Caramelized Nectarines with Bacon and Blue Cheese

Ingredients
- 4 medium nectarines
- 2 tablespoons cooked, crumbled bacon
- 2 ounces blue cheese crumbles
- optional vanilla bean ice cream
- 2 tablespoons Stevia-based brown sugar baking blend
Instructions

Turn broiler to high.

Cut nectarines in half, removing stone. Set on rimmed baking sheet.

Sprinkle tops evenly with brown sugar, blue cheese and bacon.

Broil for to 4 minutes, until cheese and sugar begin to bubble. Watch very carefully as to not burn.

Place two halves in a bowl and serve with vanilla ice cream or yogurt, if desired.
I love summer because it means ALL the stone fruits. aka HAPPINESS

Those look fan-freaking-tastic! Of course this veggie would substitute facon for the bacon (it’s been so long, it all tastes the same to me, lol) , but that said, this is now on my “to do” list!
