Strong but creamy and sweet, this easy "fancy" coffee gives me that boost I need -- and also feels like a special treat.
In microwave, boil 1 Tbsp. water min bowl, let cool 30 seconds.
Add 1 Tbsp. instant espresso powder and 1 Tbsp sugar substitute to bowl and use frother or small whisk to beat until soft peaks form (about 3 to 8 minutes).
Whisk in vanilla extract.
Add ice to 12 ounce glass, pour in unsweetened almond milk (can you sweetened if you like sweeter drinks).
Pour almond milk over ice and use spoon to dollop whipped coffee on top.
Sprinkle with cinnamon. Enjoy!
