In addition to running through wildflower speckled, Texas hill country roads and partying afterward with wine, massages and friends, spring weather makes me want to celebrate being active in the great outdoors – play basketball with the kids, take my paddle board for a spin or just jump like a fool on the trampoline!

I really love the Olympics and though I’m not usually a fan of sports spectating (I’d rather be doing it myself), this is always one epic event that I can’t bear to miss — my DVR is going to be working in overdrive. Olympic athletes aren’t the only ones who need a good workout. Pretty sure I’m never going to be bustin’ down the track and jumping into a bobsled, but I still want to stay in my version of gold-medal shape for all my amateur-hour adventures. San Antonio R&R Half Marathon Recap and Fitmark Bag Review

Short & Sweet San Antonio Rock & Roll Half Marathon Recap:

Hot: Broke heat record for Nov. 17th set back in 1906. High of 89 and I’d venture to say 75+ at the start (even the always-cold me checked my gear bag in early and didn’t shiver a bit in my short top).

Humid: It’s not the heat, it’s the humidity. True!  Must have been at least 80 percent; needed an umbrella to shield off some of the “perspiration by proxy” I was getting from the guys just ahead of me.

Hills: They changed the course this year and a series of unexpected hills shook my confidence around miles 4 through 6. I might have taken them on better if I had a pair of these cowboy boot socks! Need these for next year!

Hellish cramps: I started to feel some hamstring tingling around mile 12 and held off a meet-and-greet with the asphalt until about 15 minutes post-race. Then I made a spectacle of myself with a gnarly calf cramp. However, the husband had it much worse, with cramping starting at mile 10 and lasting up until the headline act. Felt bad for him, but not bad enough to pass up my free beer (hey, I went got his for him too)!

Held-on: Despite numerous “escape” plans obsessing my thoughts in the first six miles, I didn’t quit the race and held on to finish 7th place overall among the females (and there were nearly 9,000 ladies that finished this half-marathon)! Most folks’ race times were not jaw-dropping (I was a bit disappointed in mine), but I’m sure that the saboteur was the weather and not a weakness for San Antonio margaritas (Actually, now I wish I would have had a margarita at the Beef Team pre-race dinner – the salt would have helped prevent dehydration).

So, accompanying me on the trip to San Antonio was the new Dashing Bag that Fitmark Bags sent me to test out. I had a hard time choosing which bag to review, Fitmark has so many really high-quality, practical products including duffels, totes, backpacks and meal management systems (hello, I NEED one of these meal management systems). I must say, the Dashing Bag sports tote makes its hashtag #nicebag seem like an understatement. I think it should be more like #awesomebag #organiZINGbag #better-than-a-berkin-bag or #insanely-chic-yet-sensible-bag. In the last 10 days, I’ve taken this bag all over the place. I toted it as airline carry-on for my trip to the Pillsbury Bake-Off and it was even stylish enough to use as a purse in the casino and restaurants at the Aria Resort where I stayed. The bag has also been to the gym a number of times and also on this past weekend’s trip to San Antonio.

For as much stuff as it will hold, the bag is not really that big and bulky. Not only does it have real leather accents and quality hardware, the inside is lined in bright pink – I love that pop of color when I look inside. There are two main zippered cargo areas and a very convenient pocket area that automatically closes with a magnetic fastener. I can’t even begin to describe all the pouches and smaller pockets for stuff – there is literally a place for everything, including special interior pocket for your water bottle that will absorb condensation. Seven Days of Sweet & Savory Things

Aug 24: Ran the epic Hood to Coast Relay for the second year,  on a team called Cherry Limeade sponsored by the always awesome, always refreshing Nuun Hydration.  This Seattle-based maker of electrolyte tabs is focused on creating a take-along product that keeps runners and other athletes hydrated flavorfully – in fact, they have so many flavors, it will make your head spin.  My favorites are Kona Kola and Strawberry Lemonade, oh yea — and ½ a Banana tab with ½ a Watermelon tab!  I appreciate the fact that I’m not sucking down a bunch of sugar with this product, goodness knows I’ve been the poster child for losing time on a race course due to GI distress.

I was so inspired by the women runners in my team’s van 2, that I just have to shout them out —  Allison, Tanaya and Tere from Arizona, Emily (now) from Oregon and Paige from Washington. I’m already looking at the upcoming race calendars to cherry pick (or, should I say ‘cherry limeade pick’?) a few for reunion visits! BTW, all the women I met on the Nuun teams rocked; however, these particular ones though had to put up with me for 40 straight hours with no sleep. There was no do-it-yourselfing on this trip, well except the running. We had the luxury of being chauffeured around on this 200-mile race by our fearless, amusingly foul-mouthed and seriously funny van driver Vishal, a Nuun employee who also made sure that we had our Starbucks, Diet Mountain Dew, and never-ending food and pit stops expertly arranged.  Thanks to Megan Fay for organizing the chaos and chief hydrator and company president, Mason Reay, for another year of gracious hospitality. Random side note: I knew Mason lived in Austin for a while, but found out that our children attended the same preschool at the same time! Now that I think of it, he might have been the dad at the Thanksgiving Pow-wow who offered to bring beer.

August 25: Traveled the entire day, plane had mechanical problems and I wasn’t in bed until 2:30, and shortly thereafter greeted my 5:30 alarm clock. That was neither a sweet nor savory thing. But, while waiting at the airport, I did order a “personal mix” of granola from MixMyOwn.com.  The site is so cool, you choose a base cereal, other grains, fruits, nuts and add-ins and then bag it up and ship it straight to your door! On the back of the bag, the nutrition label reflects the exact mix that you made. And, it tastes really fantastic on my Greek yogurt.

