Our reduced state of “going out” the last six months, has us turning to replicate many of our creature comforts at home.  While I haven’t been that into baking and binge watching, I HAVE loved creating fancy coffee drinks at home — like one of the “it” drinks of this unusual era — Dalgona Coffee.

From what I understand, Dalgona whipped coffee got it’s name from a popular Korean candy by the same mean . . .which means honeycomb toffee. The golden color and sweetness is also found in this hot or iced coffee drink — it’s just so good and yummy!

How to make sugar free whipped coffee is a life hack that you need in your repertoire, not just to pamper yourself, but also to impress guests. Everyone will thing you wen to so much trouble, but the secret is that how to make sugar free Dalgona coffee is ridiculously easy once you have the hang of it.

Some things to know before you get started. First, use INSTANT espresso powder and NOT plain ground coffee. The reason is that instant espresso is made with emulsifiers that help it make a better cup of instant coffee — and those emulsifiers are what lets the whipping hold shape. Without the instant coffee, the whipping will not come to life.

Traditional Dalgona whipped coffees call for equal parts instant espresso powder and white table sugar. For sugar free whipped coffee, just swap in a granulated sugar substitute that has a cup for cup equivalent measure as regular sugar.  That’s it! Also, making the coffee whip can be done with a mixer, immersion blender, hand whisk or, my preference, a milk frother.  Because I am usually making just ONE coffee at a time, my stand mixer is too large for the job yet whisking by hand is very tiring (yet it can be done!). A milk frother is right-sized and gets the work done in just a few minutes, and is small enough it can be stashed away in a drawer or cabinet.

Strong but creamy and sweet, this easy "fancy" coffee gives me that boost I need -- and also feels like a special treat.

Ingredients
  • 1 Tbsp Instant Espresso Powder
  • 1 Tbsp Sugar Alternative like granulated Stevia (equivalent measure)
  • 1/4 tsp vanilla extract
  • 8 oz unsweetened almond milk
  • ice, as needed
  • 2 dashes ground cinnamon
Instructions
  1. In microwave, boil 1 Tbsp. water min bowl, let cool 30 seconds.

  2. Add 1 Tbsp. instant espresso powder and 1 Tbsp sugar substitute to bowl and use frother or small whisk to beat until soft peaks form (about 3 to 8 minutes).

  3. Whisk in vanilla extract.

  4. Add ice to 12 ounce glass, pour in unsweetened almond milk (can you sweetened if you like sweeter drinks).

  5. Pour almond milk over ice and use spoon to dollop whipped coffee on top.

  6. Sprinkle with cinnamon. Enjoy!
