Parmesan Purple Sweet Potato Grits with Creole Shrimp

I feel like I should rename this post, Grits Gone Wild. Plus, I love how it’s a quick fix on busy nights and, if desired, the shrimp can be left off for a vegetarian side dish . . . . perhaps for Thanksgiving?

It sounds sort of indulgent, but each serving has less than 400 calories with 27 grams of protein!

As I mentioned earlier, if you don’t want to do the shrimp, just skip and you still have a hearty side dish.  To make things even quicker, I often put a bunch of ‘em in the slow-cooker all afternoon and then mash them up so I can use as a quick side dish or ingredient all week.

Ingredients
For Purple Sweet Potato Grits
  • 1/2 cup quick cook white grits
  • 1/2 teaspoon salt
  • 2 cups water
  • 2 ounces finely grated Parmesan cheese
  • 2 cups pre-cooked, mashed purple sweet potato Stokes Purple from freidas.com
For Shrimp
  • 12 ounces pre-cooked frozen jumbo shrimp, thawed
  • 1 1/2 teaspoons creole seasoning
  • 1 tablespoon butter
  • 1 tablespoon fresh chopped parsley
  • optional: additional Parmesean cheese, if desired
Instructions
  1. Add water and salt to 1 ½-qt pot and bring to boil over medium-high. Add grits and reduce heat to medium-low, simmering for about 5 to 7 minutes uncovered. Most water should be absorbed, but they will still look a little wet.
  2. Stir cheese until melted in. Stir in mashed purple potato and return to stovetop to warm for a few minutes, if needed. If mixture seems to thick, add a splash of water or milk and stir in.
  3. In small skillet, add 1 tablespoon olive oil and bring to medium-high heat. Add shrimp and statue for 3 to 4 minutes until hot. Add butter and creole season and stir until melted and coating shrimp.
  4. Pour shrimp along with pan sauce over grits. Top with additional parmesan cheese and fresh chopped parsley.

    • I’ve only ever liked really thick grits, too thin and it’s a texture thing for me also! The purple sweet potatoes are the perfect yummy solution to this problem!

  1. I had never even heard of a purple sweet potato until now! I love veggies and eggplant is probably the best purple food.

  2. No,I have never even seen a purple sweet potato before. I didnt know there was such a thing.
    I guess the only purple food I have ever had is grapes- does that count? Its not a color you run into much. I guess some beet juices appear purple too.

  3. I have never eaten them, and did not even know they existed prior to seeing your post. My favorite purple food would be grapes.

  4. I’ve had purple potatoes, but they weren’t of the sweet variety. My favorite purple food is grapes, I like the Moon Drop variety!

  5. I haven’t tried a purple potato yet, but I would love to. Eggplant is my favorite purple food.