August 26: School started, enough said. Sweet! Okay, I’ll say more – and I don’t usually dump out this much mushy personal information, so here you go! My three sons have entered 11th, 8th and 5th grades, so proud of them and it’s going to be a great year.  Got a sweet kiss from each this morning!

August 28: Finally read my September Cooking Light magazine and made a recipe for Quinoa-Granola Cookies that I will share on the blog tomorrow. Love to put healthy cookies in my kid’s lunches. Sneak peek:

August 30:  Brought a post-practice treat to football practice, Jamba Juice smoothies! Seeing as it was 105 degrees, I had no trouble passing off every last one of the Strawberry Surf Rider smoothies to those hot, sweaty boys. August 31: Celebrated National Bacon Day by wrapping a piece of cured pork around a club cracker and rolling it in brown sugar – then baked at 400F until bubbling with greasy-salty-sweet goodness. This sweet-and-savory sin was not my own doing – inspired by the Pioneer Woman.

Peach-a-Palooza | Healthy Ideas + Gluten-Free Peach Pecan Crisp Recipe

I am so sweet on summer. All the delicious, ripe fruit puts a big smile on my face and I’m grinning ear-to-ear thanks to a windfall of peaches and nectarines. This week I’ve been gobbling up the seasonal treats faster than a greedy squirrel in an orchard. But that’s just fine because peaches are much better for me than M&Ms. Peaches can add nutritional heft to any meal or snack, offering significant amounts of vitamins (especially vitamins A, C and Niacin), more than 10 percent of daily fiber needs, and lots of potassium. Oh, and peaches are 89 percent water, so they help with hydration, too!

Since I ended up with 40 pounds of fruit on my latest haul, I decided to wow the family with some healthier desserts made with peaches. After flipping through my copy of The America’s Test Kitchen Healthy Family Cookbook, I was drawn into the chapter titled “Fruit Desserts & More.”  With all the drool-worthy food photos, it was hard to decide which dessert to make. Should I break out my springform pan for the Plum-Peach Upside-Down Almond Cake or try out the Peach Shortcakes. Within this 500+ page resource of healthy recipes, there is also a simple recipe for Pan-Roasted Peaches that would be sublime served with a little drizzle of caramel or vanilla ice cream (or both!).  So many choices, it’s a good thing I have a lot of peaches and willing taste-testers.

For last night’s dessert, I decided to prepare it Jennifer-style and just make up the recipe as I went along. I’m calling it Gluten-Free Peach Pecan Crisp in a Skillet.  Inspired by the Pear Oat Crisp from The America’s Test Kitchen Healthy Family Cookbook, I tweaked it up a bit by adding some Jack Daniels (ahem) and swapping out the flour in the topping for almond meal. And, substituting peaches for pears. And, adding pecans. Okay, I made the whole thing up. For my gluten-free guests, I would like to point out that most experts say that people with celiac disease can safely drink distilled alcoholic beverages, even those that are made with gluten grains (which includes whiskey). That’s because distillation supposedly removes all of the gluten protein molecules responsible for the bad reactions, rendering the drinks gluten-free. However, if whiskey disagrees with you then you can swap it out for dark rum (non-gluten grain) or simply omit. No biggie.

Gluten-Free Peach Pecan Crisp {In a Skillet}

Filling:

  • 1 tablespoon butter
  • ¼ cup bourbon whiskey
  • 1 teaspoons lemon juice
  • 3 pounds fresh freestone peaches (approximately 7), pitted and sliced into wedges
  • ½ cup pecans, coarsely chopped

Topping:

  • 2/3  cup all-purpose almond meal
  • 2/3 cup old-fashioned rolled oats
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 5 tablespoons butter, melted
  • ¼ cup honey

For the filling, heat the oven to 400 F degrees with rack in the middle position. In a 12-inch cast iron skillet, melt butter and stir in the whiskey and lemon juice until combined. Mix in peach slices until coated and sauté for 3 to 4 minutes to cook off alcohol. Stir in chopped pecans.

For topping, mix together almond meal, oats, cinnamon, nutmeg and salt until blended. Add melted butter and honey and mix until incorporated.

Spread topping evenly over the top of peaches; gently press down with clean hands or back of wooden spoon.

Place skillet on rimmed baking sheet (to catch any juices that might overflow) and bake in 400 F degree oven for approximately 20 – 25 minutes or until peach juices are bubbling and topping has browned. Let cool for 10 minutes before serving. Serves 8.

Recipe Update:  Do NOT store the leftover crisp in the cast iron skillet. Transfer to a glass or plastic storage container.

Even though I winged it on this recipe, you should really check out the The American’s Test Kitchen Healthy Family Cookbook from which it was inspired.  From breakfasts and lunches to dinner entrees and sensible sides (plus desserts!), this cookbook is a compendium of healthy classics that I feel great about serving my family. There are lots of cool things about the cookbook including the binder- style design that allows you to take the pages in and out, if you please. Plus, the recipes are very detailed, there’s no way you can mess one up. In addition to explicit step-by-step instructions, there are also tips on how to get many kitchen tasks done like blanching peaches or thawing out steaks quickly and also tests results and reviews on a lot of the current products on the cooking gadget and gear market.

I’m also excited to announce that I am a new member of the Cooking Light Blogger Connection (so new that my profile isn’t even up yet). I have loved this magazine for years and have so many dog-eared copies laying around to kick-start my kitchen creativity. Check out some of the favorite peach recipes from the editors at Cooking Light, the recipes for Peach and Brie Quesadillas with Lime-Honey Dipping Sauce and Golden Peach Soup with Crab and Shrimp Ceviche both caught my eye. YUM!
