Top Healthy Cookbooks – TheFitFork.com’s Picks

There are plenty of reasons to celebrate at my house in October. The weather is finally cooling off and we have birthday parties and Halloween fun on the calendar. Oh, and it’s also National Cookbook Month! While it might not sound exciting to some, 31 days dedicated to a cornucopia of cooking ideas and beautiful food photography fires up my passion for creating unique, fast and healthy meals. If you saw me in the magazine ads this summer for Beef. It’s What’s For Dinner, you may have noticed the headline “I have 100 to 200 cookbooks, but I always make a recipe my own.”

It’s true! I devour cookbooks, thumbing through the pages, drooling over every photo and hanging on every description and ingredient like is some sort of romance novel with a suspense mystery ending – oh, how or how will it ever turn out if I added X, Y or Z to the mix?!  Even though I rarely follow the ingredient lists and directions to the letter (except maybe in some baking), my voracious appetite for recipe reading has taught me the basic paradigm for all types of cookery and, for the most part, what works and what doesn’t when it comes to making my own culinary creations. I’m excited to share with you some of my favorite cookbooks that I refer to  time and time again for ideas; these tomes of taste are the most dog-eared in my collection (except for the Runner’s World Cookbook that I’m hoping to pick up soon).

Betty Crocker Kids Cookbook

But, before you check out the list, I want to show you the cookbook that started it all, Betty Crocker’s “New” Boys and Girls Cookbook circa 1973.  On the inside cover, you can see how the “making it my own” started at an early age – I scratched out Betty Crocker’s name in the title and substituted my own! You can tell by the stained pages and notations that my favorite recipe was for “Muffins,” but it was pretty plain. My sweet spin on the recipe was that after the muffins baked, I would brush them with melted butter and then shake them in a bag filled with cinnamon sugar!
The Healthy Beef Cookbook: Steaks, Salads, Stir-fry, and More–Over 130 Luscious Lean Beef Recipes for Every Occasion – by The National Cattleman’s Beef Association & The National Dietetic Association (2005)

I love this cookbook it is filled with 130 easy, family-friendly ways to make the 29 lean cuts of beef (10 grams fat or less per serving) taste even extra fantastic. I’ve had the opportunity to dine at the home of the primary recipe creator, Chef Richard Chamberlain, and can vouch first-hand for his mad skills and creativity with beef. Another tidbit, the Mojo Beef Kabobs featured in the cookbook is one of the recipes I demo in my presentations on “Beef – Fuel for the Finish” or “The Art of Grilling.

America’s Test Kitchen Healthy Family Cookbook:  A New, Healthier Way to Cook Everything from America’s Most Trusted Test Kitchen – by America’s Test Kitchen (2010)

This cookbook seems to cover just about every angle of cooking with more than 800 family-friendly and globally-inspired recipes that are mindful of healthy eating. It’s easy to serve up whole grains, loads of vegetables and lean meats with all the ideas in this comprehensive cook book that will have you drooling from cover to cover. Probably what I like best are the very explicit instructions on various skills and techniques that may come up in the making of a recipe – it’s a Cliff’s Notes approach! For example, if you need to quickly thaw steaks or extract moisture out of zuchinni for a recipe, there are step-by-step instructions to follow – most with photographs. The ring binder-style presentation means it’s easy to remove favorite recipes to pin on the fridge or share with a friend.Check out my Gluten Free Peach Pecan Cobbler that was inspired from the pages of this cookbook.

Runner’s World Cookbook:150 Ultimate Recipes for Fueling Up and Slimming Down–While Enjoying Every Bite- by Joanna Sayago Golub (2013)

 As a runner who likes to cook (and eat), you know this brand-new cookbook piqued my interest. I won’t lie; I’ve only seen a friend’s copy, but need to get my own STAT! Brimming with 150 of the magazine’s most popular recipes, the easy-to-follow key let’s you look for recipes that fit your needs best – such as pre-run and recovery recipes, gluten-free and vegetarian recipes, and low-cal recipes for runners trying to lose weight. There are sample menu plans to address various nutritional needs and, a huge perk is that every recipe can be made in 30 minutes or less – that means more time for running! Plus, the forward is written by a a great marathoner I’ve always admired, Deena Kastor.

Paleo Comfort Food: Homestyle Cooking for a Gluten-Free Kitchen –
by Julie Sullivan Mayfield, Charles Mayfield (2011)

I one of those people who follows the 80%/20% rule when it comes to the Paleo Diet. I love the idea of getting back to a simpler way of eating that our hunter-gatherer ancestors chowed down on during the Stone Age, but I just can’t completely commit to the primarily meat and vegetable diet that limits fruits and rules out dairy and grains. But, I still do like to plan completely Paleo meals when I can and this cookbook gives me lots of makeover-style recipes that have an appealing, homespun vibe.

