Personal-sized Charcuterie Boards in Egg Roll Wrapper Boats

As we roll into the season finale of 2020, I’m kicking back to celebrate at home with a Personal-sized Charcuterie Board & Cheese Tray (served in an edible egg roll wrapper boat). Not only is it a great time to enjoy New Year’s Even appetizers, but also to hit rewind in my mind to revisit the top lessons I’ve learned during this challenging year.

These lessons would include: 1) Enjoy the moment, 2) Keep the party at home, 3) Make creative use of ingredients on hand, 4) Simple indulgences can lift spirits, and 5) Find fellowship . . . but keep your social distance! And, to that last one, I also respectfully say (even to my own kids), keep your grubby fingers out of my snacks, please. Lol, and in response to all these life lessons is the creation of my individually-portioned meat and cheese “trays” made from egg roll wrappers!

Personal Sized Charcuterie with Edible Egg Roll Wrapper Boat - is a cute and creative idea for your next gathering. Everyone gets their own tray of snacks, portable and ready to party! Edible tray made with pre-made egg roll wrappers -- super easy and convenient!

That’ right, I used egg roll wrappers from Twin Dragon Wrappers to create these genius little plates to hold all the charcuterie and cheese plus fruit, nut, and nibble ingredients you please. Pre-made egg roll wrappers (and wonton wrappers, for that matter) are a super convenient and versatile form of dough that makes it super easy to put together creative appetizers and desserts – the ideas for egg roll wrapper recipes are only limited by your imagination! I have enough egg roll wrappers left to make so many other creative party appetizers!

To make these personal charcuterie boats, I simply trimmed about 1 ½ inches off one side of the egg roll wrapper to create a rectangle of dough that I brushed with olive oil, dust in herbed Parmesan cheese, and molded over an inverted mini-loaf pan set. After baking and allowing to cool for a few minutes, I carefully removed these edible trays from the loaf pans and filled with delicious snacks. My edible snack trays were brimming with summer sausage, salami, beef jerky, several kinds of cheese, dried fruits, almonds, herbs and more. There is no “recipe” for the fillings, that tasty job is up to you.

Waste not, want not (especially these days)! Keeping this wisdom in mind, I used the 1 ½” inches of excess egg roll wrapper dough to make the most amazing wafer-thin crackers to compliment this egg roll wrapper idea recipe.  Just brush with oil (or even easier, spray with cooking spray) and dust with Parmesan cheese, herbs . . . other spices, or even just salt and pepper. Bake the egg roll wrapper crackers for 5 to minutes alongside the egg roll mini charcuterie boards.

Surprise and delight your guests with these mini-sized meat and cheese trays that are perfect for socially-distanced gatherings --- or solo snack time!

Ingredients
  • 4 pre-made egg roll wrappers I used Twin Dragon Brand
  • 2 to 3 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp fresh chopped or freeze-dried parsley
  • 1 tsp coarse sea salt
  • various "fillings" such as salami, summer sausage, pepperoni, jerky, soft and dry cheeses, nuts, dried or fresh fruit, etc.
Instructions
  1. Preheat oven to 375 F degrees

  2. Using kitchen shears, cut 1 1/2" off on end of egg roll wrapper square to create rectangle. Set rectangles aside and save scraps.

  3. Using pastry brush, brush front and backs of egg roll wrappers with oil. If you prefer, they can be sprayed with a cooking spray.

  4. Mix together cheese, parsley and salt -- spread across plate.

  5. One at a time, place oiled egg roll wrapper on cheese mixture (front and back) and lightly press so some sticks.

  6. Place "cheesed" egg roll wrappers on the BOTTOM side of mini loaf pan -- use fingers to pinch together the corners of overhanging parts to create an inverted tray.

  7. Place inverted mini loaf pans on top of rimmed baking sheet for easier handling. Bake at 375 F degrees for approx 6 to 8 minutes or until turning lightly golden brown on top. Watch carefully, will burn quickly once done. If desired, also oil the cut scraps from egg roll wrappers and dust in more cheese or salt and pepper.

  8. Remove from oven and let cool for 2 to 3 minutes and then carefully remove trays from top of loaf pans.

  9. Fill trays with various meat and cheese fillings along with fruits, nuts and other nibbles.
