3/4 cupfrozen shelled edamame, thawed to room temperature
1dozenkuquats, seeded and coarsely choppedkeep skin on
1/4cuporange juice
3tablespoonssoy sauce
1 tablespoon Srirracha sauce
1tablespoonolive oil
1/4cupcrumbled Feta cheeseor can substitute nuts to keep dairy free
Instructions
Prepare pasta according to package instructions. Drain and return to pot.
In small bowl, whisk together orange juice, soy sauce, Srirracha, and olive oil.
Put edamame beans, chopped kumquats and sauce into pot with drained pasta and toss until everything coated.
