The name “fat bomb” sounds a little scary to me, but it’s what seems to be the trendy title for low-carb candy slash dessert creations. It’s not just a bomb of fat (although there is plenty of beneficial coconut fat) — there is also protein to address our protein needs too! Chocolate Mint Protein Powder Fat Bombs

I used Optimum Nutrition Gold Standard Whey Protein Powder in Chocolate Mint flavor in this protein powder snack recipe. However, the beauty of this whey protein powder candy recipe is that ANY flavor can be used — like Cake Batter or Salted Caramel.  I have not tried it with a plant-based protein powder yet, but i think the same chocolate fat bomb recipe would work.

The process is easy, and here is brief rundown and all details are in the recipe card below. First, melt your coconut oil  . . . I like the Virgin Coconut Oil from Now Food’s Ellyndale line. Chocolate Mint Fat Bombs

Add a cup of protein powder to the oil, while stirring quickly over medium heat.  As soon as the mixture starts to set up, pull it off the heat — about 30 to 45 seconds.

Then it’s just a matter of spooning it into silicone molds for brownie bits or even mini muffin tins. That sets in the freezer to set for 1/2 hour before topping with sugar-free chocolate chips melted with a bit of coconut oil. Regular chocolate chips can be used to, but be aware that will add more carbs to the recipe. After setting in the fridge for another 15 minutes, the protein powder fat bombs are ready to be popped out and enjoyed.

Store any leftovers of these chocolate mint fat bombs in the fridge. Makes 12 — each has 141 calories, 12g fat, 6.5g protein and 3.2 net carb (macros could vary slightly based on the protein powder and sugar-free chocolate chip brands you use).

Ingredients
  • 1/2 cup coconut oil reserve 1 teaspoon
  • 1 cup whey protein powder, chocolate mint flavor or sub another flavor
  • 6 Tbs sugar-free chocolate chips can use regular chocolate chips, adds more carbs to recipes
Instructions
  1. In small sauce pan, over medium heat, melt coconut oil -- spooning off 1 teaspoon into a small microwave safe bowl with the chocolate chips. Set that bowl aside for now.

  2. Add protein powder, stirring quickly to incorporate. Cook for approximately 30 to 60 seconds, stirring constantly until thickening up. Don't over cook.

  3. Use a 1 Tablespoon measure to scoop out batter and put into silicon brownie bite (or mini muffin) molds. Set in freezer for 30 minutes to set up.

  4. Right before removing from freezer, melt bowl with chocolate chips and 1 teaspoon coconut oil in microwave. Heat on high in 15 second intervals, stirring between each, until melted and glossy.

  5. Remove from freezer and spoon a bit of melted chocolate over the top of each. Set in fridge for 15 minutes to harden. Remove and pop out of molds -- enjoy.

  6. Keep leftovers in the refrigerator.

    • I think that you could easily do that — substituting and equal amount of collagen powder for the whey protein . . . or some portion of it! let me know how it turns out!
