Surprise and delight your guests with these mini-sized meat and cheese trays that are perfect for socially-distanced gatherings --- or solo snack time!
Preheat oven to 375 F degrees
Using kitchen shears, cut 1 1/2" off on end of egg roll wrapper square to create rectangle. Set rectangles aside and save scraps.
Using pastry brush, brush front and backs of egg roll wrappers with oil. If you prefer, they can be sprayed with a cooking spray.
Mix together cheese, parsley and salt -- spread across plate.
One at a time, place oiled egg roll wrapper on cheese mixture (front and back) and lightly press so some sticks.
Place "cheesed" egg roll wrappers on the BOTTOM side of mini loaf pan -- use fingers to pinch together the corners of overhanging parts to create an inverted tray.
Place inverted mini loaf pans on top of rimmed baking sheet for easier handling. Bake at 375 F degrees for approx 6 to 8 minutes or until turning lightly golden brown on top. Watch carefully, will burn quickly once done. If desired, also oil the cut scraps from egg roll wrappers and dust in more cheese or salt and pepper.
Remove from oven and let cool for 2 to 3 minutes and then carefully remove trays from top of loaf pans.
Fill trays with various meat and cheese fillings along with fruits, nuts and other nibbles.
