Busy morning school routines combined with dwindling daylight hours can make waking up in September a challenge. My boys have become snooze button beasts, but not anymore! They are up and at ‘em earlier with much more enthusiasm now that I’ve added some yummy breakfast eating options to the morning menu.
We all are totally loving the new Pepperidge Farm Swirl Oatmeal breads, the thick and hearty whole grain slices make a yummy foundation for slathers for spreads, sandwich fillings, and such. Today, I’m sharing ways to use this delicious breakfast bread, including my Pumpkin Maple Peanut Butter Panini with Banana!
That’s right, I’ve got a pumpkin, knocked out a few squats and have boarded the pumpkin wagon and am not coming back until well after Thanksgiving and maybe even the New Year. From loaves of pumpkin bread to pumpkin lattes, there is a feeling of comfort mixed with a dash of anticipation that comes from the sight, smell and taste of pumpkin. The fact that it’s just as nutritionally sound (packed with vitamins and fiber) straight out of the can, is a huge convenience factor for this busy mama.
Keeping this convenience factor in mind, the Pumpkin Maple Peanut Butter in the panini is equally easy. No grinding of peanuts in the Vitamix and huge messes to clean up. The process is just the mere matter of stirring together a quality peanut butter with canned pumpkin, real maple syrup and a few seasonal spices. A batch of this will stay fresh in the fridge, in an air-tight container, for up to a week.
Then you slather this ahhhhhh-mazingness onto thick slices of Pepperidge Farm Swirl Oatmeal bread (Maple Brown Sugar). Those slices are generous, my eyeballin’ bets they’re at least ½” thick each! Next you add sliced bananas, slap the sides together, and crisp up in a skillet or panini press until the bread is toasty brown and the inside is warm and gooey – – it’s just that easy! The kids will looooooooove you for this – it’s like a grilled PB&J for breakfast (that they’ll also be begging for lunch and dinner).
