The stomachs of football fans everywhere are getting ready to rumble – it’s almost Super Bowl Sunday. Whether you are rooting for the Philadelphia Eagles or the New England Patriots, or just tuned in for the commercials, GOOD FINGER FOOD is one thing we can all agree on. My recipe for Jalapeno Cheddar Chicken Tenders with Ranch Dip is a favorite at all gridiron gatherings – and is likely to be gone sometime between kick off and half time. Good reason to make a double batch!
This “impostor” recipe looks just like a slice of sweet cheesecake piled high with plump berries and pomegranate arils but it’s actually savory-sweet cheese dish to get the flavor party started! Read on to get all the yummy details and easy recipe. Continue reading
Have you ever shown up at a holiday party, office event, potluck gathering or even hosted your own shindig and been that person who brought the way too healthy appetizer to share? As a typically clean-eating, food-as-fuel sort of girl, I’ve been guilty of that. It was the dish everyone avoided like getting the flu on Christmas Eve, another holiday tragedy I wish not to repeat. In the spirit of “let’s live a little,” I’m sharing my recipe for Pull Apart Bacon Blue Cheese Bread.
No one can resist the flavor bomb which comes from piling bacon and blue cheese on cut-up, buttered-up biscuits. I ran all the miles and lifted all the weights this year, and I don’t feel one bit regretful about incorporating this easy appetizer into my holiday entertaining (and eating) plans. I noticed that guests didn’t seem to mind Pull Apart Bacon Blue Cheese Bread either, not one little (bacon) bit! Read on to get the quick and easy cheese bread recipe: Continue reading
I’m a salad eater year ‘round. In fact, I don’t think a day goes by that I don’t enjoy some sort of salad and fall is full of hearty possibilities. Sunday is National Monte Cristo Day (9/17), proving once again that we Americans love to celebrate all things food. The yummy dish reminds me of a collision between French toast and a lunch box ham sandwich – the traditional version, a favorite during my childhood, is made with ham and cheese book-ended between white bread, dipped in an egg mixture and then pan fried or even deep fried (gasp) with raspberry preserves and powdered sugar to garnish! Crazy yum!
Of course, I’m anything but traditional so today I’m sharing my even more brazen version of this classic sammie – a Beef Blue Cheese Monte Cristo with Cherries! Read on to get all the juicy details and recipe. Continue reading
If I could pick the perfect pepper, it would be a Hatch green chile. In season for just a short time in late summer, these long, fleshy peppers are amazingly delicious grown in the soils of Hatch, NM along the Rio Grande. Because I’m a bona find Hatch-horder (one time having over 75 pounds of fire-roasted peppers in my freezer), I have yet another delicious recipe to share – Hatch Chile Breakfast Bake!
It’s real family pleaser and can be served for breakfast, lunch or dinner. Heck, crumble up the leftovers in a tortilla, douse in hot sauce and avocado and get to town! Read on to get the recipe and all the details, better hurry before Hatch season ends.
Ready to wake up and tackle the day or refuel after a long hard one with a healthy meal but feel too rushed or worn down to be in the kitchen? I have a delicious 30-minute dish that uses only five ingredients (salt, pepper and olive oil are freebies) and has a happy balance of protein, carbs and leafy greens to give you that boost of good nutrition your body craves.
My recipe for Brisket, Sweet Potato & Kale Frittata is destined to become a favorite in your busy workweek repertoire. It’s also a smart solution for any type of leftover beef and ideal for meal prepping, just pop individual slices in the freezer for a blazing-fast meal later. Continue reading
Roman Emperor and asparagus aficionado, Caesar Augustus, had an expression — Velocius quam asparagi conquantur! Literally it meant “Faster that cooking asparagus,” but the point Augustus was trying to get across to his military minions was “Get going already”!
Today I’m sharing a no-cook recipe that, by definition, IS FASTER than the already fast task of cooking asparagus. Try my Shaved Asparagus, Spinach and Pea Salad with Quinoa, it comes together in mere minutes and will pass muster with even the pickiest produce eaters! Continue reading
