It never fails that every time I’m cubing the watermelon for this recipe, the kids start circling around like flies – I swear, they can eat it faster than I can prep it!

That’s fine by me, though — watermelon is such a healthy and hydrating treat for the summer! By the way, here’s a handy way to slice up a watermelon that makes it easy to eat – it’s not your traditional wedge!

Spicy Shrimp & Watermelon Kabobs

Ingredients
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon Sriracha sauce I prefer Fixx brand
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 4 cups cubed, seedless watermelon
  • 1 lb wild caught gulf shrimp (or 4 packets of shrimp from SizzleFish.com)
  • 1 medium red onion, cut into 1" pieces
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • minced fresh cilantro
Instructions
  1. For glaze, puree the soy sauce, sriracha, honey, garlic and 2 cups of watermelon in blender. Bring to a boil in small saucepan. Cook uncovered, until reduced by half.
  2. On four soaked wooden skewers, thread shrimp, onion and remaining melon. Sprinkle with salt and pepper.
  3. On oiled grill race over medium heat, grill kabobs, covered or until shrimp turn pink. Brush with half the glaze during the last 2 minutes. Sprinkle with cilantro and serve with remaining glaze.

BBQ Shrimp Kebabs with Pineapple & Kumquats – Foodie Flag Flying for July 4th

July 4th festivities will be firing up through the week . . .and I bet your grill is too! It’s no coincidence that July is National Grilling Month considering 200 million Americans own a grill and 72% plan to put a gas or charcoal grill to use on Independence Day (HBPA data). Personally, I enjoy the freedom from cooking in the kitchen and, while it’s traditional to throw down some burgers, dogs or steaks on the grates, my recipe for Sticky-Sweet Shrimp, Pineapple & Kumquat Kebabs gives you the liberty to let your creative food flag fly.

Pineapple Kumquat BBQ Shrimp Kebabs are a quick and easy grilled dinner solution with loads of flavor!

kumquatsWhile I’ve skewered up shrimp, pineapple and kumquats, it’s your inalienable, edible right to use the proteins, fruit and veggies you like best on a kabob.  However, I highly recommend the kumquats, grilling makes them even more fabulous. However, in the USA, this fruit (that is like a mini orange with edible skin) is in season from November through July – so hurry up and grill some! If you can’t find kumquats, you can substitute orange wedges.

Nutritional and Health Benefits of Kumquats: 

According to the USDA National Nutrient Database, a serving of eight whole raw kumquats (including peel) has 108 calories. This same serving size is an excellent source of dietary fiber, providing 9.9 grams — more than 25% of the Daily Value for men, and nearly 40% for women. Kumquats are also a great course of Vitamin C, Vitamin A, riboflavin and even calcium (providing almost 10% of the adult daily needs).

Fiber

A diet high in dietary fiber is beneficial to the health of your heart and gastrointestinal tract. Eight raw kumquats provide 9.9 g of dietary fiber. The amount of fiber recommended daily by the Institute of Medicine is 25 g for women and 38 g for men. Dietary fiber also controls blood glucose and insulin concentrations and reduces the risk of developing Type 2 diabetes.

Vitamin C

Vitamin C is an important antioxidant and is necessary for the health of blood vessels, tendons, ligaments and bones. According to the USDA, eight raw kumquats have 66.7 mg of vitamin C. The National Institute of Health has set the daily recommended amount at 75 mg for women and 90 mg for men. Adequate vitamin C is also necessary for proper wound healing.

Vitamin A

Vitamin A is a fat-soluble vitamin that promotes vision and is necessary for the health of teeth, skeletal tissue and skin. Eight raw kumquats have 441 IU of vitamin A. According to the Institute of Medicine, men need 3,000 IU of vitamin A daily and women need 2,333 IU. Vitamin A also functions as an antioxidant, protecting your body from free radical damage.

Riboflavin

Kumquats provide the B vitamin, riboflavin, which is a component of various enzymes involved in energy metabolism. Eight kumquats provide 0.137 mg of riboflavin. The daily amount of riboflavin recommended by the National Institute of Medicine is 1.1 mg for women and 1.3 mg for men.

Calcium

Calcium is essential for nerve transmission, muscle contraction and for formation of teeth and bones. The USDA National Nutrient Database shows that eight kumquats have 94 mg of calcium. The Institute of Medicine recommends adults consume 1,000 mg of calcium daily.

BBQ Shrimp Kebabs with Pineapple & Kumquats

1 lb jumbo shrimp with tails on, peeled and deveined (approximately 24 shrimp) 2 cup fresh pineapple chunks 24 kumquats (or orange slices/ wedges with peel on) 1 cup Stubbs BBQ Sauce Sweet & Sticky flavor (divided equally into 2 bowls) Garnish, toasted unsweetened coconut

Servings: 4 servings
Ingredients
  • 1 pound jumbo shrimp,, peeled and deveined (approximately 24 shrimp) I use 4 individual packs of wild gulf shrimp from Sizzlefish.com
  • 2 cups fresh pineapple chunks
  • 24 kumquats (or orange slices)
  • 1 cup Sweet BBQ Sauce (divided 1/2 cup & 1/2 cup) I used Stubb's Sticky Sweet Bar-B-Q Sauce
Instructions
  1. Use 8 metal skewers or soak 8 bamboo sticks in water for 10 minutes. .
  2. On each skewer, thread on 3 shrimp, 3 pineapple chunks and 3 kumquats in alternating pattern.
  3. Place skewers on grill heated to approximately 400 F degrees, cook for approximately 2 minutes, brush sides with bbq sauce and then grill for 1 additional minute.
  4. Flip skewers, brush with additional bbq sauce and cook for approximately 2 more minutes or until shrimp are pink and no longer translucent.
  5. Discard bbq sauce used for brushing on shrimp. Sprinkle kebobs with coconut and serve with rice and remaining ½ cup bbq sauce for dipping or drizzling.

