Frozen Yogurt Blueberry Stuffed Cherry Bites are a yummy, healthy fruit dessert for your 4th of July or summer party.

Nothing says summer more to me than cherries . . . except blueberries! So, I decided to pair up these two seasonal fruits “tur-duck-en” style – that is one stuffed inside another, inside another. Except I figured if I found a 3rd fruit to stuff the cherry in, it would be too hard to eat once frozen. So, I just dipped it in yogurt! Blueberry Stuffed Cherry

The key to this easy fruit recipe is to find match up blueberries that fit well into the little hole left inside the cherry once you halve it and pluck out the seed. For me, this meant rummaging through a pint of blueberries looking for the smaller ones . . . and just popping the bigger ones straight into my greedy pie hole so that I didn’t get “confused.”

After stuffing a cherry half with a blueberry, simply put the top half “hat” on and skewer with a tooth pick. You can dip in the yogurt now, but I found everything held together if I par-froze the tooth-picked fruit for about 30 minutes. Also, I used Vanilla Bean 4% Yogurt from Siggi’s Dairy because that is my favorite and it’s soooo thick and creamy . . . but other flavors and brands work fine too. Blueberry Stuffed Cherries yogurt step

If you are not able to “dip” completely (as was the case with my super-thick Siggi’s), then finish off the process by spooning and spreading a bit more yogurt on top. I sprinkled crushed dehydrated raspberries on top for an extra pop of color, but you could also add nuts, sprinkles or chocolate. Freeze Yogurt-Dipped Blueberry Cherry Bites for another 30 minutes before serving to let the coating harden up. Enjoy!

*Note: I would not serve this frozen treat to toddlers and very young children because of the toothpick and size of the stuffed cherry could be a choking hazard.

A little bite of fruit, with a big bang of summer flavor! Blueberry stuffed cherries are dipped in Greek yogurt and frozen for a healthy dessert for July 4th and other warm weather parties.
Cuisine: American
Servings: 12 servings
Ingredients
  • 12 fresh cherries
  • 12 fresh blueberries
  • 1 4.4 ounce carton whole-milke vanilla greek yogurt I used Siggi's Dairy
  • 1 tablespoon crushed dehydrated raspberries or other topping of choice
Instructions
  1. Take stems off all cherries. Cut each cherry in half crosswise and carefully remove seed. Take care to keep tops and bottoms of each cherry together so they match up when assembling later.
  2. Place one blueberry in concave center of cherry half. You may have to dig through pint of blueberries to find ones that fit well, don't use ones that are super big.
  3. Add top half of cherry to cover blueberry-stuffed bottom half and skewer with a toothpick. Repeat for remaining fruit
  4. Set in freezer to firm up for 30 minutes.
  5. Remove from freezer and dip in Greek yogurt, spooning extra yogurt on top for complete coverage. Carefully transfer to wax-paper lined baking sheet.
  6. Sprinkle tops with crushed dehydrated raspberries, or other topping of choice such as sprinkles, chocolate or nuts.
  7. Return to freezer for 30 minutes, or until Greek yogurt has firmed up.
  8. To serve, remove from freezer and enjoy immediately.