The Flavor Bible: The Essential Guide to Culinary Creativity, Based on the Wisdom of America’s Most Imaginative Chefs – Karen Page (2008)

This big book is not really a cookbook per se, but a compendium of culinary inspiration broken down by ingredient. Listing out nearly every flavor imaginable from A to Z, make that achiote seeds to zucchini blossoms, this resource has helped me create so many interesting flavor profiles for my recipes. Each ingredient is listed out reference-book style followed by notations on taste, weight, and volume, along with a list of associations and chef comments that can rattle on for columns. A fantastic way to pair together flavors in a way that will have tongues wagging! Oh, and this book is the 2009 winner of the prestigious James Beard Book Award for Best Book: Reference and Scholarship.

King Arthur Flour Whole Grain Baking: Delicious Recipes Using Nutritious Whole Grain  – by King Arthur Flour (2006)

If you appreciate baking (and a healthy lifestyle) as much as I do, then this cookbook will quickly become one of your favorites. As much as I like to wing it in the kitchen, I do admit that baking is a science that has certain no-fudge formulas for success. Often when I have experimented with whole grain substitutions in baking, the finished products could be used as bricks. However, this volume of 400+ recipes ranges pretty much guarantees success with proven recipes that range from rustic breads and gooey cookies to pie crusts and fancy pastries – that all incorporate whole grains!  This cookbook inspired me to make these Multi-Grain Banana Peanut Butter Muffins.

Seven Days of Sweet & Savory Things

Aug 24: Ran the epic Hood to Coast Relay for the second year,  on a team called Cherry Limeade sponsored by the always awesome, always refreshing Nuun Hydration.  This Seattle-based maker of electrolyte tabs is focused on creating a take-along product that keeps runners and other athletes hydrated flavorfully – in fact, they have so many flavors, it will make your head spin.  My favorites are Kona Kola and Strawberry Lemonade, oh yea — and ½ a Banana tab with ½ a Watermelon tab!  I appreciate the fact that I’m not sucking down a bunch of sugar with this product, goodness knows I’ve been the poster child for losing time on a race course due to GI distress.

I was so inspired by the women runners in my team’s van 2, that I just have to shout them out —  Allison, Tanaya and Tere from Arizona, Emily (now) from Oregon and Paige from Washington. I’m already looking at the upcoming race calendars to cherry pick (or, should I say ‘cherry limeade pick’?) a few for reunion visits! BTW, all the women I met on the Nuun teams rocked; however, these particular ones though had to put up with me for 40 straight hours with no sleep. There was no do-it-yourselfing on this trip, well except the running. We had the luxury of being chauffeured around on this 200-mile race by our fearless, amusingly foul-mouthed and seriously funny van driver Vishal, a Nuun employee who also made sure that we had our Starbucks, Diet Mountain Dew, and never-ending food and pit stops expertly arranged.  Thanks to Megan Fay for organizing the chaos and chief hydrator and company president, Mason Reay, for another year of gracious hospitality. Random side note: I knew Mason lived in Austin for a while, but found out that our children attended the same preschool at the same time! Now that I think of it, he might have been the dad at the Thanksgiving Pow-wow who offered to bring beer.

August 25: Traveled the entire day, plane had mechanical problems and I wasn’t in bed until 2:30, and shortly thereafter greeted my 5:30 alarm clock. That was neither a sweet nor savory thing. But, while waiting at the airport, I did order a “personal mix” of granola from MixMyOwn.com.  The site is so cool, you choose a base cereal, other grains, fruits, nuts and add-ins and then bag it up and ship it straight to your door! On the back of the bag, the nutrition label reflects the exact mix that you made. And, it tastes really fantastic on my Greek yogurt.

August 26: School started, enough said. Sweet! Okay, I’ll say more – and I don’t usually dump out this much mushy personal information, so here you go! My three sons have entered 11th, 8th and 5th grades, so proud of them and it’s going to be a great year.  Got a sweet kiss from each this morning!

August 28: Finally read my September Cooking Light magazine and made a recipe for Quinoa-Granola Cookies that I will share on the blog tomorrow. Love to put healthy cookies in my kid’s lunches. Sneak peek:

August 30:  Brought a post-practice treat to football practice, Jamba Juice smoothies! Seeing as it was 105 degrees, I had no trouble passing off every last one of the Strawberry Surf Rider smoothies to those hot, sweaty boys. August 31: Celebrated National Bacon Day by wrapping a piece of cured pork around a club cracker and rolling it in brown sugar – then baked at 400F until bubbling with greasy-salty-sweet goodness. This sweet-and-savory sin was not my own doing – inspired by the Pioneer Woman.

Egg-celent School Morning Idea! Hamilton Beach Breakfast Sandwich Maker Giveaway

I have a keen sense of smell and an uncanny ability to track down delicious food being made anywhere, anytime. What I loved about this little breakfast sandwich machine is that it wasn’t just another use-once-and-then-stick-in-the-cabinet gizmo. It was a lean, mean breakfast sandwich-making machine that I knew I could train my ‘tween and teenage boys to use. I feel it’s important to start off the day with a good breakfast, especially one that is packed with protein – about 20 -25 grams of lean protein is the best way to start the day. Last year I met Dr. Heather Leidy, an expert in nutrition and exercise physiology from the University of Missouri, and learned about her recent research that shows how eating enough protein at breakfast can prevent unhealthy snacking in the evening and thus help control weight.