Pepita Crusted Salmon & Calabacitas platedCast your net beyond nachos, tacos and enchiladas, my Pepita-crusted Salmon with Skillet Squash is a yummy Mexican cuisine inspired meal that is guaranteed to reel in compliments. Even though salmon isn’t found anywhere near the mild oceans and seas of Mexico, this seafood-loving culture enjoys fish from around the world – just like we do here in North America. So, it’s salmon for dinner tonight!

Pepita Crusted Salmon with Skillet Squash is a fast, flavorful and fit option for a weeknight dinner.

This fish and veggie recipe will be a regular in your weeknight dinner routine, it’s as easy as uno, dos, tres! First, spread with your favorite ranch or creamy dressing (I use Cotija Cilantro Ultra Premium Dressing) atop a salmon filet. Second, top salmon with crushed tortilla chips and roasted pumpkin seeds (pepitas), and then bake for 12 minutes. While fish is cooking in the oven, a quick skillet of squash comes together in minutes for a speedy yet stunning side dish generically called “calabacitas”  — I used Mexican-style zucchini but you can easily substitute with your favorite summer squash such as sunburst or crookneck.

Ingredients
  • cooking spray
  • 4 4 to 5 ounce salmon filets, skin on
  • 1 teaspoon ground black pepper
  • 3 ounces finely crushed tortilla chips
  • 1/3 cup roasted pepitas (pumpkin seeds)
  • 1/2 cup creamy ranch-style dressing with jalapenos or chilis (divided)
  • 1 lbs. Mexican Zucchini (or other summer squash), sliced to ¼” thickness
  • 1 medium red bell pepper, chopped
  • 1 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon ground garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground oregano
  • 1 teaspoon dried red pepper flakes
  • 1/2 teaspoon salt
Instructions
  1.  Preheat oven to 400 degrees F. Line rimmed baking sheet with foil and lightly coat with cooking spray.
  2. Add tortilla chips a zip top bag and crush to a coarse consistency with rolling pin. Add peptias to bag, shake to combine, and pour out mixture onto shallow dish.
  3. Pat salmon filets dry with paper towels, place skin side down and sprinkle top with pepper. Brush each top with approximately 1 tablespoon creamy dressing. 
  4. One at a time, pick up the salmon filets and press the coated side down into the tortilla chip mixture until evenly coated. Place the salmon tortilla side up on the baking sheet and sprinkle with additional pepitas, lightly pressing them down, if desired.  Discard the unused tortilla chip mixture.
  5. Bake for 12 minutes, until the coating is crisp and fish begins to flake when pressed with a fork.
  6. While fish is baking, add olive oil to large skillet and bring to medium-high heat. Add garlic, squash and bell pepper and sauté, stirring constantly, for approximately 4 minutes or until softened. Stir in cumin, oregano, red pepper flakes and salt, continuing to cook for another 1 minute. Remove from heat and toss with pepitas.
  7. To serve, top salmon with an approximate 1 tablespoon dollop of creamy dressing with a side of the prepared squash.

However, I haven’t eliminated all grain and starchy carbs from my diet, because after experimenting around with Paleo and such, I really feel like I need some quality carb fuel to keep me where I want to be as an athlete. That being said, the powers of protein have done great things for me including speeding up my recovery time, leaning me out and boosting my brain power (okay, jury still out on that one)! Everyone knows I love beef, that’s no secret – but when it comes to getting enough quality Omega-3 fats, even a Texas rancher would say – go eat some fish! My husband and I eat at least two servings of Omega-3 rich fish per week and you should too! I think you’ll love this fall-seasoned recipe I created this weekend – Coho Salmon with Cranberry and Jalapeno Compote.

Coho Salmon with Cranberry and Jalapeno Compote Recipe (serves 2)

  • ½ cup fresh squeezed orange juice
  • ¾ cup fresh cranberries
  • 1 tablespoon minced jalapeno pepper (omit if you don’t like spicy)
  • 2 tablespoons Jalapeno jelly
  • 2 4-ounce portions of Coho Salmon (might I suggest Sizzlefish?)
  • ½ lime, juiced
  • Salt and pepper, to taste
  • 1 tablespoon pepita (pumpkin) seeds, optional
  1. Preheat oven to 400 F degrees.
  2. On stovetop, add orange juice, cranberries, jalapenos, and jalapeno jelly to small saucepan. Bring to boil, reduce heat and let simmer, stirring frequently, for approximately 5 -7 minutes until cranberries have popped and cooked down.
  3. Meanwhile, place thawed salmon, skin side down, on rimmed baking sheet and drizzle with lime juice. Season with salt and pepper.
  4. To serve, scoop a generous serving of the cranberry compote atop salmon. Sprinkle with pepita seeds, if desired.

Note – skin may be removed from salmon after cooking, but at least try to eat the darker flesh next to the skin because where A LOT of the good-for-you fats are found.
