Ingredients
1cupblueberries
3tablespoonswater
7tablespoonschia seedsdivided
1 ¼unsweetened almond milk
1medium peachpeeled, seeded and sliced
½teaspoonvanilla extract
2scoops2/3 cup vanilla protein powder
Instructions
Add blueberries to blender, if using frozen berries, thaw them first. Add water and blend until smooth. Pulse in ONE tablespoon of the chia seeds.
Pour blueberry mixture evenly among 3 mason jars or bowls. Rinse out blender jar.
Add almond milk, peach slices and vanilla to blender, puree until smooth. Add protein powder and blend in another 10 to 15 seconds until incorporated. Quickly pulse in remaining SIX tablespoons of chia seeds.
Pour peach chia mixture evenly across the containers containing blueberry chia mixture.
Set in fridge for at least 30 minutes so that chia seeds can gel up.
If desired, top with additional fruit, seeds, nuts, etc.
May be stored, covered, for up to 4 days in the refrigerator.
