I’m pretty low-key when it comes to entertaining, it’s a safe bet that I’ll be serving up burgers, brisket or tacos in my backyard.  I have three super-hungry, carnivorous teen boys, for goodness sake! These casual meals always please crowds, are easy to scale up for a super-sized party, and can be mostly pre-prepped so I’m not stuck in the kitchen cooking while all the guests are having a good time. Nothing pairs better with any of these dishes than a creamy bowl of avocado goodness  — hurray for guacamole!

I found this delicious recipe for RO*TEL’s Rockin’ Guac that will turn up the volume on your taste buds! The blend of tomatoes and green chilies in RO*TEL add a zesty (but not too spicy) twang to the dip that is to die for. It’s so simple to make you can delegate the job to your kids — you may want to chop the onion first, but they’ll love smashing the avocado. Candied Meyer Lemon Cake with Blackberries - Paleo

I never paid much attention to Meyer lemons until recently – I mean a lemon is a lemon is a lemon, right?!  Well, come to find out, not all lemons are created equally. The Meyer lemon is a soft-skinned citrus fruit that looks a lot like a 10-cent lemon, but actually tastes like sweet million bucks.  That’s because the Meyer lemon is actually a lemon crossed with an orange, taking some of the acidic bite. Even though Meyer lemons are more fragrant and sweeter, they’re still a bit tart and better balanced in a recipe.

I was inspired by a lemon cake recipe I saw in the Food Network Magazine, but of course I tinkered with it to make it my own! I made this cake to take to Easter dinner at my Aunt’s house — it’s just bursting with spring flavor and a beautiful sight to behold.She’s going to love it.

Notes about the recipe:

  1. If you are unable to get your eggs to the glossy peak stage, don’t worry the cake will still taste just as delicious (it just won’t be quite as fluffy – it’s a denser cake anyway).
  2. Do not skip the steps of simmering and draining the lemon slices three times. It seems redundant, but you are boiling off the bitterness from the pith and acid from the lemon flesh.  The result is lemon peel that is delightfully tender, edible and yummy.
  3. Feel free to swap out raspberries for the blackberries in the syrup and garnish.

This gluten-free dessert recipe is bursting with flavor - lemons and blackberries make perfect for Easter, graduation and other spring celebrations

Ingredients
  • 1/2 cup coconut oil
  • 1 3/4 cup almond flour (meal)
  • 1/3 cup coconut flour
  • 1 1/2 cups palm sugar divided
  • 2/3 cup honey
  • 4 large Meyer lemons or regular lemons will do
  • 1 teaspoon pure vanilla extract (zest 2 lemons and squeeze juice / slice other 2 lemons very thinly)
  • 6 large eggs (divided separately into 4 yolks (discard 2 yolks) and 6 egg whites
  • 1 pint blackberries divided
Instructions
  1. Pre-heat oven to 325 F degrees. Line bottom of 9-inch springform pan with parchment paper and spray top of paper and sides of pan with coconut oil cooking spray (or just rub with coconut oil).
  2. In medium bowl, whisk together almond flour, coconut flour and salt in medium bowl. Set aside.
  3. In a large bowl, add ½ cup sugar, 1/3 cup honey, zest from 2 lemons, 4 egg yolks, vanilla and olive oil. With mixer on medium, beat for 2 – 3 minutes until smooth and creamy.
  4. With mixer on low, slowly add almond flour mixture to egg mixture bowl, beating until just combined (don’t over beat).
  5. In a clean bowl, add 6 egg whites that are at room temperature. With mixer on medium, beat for approximately 1 minute or until foamy. Add in ½ cup sugar and beat on medium-high for another 3 minutes or until glossy peaks have formed.
  6. Scrape ½ of egg white peaks into almond meal and gently incorporate by hand with spatula. Add the remainder of egg whites and stir until mostly combined.
  7. While cake is baking, make candied lemons by adding 2 thinly sliced and seeded lemons to small saucepan and cover with water. Bring to a boil and reduce heat to simmer for 3 minutes. After 3 minutes, drain water and refill with fresh water on lemons. Simmer for another 3 minutes. Repeat this process a 3rd time to remove bitterness from pith.
  8. After lemon slices have been simmered and drained 3 times, add 1 cup of fresh water, remaining ½ cup sugar, remaining 1/3 cup honey and the juice from 2 lemons. Bring to a boil over high heat and then reduce to medium and simmer for 20 minutes, stirring occasionally.
  9. Use a fork to transfer lemons to plate and let cool. Keep lemon syrup in saucepan and add 1/2 of blackberries. Simmer over medium for an additional 10 minutes, mashing up blackberries with fork.
  10. Remove cake from springform pan, using a knife to loosen sides before unlatching. Transfer cake to serving platter and brush top of cake with blackberry syrup. Top cake with candied lemon slices, fresh blackberries and drizzle with remaining blackberry syrup (or reserve leftover syrup for another use).

