In medium pot, combine chopped steak, mango, jalapeno, and maple syrup in small saucepan.
Bring mixture to a boil, reduce heat, and simmer approximately 5 or until sauce is consistency of syrup and beef is heated through.
Remove from heat and stir in lime juice.
Place lid on syrup and beef mixture to keep warm while waffles cook. Prepare waffles according to your favorite recipe or the manufacturer's instructions if using frozen waffles.
Once waffles made, stack two to a plate (making 4 plates) and top with equal portion of the beef mango mixture.
Drizzle with additional syrup if desired and a fresh mint sprig.
