No-Fail Holiday Roast Plan! Tips & Recipes

Are you expecting a herd of carnivores for Christmas and aren’t sure where to begin when it comes to making a holiday roast? Don’t fret, it’s super easy to roast a hunk of meat that will make a jaw-dropping, mouth-watering, plate-licking impression with your guests. I’m sharing tips for beef roasting success and some delicious roast recipes that may make you even more popular than jolly old St. Nick.

Select the proper cut. Personally, I love a beef tenderloin roast, but other cuts that are easy to roast in the oven include rib eye, tri tip, sirloin and even the economical round roast. Check out the Interactive Butcher Counter  before you head to the market it helps you match the right cut of beef for your recipe and budget.

beef tenderloin spice rubRub in flavor. Dry rubs are a simple way to elevate the flavor of your roast and – often salt and pepper is all you need! But it can be fun to experiment with different herbs and spices to make a roast suit your personal taste preferences – one of my favorite easy rubs is my Countdown Rub.  There’s not much to remember when it comes to applying a rub other than do so liberally on all sides of the meat – this makes a nice crust when it caramelizes that not only adds flavor but locks in juices.

Use the right roasting gear. You’ll need a metal pan with an approximate 2 to 3-inch rim, no lid needed as roasting is a dry heat cooking method.  Also, a roasting rack helps to raise the meat above the pan so that the heat can get around to the underneath side. You can make a makeshift rack in a pinch simply by twisting heavy-duty aluminum foil up into a figure-8 shape and placing it under the roast.   A reliable meat thermometer will ensure your roast is cooked to your expectations  – instant-read thermometers are only a couple bucks at the grocery store.

Know when it’s done. I like my beef medium rare (which is 145 F degrees), so that means I pull it out of the oven about 10 degrees earlier. Why? Because a roast continues to cook on the counter as it rests! If you like your beef cooked to a lesser or greater degree of doneness, please visit the  Beef Roast Table Times to determine the finish temperature and approximate cook time.

All the flavorful juices will come flowing out and pool around your roast – what you’ll have left is a tough mess of meat. A short rest period (about 10 minutes) allows juices to redistribute around the relaxing muscle fibers and create the tender, succulent bit of meat you were dreaming of. By the time the thermometer has dropped back down to 120 F degrees, your roast should be ready to enjoy.

Based on Rick’s recipe for Pomegranate Glazed Carrots (p. 148 of The Big Book of Sides) and my new found bottle of Four Roses Bourbon, I was inspired to create my own side dish recipe — Apple Cider Bourbon Glazed Carrots.  These carrots are so delicious and make a perfect pairing with your roast turkey or even a juicy steak – and because I’m using coconut (palm) sugar, they are even Paleo-diet friendly. Apple Cider Bourbon Glazed Carrots - side dish recipe from TheFitFork.com

  • 2 tablespoons unsalted butter
  • 1 pound carrots, scrubbed and green tops removed
  • 1 cup apple cider
  • 1 ounce bourbon
  • 1 tablespoon coconut (palm) sugar
  • Sea salt
  • Ground black pepper
  • ¼ cup chopped pecans

 

  1. Melt butter in medium skillet over medium heat. Add carrots in single layer and pour in apple cider and bourbon. Sprinkle tops with brown sugar and season with salt and pepper to taste.
  2. Bring sauce to boil over high heat, occasionally stirring to dissolve coconut sugar.
  3. Cover and reduce heat to medium low. Simmer for 6 to 8 minutes to soften remove lid and bring heat up to high. Boil until sauce has reduced to a glaze, about 3 to 4 minutes.
  4. Transfer to serving platter, sprinkle with pecans, and season with additional salt and pepper if needed.   Serves 4.

Where DOES the time go? It’s almost the middle of November which means cranberries are popping up everywhere, getting me excited for Thanksgiving) the subsequent Dallas Marathon just 17 days after that. Am I ready? No. Am I ever ready? No. So, I’m just not going to worry about it and be happy for what my body can do rather than what it can’t. Once again, I plan to follow the “fat-loading” pre-marathon diet that I did last year (read about it here). Because Dallas Marathon was canceled due to ice last year, I never got to see if all that avocado and salmon scarfing actually helped train my body to better tap fat stores as a more immediate source of fuel. The idea is that the body will spare glycogen reserves for use at the race by using fat stores more efficiently on the front end. In other words, no bonking – hopefully.

So, enough about that – I can’t even think of running 26.2 miles at my race pace right now! Creamy Cranberry Orange Smoothie Recipe

  • 6 ounces fresh orange juice
  • 2 ounces cranberry juice
  • 2 ounces Greek yogurt
  • 1/3 cup fresh cranberries
  • Lemon- or regular-flavored stevia, to taste
  • Ice, as needed

Blend together juices, yogurt and cranberries. Add stevia to taste and ice to achieve desired consistency. Serves.1

Fuel Up Festively – Gingerbread Cranberry Protein Granola Recipe

Some might say it’s “too soon”  — too soon to post a gingerbread-flavored recipe or even hint at the Christmas and winter holiday season.  But, when I was in my neighborhood grocery store today, I noticed that the displays had changed overnight from pumpkins and Halloween candy just the day prior to stuffing mixes, tree trimmings and fruit baskets (yes, I shop for food every day – three teen boys)! Halloween hasn’t even officially happened yet!

Some might also say that it’s “too soon” to do another granola recipe seeing as that’s what I just shared in my last post for Pumpkin Protein Granola. But, hello – look what showed up on my doorstep today – a mountain of muscle-making products from Designer Whey as part of their 20th anniversary celebration. I knew I had to whip up more good-for-me goodies and this time it would be Gingerbread – Cranberry Protein Granola.

Gingerbread – Cranberry Protein Granola Recipe

Ingredients:

  • 4 cups old-fashioned oats
  • 1/3 cup raw shelled hemp seeds
  • 1 cup raw pecans, chopped
  • 1 teaspoon fine-grain sea salt
  • 1teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/3 cup coconut oil, melted
  • 1/2 cup real maple syrup
  • 1/4 cup molasses
  • 1/3 cup water
  • 1/3 cup vanilla protein powder (2 scoops)
  • 4 ounces unsweetened applesauce
  • 3/4 teaspoon vanilla
  • 2/3 cup chopped dried cranberries

Instructions

Preheat the oven to 325 F degrees and line a rimmed baking sheet with parchment paper or Silpat. In a large mixing bowl, combine the oats, hemp seed, nuts, salt, cinnamon and ginger. Stir thoroughly to combine; set aside.

In medium pot, stir in the oil, maple syrup, molasses, water, applesauce, protein powder and vanilla over medium-low heat. Use a whisk to incorporate ingredients until smooth and just starting to bubble, about 3 to 4 minutes.

Add dry oat-mixture ingredients into pot; use spatula to stir and coat evenly. Turn the granola out onto prepared pan and spread it in an even layer. Bake for 20 minutes; remove to stir up granola so that it cooks evenly. Bake for an additional 20 to 25 minutes for a total of 40 – 45 minutes.

Remove from oven and allow to cool. The granola will continue to dry out a bit more during the cooling process. Store in an airtight container.

Makes approximately 6 cups of granola.
