Busy morning school routines combined with dwindling daylight hours can make waking up in September a challenge. My boys have become snooze button beasts, but not anymore! They are up and at ‘em earlier with much more enthusiasm now that I’ve added some yummy breakfast eating options to the morning menu.

We all are totally loving the new Pepperidge Farm Swirl Oatmeal breads, the thick and hearty whole grain slices make a yummy foundation for slathers for spreads, sandwich fillings, and such. Today, I’m sharing ways to use this delicious breakfast bread, including my Pumpkin Maple Peanut Butter Panini with Banana!

pumpkin chest squatThat’s right, I’ve got a pumpkin, knocked out a few squats and have boarded the pumpkin wagon and am not coming back until well after Thanksgiving and maybe even the New Year. From loaves of pumpkin bread to pumpkin lattes, there is a feeling of comfort mixed with a dash of anticipation that comes from the sight, smell and taste of pumpkin. The fact that it’s just as nutritionally sound (packed with vitamins and fiber) straight out of the can, is a huge convenience factor for this busy mama.

This 10-min breakfast sandwich adds "ahhh-yeah" to autumn mornings thanks to pumpkin, peanut butter, bananas & slices of Pepperidge Farm Swirl Oatmeal bread
Course: bread, Breakfast, Fruit, Main Dish, Snack
Cuisine: American
Servings: 2 servings + extra peanut butter
Ingredients
  • 1/2 cup canned pumpkin puree
  • 1/2 cup natural style peanut butter
  • 2 tablespoons real maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 4 slices Pepperidge Farm Swirl Oatmeal bread in the Maple Brown Sugar variety
  • 1 large banana
  • cooking spray or butter, if you'd rather!
  • Powdered sugar and cinnamon for dusting
Instructions
  1. In small bowl, mix together pumpkin, peanut butter, maple syrup and pumpkin pie spice until blended well Makes 1 cup.
  2. Spread 1 tablespoon pumpkin peanut butter mixture on each slice. Top two slices with banana slices. Top each with second slice of bread to make sandwiches.
  3. Spray large skillet or panini press lightly with cooking spray and bring to medium heat. Add sandwiches, flipping once if using a skillet, until bread is turning toasty golden brown.
  4. Remove sandwiches from heat, allow to cool for 1 or 2 minutes. Dust with powdered sugar and cinnamon, if desired. Cut into halves and serve.
  5. Note: Leftover pumpkin maple peanut butter can be kept in an air-tight container in the refrigerator for up to 5 days.

    This would be great as a sub for cereal on days that we are running late. My kids eat cereal mon- fri and pancakes or grit on sat-sun.

    • We’ve been making panini and nut-butter toasts with this bread — I also make a lot of protein-pancakes ahead of time and freeze for convenience on crazy school mornings.
