Sometimes preparing a side dish isn’t about taking sides. He wanted green beans, I wanted mushrooms – so we compromised and made them both. Our individual veggie selections roasting separately, yet on the same baking sheet, started to seem like they should mingle. So, I made the introductions, tossed them together and finished with a kiss of sesame dressing. Winner, winner – Sheet Pan Sesame Green Beans and Mushrooms for dinner!

I’m all about low-stress vegetable dishes and throwing them on a baking sheet to roast in the oven is classically uncomplicated. Just make sure all the produce spread out in a single layer, drizzle with olive oil, season with salt, pepper or other spices and cook in a hot oven – about 400 F degrees. My roasted green bean mushroom recipe is basically idiot proof, and I love the caramelized and slightly crispy parts that impart from oven roasting.
To keep meal prep for this roasted green bean recipe ridiculously easy, I use Sesame Ginger Dressing & Marinade from Litehouse Foods (read my original post HERE). It’s made with fresh ginger, light soy sauce and sesame with zero fat, no artificial colors, flavors or preservatives. It’s zippy but not overpowering or overtly spicy, it complements recipes instead of “covering up.”
