Sugarless Sugar Cookies – Cut Outs for Christmas

While this tried-and-true cookie recipe is sugar free and has a gluten free option, it does contain eggs and dairy products. So please be aware, if these are allergy triggers. While we don’t have any specific food sensitivities in my immediate family, I do like to make a batch of Sugarless Sugar Cookies to preemptively address any dietary restrictions of guests – I want as many people as possible to enjoy my goodies! Sugarless Sugar Cookies are delicious sugar free option for your Christmas or other holiday party. To make the cookies gluten-free, keep it easy and swap the all-purpose flour for an equal volume gluten-free blend, like Bob’s Red Mill Gluten Free 1-to-1 Baking Flour. This brand is a staple for my holiday baking, including my frequently requested recipe for Gluten Free Almond Joy Cookie Brittle (sooooo good).  Sugarless Sugar Cookies

As a sugar alternative, I’m really into the Sugarless Sugar from Ellyndale/NOW Foods. It’s a “one-to-one” substitute, meaning an equal amount of Sugarless Sugar is used instead of the regular sugar in the recipe.  The primary sweetening agents are erythritol and an organic stevia extract. It’s all natural (no artificial chemical sweeteners) and has just 1/3 the calories of regular table sugar. Not only can you use it in the cookie dough, but also in the cookie icing.

To decorate my cookies, while keeping sugar free, I simply crushed up dehydrated strawberries (like these) – bonus, the strawberry “powder” makes a nice red color, without any artificial dyes. You could also stir a few tablespoons of it into the icing to make red frosting!

Be festive, stay fit! These classic holiday cut-out cookies are sugar-free . . and gluten-free, if needed. Crushed dehydrated fruit decorates the top!

Servings: 36 cookies (or less, depending on size)
Ingredients
For cookies:
  • 1 cup salted butter
  • 1 cup sugarless sugar or other 1 to 1 cup sugar alternative
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour or 1:1 gluten-free baking blend
  • 1 teaspoon baking powder
Sugarless Icing
  • 1 cup sugarless sugar
  • 4 teaspoons pasturized egg whites from carton
  • 1/4 teaspoon cream of tartar
Instructions
For cookies
  1. Soften butter and cream with sugarless sugar, with hand mixer for 2 minutes.
  2. Beat in egg for another minute. Add vanilla and mix in.
  3. Add flour of choice and baking soda, mix with beater until incorporated, scraping down bowl with spatula, as needed.
  4. Cover and chill dough for 2 hours. When chilled, roll out to about 1/4" thickness and use cookie cutters to create desired shapes.
  5. Using flat spatula, transfer cut-outs to baking sheet, spaced an inch apart, with silicone baking sheet or parchment paper.
  6. Bake for 12 to 15 minutes or until turning lightly golden brown.
  7. Remove from oven, and let cool before icing and decorating.
For icing:
  1. Add sugarless sugar, egg and cream of tartar to bowl and use hand mixer to combine, until smooth for 2 to 3 minutes. If needed, ad a bit of water to thin down. Decorate as desired.