That’s why I like to get my brood of breakfast eaters off to school with something of more substance in their stomachs than Lucky Charms or a Pop Tart.  Eggs are always a favorite, and I’ve tried my hand at making breakfast sandwiches by making an egg patty in a custard cup in the microwave and then putting it on an English muffin. Actually, that technique works pretty well, but then the remaining steps to get the sandwich finished up can be a chore. Enter the Hamilton Beach Breakfast Sandwich Maker. In one fell swoop, this gadget toasts your bread product of choice, melts cheese and warms veggies and meats – all while cooking up your egg scrambled or sunny-side up!

It’s the perfect little machine for streamlining the back-to-school morning chaos. It only takes 5 minutes to make a sandwich and an on-off indicator light lets you know when everything is done. To make sure we had a handle on this machine before school started (goodness knows I didn’t want to decipher an instruction book on the first-day-of-school morning), we tried it out at our last hurrah of summer at the beach. With six hungry boys in the condo, I had no trouble selling these sammies – here’s my cute nephew giving it the thumbs up.

There really isn’t a recipe to follow for this machine; you just add the ingredients you like. We used whole-grain sandwich thins (those skinny buns), bagels, sourdough bread cut to shape with the top of a glass, and even waffles. Inside, I offered up a selection of cheese and meats ranging from bacon to deli-style turkey. And, don’t forget the egg – it is recommended to use real eggs, not those from a carton (especially with egg whites). Sayonara Sprint Partner Running Workout and Mizuno Running Wave® Sayonara Review

I’ve had some experience with some of the newer products in the company’s lineup, having run in the both the Mizuno Wave Evo Cursaris (6.2 oz) and the Mizuno Wave Evo Levitas (5.2 oz), two products that target the minimalist, mid-foot runner like myself.  (Update: both theses shoes have been discontinued). By the way, about three years ago, I worked with Master Pose Method Coach, Valerie Hunt, to “tweak” my running form from heel-striker to mid-foot striker – I’ve had both reductions in injury (basically none) and improvements in my time (factoring for age).  Both of these shoes I just mentioned have a zero drop (or, as they say “zero ramp offset”) from heel to mid-foot, with the Levitas being lighter and closer to the ground of the two.

Anyway, back to the new Wave® Sayonara, the shoe I am reviewing today. Mizuno is touting this shoe, which officially releases online or at a running store near on July 5th, as the “lightest everyday training shoe yet.”  The women’s version hits the scales at 7.1 ounces, making it actually not as light as the EVO line, but also not as stripped down. I’ve run in the shoes several times now, and I actually like them quite well. I definitely notice a little more structured and supportive feel than the EVO line, but they not at all clunky. In fact, I had a pretty speedy tempo workout in them yesterday and felt the ride was right-on and responsive to the feedback I like to get from strike-off. While not “zero-drop” like the EVO line, the heel to mid-foot is noticeably lower and the weight significantly lighter that some of the other popular models on the Mizuno roster including the Rider and the Precision. I would definitely consider wearing the Wave® Sayonara in a longer race like a full marathon but probably stick my current race shoe of choice, the Wave® Ronin 5 (5.8 oz) for half marathons.

Another thing I noticed and like about the Wave® Sayonara is the blow rubber sole that features lightweight yet superior traction. Not many people check out the bottom of their shoes when shopping, but I definitely do. It’s because I hate that feeling like I might slip in a race when the roads are wet from rain or high humidity. The uppers are fun, with a bright modern vibe that looks great with all my other running gear. There are rolling out on July 5th with an ARV of $119.

Should You Be Taking a Daily Multi-Vitamin? #Vitafusion® MultiVite Review

Have you ever wondered if you should be taking a daily multi-vitamin supplement?  If I close my eyes, I can still hear my mom calling out from the kitchen, “Kids, don’t forget to take your vitamins.” So, even though mom almost always served a well-balanced menu with lean meats and fresh produce (lots from our own backyard), I swallowed that morning pill like a good girl, gagging as it sometimes got stuck on the way down, but complying none the less. Well, I’m back on multivitamins and have been for years. Any nutritionist you ask will say that eating a variety of fresh fruits and veggies, whole grains, lean proteins, and low-fat dairy products is the preferred way to get your daily dose of vitamins and nutrients to keep your body functioning at its best. However, even with the best intentions, it is not possible to “eat clean” all the time or even wolf down large enough portion sizes that would give you the complete Daily Recommended Value (DV) for every vitamin, mineral and trace nutrient you need. That’s why I think taking a daily multi-vitamin is like an insurance policy; an inexpensive and easy way to proactively safeguard your body against the expected wear and tear along with any unforeseen damage!    As a competitive runner and CrossFit enthusiast, I rely on a daily multi-vitamin to help by body perform . . . and recover!  A product I have really come to like is the Vitafusion® MultiVites, read on!

I will point out that I supplement with a few other vitamins, based on my life stage and activity level.
