Make breakfast easy, with this delicious, crustless quiche featuring lots of veggies along with ham and eggs. Great for meal prep, low carb and grain-free diets.
Pre-heat oven to 350F degrees.
Add oil to skillet over medium-high heat and sautee mushrooms and onions until softened, about 4 to 5 minutes. Stir in spinach, cook for 30 seconds longer until wilted. Remove from heat and let cook 5 minutes.
In a large bowl, whisk eggs, salt and pepper.
Mix sauteed vegetables (that have cooled), chopped ham, and 3/4 cup of cheese into whisked eggs.
Pour mixture into 9-inch pie dish that has been lightly coated with cooking spray. Sprinkle remaining 1/4 cup cheese on top.
