Rehydrate with this refreshing salad made with watermelon, tomatoes and jicama. A slightly spicy-sweet vinaigrette makes this fruit side dish special enough for all types of summer entertaining.

Ingredients
For Salad:
4cups watermelon chopped approximate 1/2 cubes
1 pintyellow sunburst or cherry tomatoes, halved
2cupsjicama root chopped approximate 1/2" cube
1/4cupchopped fresh cilantro
For Dressing:
2tablespoonsfresh lime juice
2tablespoons extra-virgin olive oil
1tablespoon white wine vinegar
1 1/2tablespoonsTajin chili and lime seasoning
2 tablespoonshoney
Instructions
In large bowl, toss together chopped watermelon, tomatoes and jicama. Stir in chopped cilantro.
In small jar, shake together ingredients for dressing until combined. Pour over salad and stir gently to coat.
Keep chilled until serving time. May be made one day ahead of time.