Eat More Fruits & Veggies | Confetti Lettuce Wraps #Recipe

It’s the most wonderful time of the year. Hum along now. There’s fresh produce for shopping with vine-ripe goodness a popping, to nourish my family held dear. Yes, it’s the hap- happiest season of all, with foods so darn delicious and purposefully nutritious, for friends come over to call.  Okay, while I might not be a songwriter at heart, I certainly am a natural-born lover of warm weather and the wonderful bounty of byproducts the spring season brings – namely an abundance of fruits and vegetable, beautiful flowers and the invitation of mild mile upon mile on the running trails.

Today I’m so happy to share a trail running tempo run I created for CorePower.com (and awesome, high-protein recovery shake I frequently drink) and a rainbow-inspired dinner idea for Confetti Veggie, Fruit & Bean Lettuce Wraps – perfect for a  #MeatlessMonday!

Now, onto the food! I love this healthy recipe because it uses more fruits and vegetables that can be counted on two hands. Gobble up a few of these lettuce wraps for lunch or dinner and you’ll be well on your way (if not exceeding) daily consumption goals for fruits and vegetables. Did you know, according to the Center for Disease Control, only a third of American adults report eating two servings a fruit a day and less than 27 percent consumed three or more servings of veggies, the minimum recommended daily amount (RDA)?  Notice how I bolded the word minimum? That’s because the RDA sets forth only the lowest level of nutrients needed for the average, already healthy person to keep from becoming malnourished. The minimum.

I truly believe we should all be eating more fruits and vegetables, as opposed to the minimum. I wrote a post for Living Litehouse about how, as Americans, we are blessed to live in a country with easy access to high-quality, fresh foods that are reasonably affordable in the scheme of things. If you don’t agree, put your Starbuck’s latte or iPhone down and think about it for a minute — I’m taking a soapbox stance here.

I recently gave an affordable healthy cooking demonstration in a 300+ packed auditorium in the lower-income part of town. The participants were friendly, engaged and open to learning my healthy cooking tips. Many approached me afterward talking about the woes of chronic health conditions (created by being overweight). I got home and, at first, thought it unusual that I had about 250+ more “direct” referrals in my Google Analytics for the day – that is, until I realized that as I was on the stage, all these low-income people were hitting my blog from their smart phones.  This argument that eating healthfully is too expensive gets a reality check. Remember,  you don’t need to shop at Whole Foods (unless you have money to burn) to eat well. Put down the $6 fruit cup and buy a sale-priced 10-pound bulk bag of the grapefruit (or whatever) for half the price at the “regular” grocery store.

A recent Harvard study reports it only takes $1.50 per day to eat a “healthy” diet as opposed to the processed, packaged and convenience diet that has become a way of life for many – I’d even say it costs even less if you know how to shop sales. So, in the end – it’s a priority, do you want a data plan or to die? Okay, I know that’s a little extreme – but you know what I’m saying.

Confetti Veggie, Fruit & Bean Lettuce Wraps Recipe.

  • ½ cup seeded and diced cucumber
  • ½ cup grated carrots
  • ½ cup chopped red onion
  • ½ cup diced strawberries
  • ½ cup diced pineapple
  • ½ cup diced papaya
  • ½ cup diced mango
  • 1 15-oz. can black beans – drained and rinsed
  • 1 tbsp. chopped fresh cilantro
  • 2 tbsp. diced fresh Jalapeno
  • 2 tbsp. green onions, sliced
  • 2 head washed and dried baby romaine lettuce leaves
  • 2 oz. crumbled feta cheese
  • 1 oz. snow pea shoots
  • 4 oz. Litehouse Food’s Huckleberry Vinaigrette* (extra  for dipping)

*You can use any “sweet-ish” vinaigrette you prefer like a poppy seed, honey Dijon, balsamic, etc.  I just love the Huckleberry Vinaigrette by Litehouse Foods because it is so fresh and flavorful, not too sweet – and has actual whole huckleberries in the bottle!

  1.  In large bowl, toss together cucumber, carrots, red onion, strawberries, pineapple, papaya, mango, black beans, cilantro, jalapeno and green onions.
  2. Stir in Huckleberry Vinaigrette (or dressing of choice) and allow mixture to sit for five minutes so herbs rehydrate.
  3. Add a spoonful of fruit and vegetable mixture to the center of lettuce leaf. Repeat for remaining lettuce leaves and mixture.
  4. Sprinkle feta cheese on top of mixture and garnish with snow pea shoots.
  5. Serve with additional Huckleberry Vinaigrette for dipping

In addition to running through wildflower speckled, Texas hill country roads and partying afterward with wine, massages and friends, spring weather makes me want to celebrate being active in the great outdoors – play basketball with the kids, take my paddle board for a spin or just jump like a fool on the trampoline!

My new Tommie Copper Pink Compression Capris taking me higher!
