Fast Chicken Spinach Parm Panini & 8 Back Stretches for Flexibility

Quick Chicken Parm Sandwich

I would say this recipe is a grilled cheese sandwich for grownups, except the kids love to have ‘em for a super-speedy weeknight meal too!  For added convenience, I’ve used a pre-breaded chicken tender from the freezer section at the market, but you can do this step the old-fashioned way if you have an extra hour –  and, if you such a surplus of time, can you please come over? I have a list of chores to share with you!

Making panini for the family is always a crowd pleaser — everyone can customize a sandwich to suit their tastes. No cheese, no problem. Extra sauce, add it on! One thing I do insist on though is the kids make their panini sandwiches with whole grain bread. I was shocked to find out that a mere 3 percent of children and teens and about 8 percent of adults are eating at least the recommended three servings per day. Whole grains provide an abundance of vitamins and fiber and have been linked to a reduced incidence of heart disease, diabetes and other health concerns. Even though I’m not a huge grain eater, I always make sure that I’m getting biggest benefit for my body when I do – and that’s by eating whole grains over white “enriched” grains.

I created this panini recipe for Litehouse Foods and you can check it out on their blog. It uses their Opadipity Greek Yogurt Spinach Parmesan Dip, a protein-packed, lower-calorie dip that works great in recipes and is just plain yummy to dip vegetables into.

Enjoying some improvements with back flexibility!

Even though I’ve been super rushed, I’ve been making time in the morning to work on the flexibility in my back. As a kid, I used to be very bendy, but fast-forward several decades and several kids, the range of motion in my back had left and gone elsewhere – but, I’m happy to say that with some consistency in stretching (only a couple minutes per day), I’m getting my bendable back back!  Check out these 8 Back Stretches for Flexibility:

how to get a more flexible back with stretching

  1. Child’s Pose: Sitting back on heels, roll torso forward bringing forehead to floor and lowering chest to knees as much as possible. Keep arms extended forward.
  2. Cat-Camel Stretch: On hands and knees, alternate between slowly arching and rounding back.
  3. Upward Facing Pose: On back, pull knees up to chest, grab with arms. Rock slowly back and forth.
  4. Bridge: Lie on back with knees bent, feet hip-distance apart and flat on floor. Inhaling, press into feet, lifting hips toward ceiling. Hold as long as possible.
  5. Torso Twist: Sitting with one leg extended forward, the other bent up toward the chest. Turn torso toward bent knee, grasping to gently stretch back. Repeat on other side.
  6. Downward Facing Dog: With hands and knees on ground, press backward raising knees and lifting tailbone to ceiling. Keep weight on shoulders and then gently push heels toward floor to stretch hamstrings.
  7. Seal Pose: Laying on stomach with legs together, elevate head and upper torso using arms, keeping forearms off the floor and stretching spine.
  8. Scorpion Pose: From knees, rest forearms on ground shoulder-width apart. Kick up into a forearm stand, achieving balance and slowly bend at the knees, arching back and lifting head to look forward.

What do you like to throw together busy-night dinners? Do you have back tightness — what do you do to stay flexible?

Simple Green Smoothie Starts St. Patrick’s Day Feast

Don’t be afraid of the green! It’s St. Patrick’s Day (well, almost) and everything should be tinted with the color of Emerald Isle. But, who wants the yucky chemicals in food dyes that turn your beer –err, I mean, smoothie green?! Simple and straightforward, made with only the freshest and most natural of ingredients in all of the lands, you’ll start the day off right fueled with the vitamins and minerals (lots of iron!) from spinach and healthy fats from avocado and hemp hearts. In addition to adding a little crunchy variety to the top of this creamy smoothie, the hemp packs a punch of protein and nutrients – they’re powerful little seeds and probably what you’ll actually find hidden in the pot at the end of a rainbow!

A Real Breakfast! Artichoke & Spinach Blue Cheese Baked Eggs

This year I plan to start off every morning (okay, most mornings) with a healthy breakfast served on a real plate. I usually stay up too late and always wake up before dawn, making me so groggy and disoriented that the best I can often do for sustenance is a grab a protein bar or slurp a smoothie. While protein bars and smoothies are actually quite nutritious options for grab-and-go fuel, I aspire to slow down enough in the morning to actually have a conversation with the kids, give some attention to the dog, tune into current events (what year is this?) and enjoy a morning meal with all my senses. Then, after being properly fed, I can hit my errands, workouts and to-do list hard!

outdoor WOD

Pretty sure some eggs were eaten before (and maybe after) this workout at Ladybird Lake!

The incredible, edible egg is always one of my top choices in real breakfast food. Even on the busiest weekday mornings, it really doesn’t take that long to whip up a quick scramble or even microwave a 1-minute ramekin omelet.  With just a little planning on Sunday night, a big breakfast casserole can be baked ahead and portioned out for the rest of the week. I plan to be a better planner – I promise!

Blue Cheese artichoke spinach eggs

This is a gorgeous recipe for Blue Cheese & Artichoke Baked Eggs I created for the blog at Lighthouse Foods. Typically baked eggs are doused in heavy cream before sitting in the oven, but I reduced the fat in this type of egg dish by using the company’s OPA Blue Cheese Greek Yogurt Dressing which is, not surprisingly, light, tangy and healthy! Served in individual gratin dishes, this healthy egg recipe is elegant enough to serve to company. Please visit the Living Litehouse blog for more gorgeous photos, but today I’m going to treat you to the full recipe right here, right now!

Blue Cheese & Artichoke Baked Eggs Recipe

  • Baking spray
  • 3 to 4 ounces washed baby spinach
  • ½ cup Litehouse Food’s OPA Blue Cheese Dressing (so good!)
  • 2 Tbsp diced red onion
  • 1 Tbsp sipped fresh chives
  • 16 grape tomatoes
  • 1 (7.5 oz) jar of quartered marinated artichoke hearts
  • 8 large eggs
  • 2 oz blue cheese crumbles

Directions

1. Preheat oven to 375°.

2. Lightly spray 4 ramekins or 2 gratin dishes with baking spray. Divide spinach evenly among dishes.

3. Drizzle even portions of blue cheese salad dressing over spinach and sprinkle with red onion.

4. Slice grape tomatoes in half and drain liquid from jar of artichoke hearts. Place tomatoes and artichokes around perimeter of dishes.

5. Gently crack egg over top of spinach mixture, taking care not to break yolk. Repeat for remaining 3 ramekins. If using 2 larger gratin dishes, use 2 eggs per container. Sprinkle tops with chives.

6. Place dishes on a rimmed baking sheet and place on center rack of oven. Back for approximately 20 minutes or until egg whites have set and yolk has achieved desired level of doneness.

7. Remove from oven and sprinkle tops with an even portion of blue cheese crumbles. Let cool for 2 to 3 minutes before serving.
