One of the things I appreciate about “inspired by” carrot cake treats is that plenty of healthy, real food ingredients can be incorporated – like carrots, dates, coconut, pecans, honey and such. These dessert wonton bites aren’t a “cake” in the sense of a fluffy cake that rises, but rather inspired by the signature flavor of carrot cake.
Ensconced in wonton wrappers from Twin Dragon Wrappers , the exterior of these carrot cake bites is sprinkled with cinnamon sugar and baked up golden and crunchy. The interior of these dessert wonton bites is filled with texture from pecans and shredded coconut and naturally sweet from dates, honey and carrots! In a way, these Carrot Cake Wonton Bites remind me of dense, rich baklava – yum!
Using wonton wrappers (and egg roll wrappers) from Twin Dragon Wrappers is a clever way to create a crust quickly and are easy to work with – for sweet or savory recipes. To seal up the edges, simply use a clean finger to spread water around the edges and then seal up with fingers.

These sweet bites are filled with wholesome ingredients and pinched up in a wonton wrapper to make a delicious quick dessert. Great for game day, holiday entertaining or any time you want a finger food dessert.
- 2 large carrots scrubbed and cut in ½” chunks
- ¼ cup shredded unsweetened coconut
- ¼ cup pecan pieces
- 4 Medjool dates pitted and coarsely chopped
- 2 Tbsp. honey
- 6 ounces cream cheese softened (divided)
- 18 wonton wrappers
- Water small amount to moisten wonton wrappers
- Cooking spray
- 2 Tbsp coconut sugar or sugar of choice
- 1 tsp. ground cinnamon
- 2 Tbsp. lemon curd
- 1 to 2 Tbsp. half and half or milk of choice

Pre-heat the oven to 400. Line a baking sheet with parchment paper or silicone baking mat.

Add chopped carrots to food processor and pulse for approx. 45 seconds to chop down. To carrots, add pecans, dates, honey, and 4 oz of the cream cheese (reserve remainder for dip) and pulse approx. 1 minute or until everything combined well, but still a little lumpy, not totally smooth.

Fill a small dish with water and set it beside you near baking sheet. Lay a wonton wrapper down and place a rounded 1 tablespoon of carrot mixture in the center.

Dip clean finger into the dish of water and run it along the entire outside edge of the wonton wrapper, corner to corner, creating a square of wet around the edge of the wrapper. Gather the four corners of the wrapper and bring them to center, pressing together to seal all edges. Repeat these filling and pressing steps with remaining ingredients to create a total of 18 wonton bites.

Lightly spray the tops of the bites with cooking spray. Toss together cinnamon and sugar and sprinkle on tops.

Bake for about 12 – 15 minutes at 400F until golden and sugar caramelizing. In small bowl, mix together remaining 2 oz cream cheese, lemon curd and 1 Tbsp. half and half until creaming and smooth. If too thick add remaining half and half a little at a time until desired dipping consistency achieved
