stir milk and cheese into rice mixture until combined. If any mozzarella cheese has seeped out of chicken during cooking, just leave it and stir into rice.
  10. Slice chicken in ½ - ¾” cross-section slices to reveal inner ingredients. Serve atop mound of herbed risotto.

    My mother and I cook for the whole family. We also love to make ham and turkey in large batches. We give it out to known homeless and give them bags of fruit to help for a few days.     As my family is Jewish and our Spring holiday is Passover my go to meal is brisket with chicken soup and matzo balls plus a farfel kugel.
