In small sauce pan, over medium heat, melt coconut oil -- spooning off 1 teaspoon into a small microwave safe bowl with the chocolate chips. Set that bowl aside for now.
Add protein powder, stirring quickly to incorporate. Cook for approximately 30 to 60 seconds, stirring constantly until thickening up. Don't over cook.
Use a 1 Tablespoon measure to scoop out batter and put into silicon brownie bite (or mini muffin) molds. Set in freezer for 30 minutes to set up.
Right before removing from freezer, melt bowl with chocolate chips and 1 teaspoon coconut oil in microwave. Heat on high in 15 second intervals, stirring between each, until melted and glossy.
Remove from freezer and spoon a bit of melted chocolate over the top of each. Set in fridge for 15 minutes to harden. Remove and pop out of molds -- enjoy.
