Ingredients
1/4cupwater
¼cupstevia baking blend or similar 1:1 measure equivalent sweetener
2large egg white or ¼ cup from a carton
1/3cupoil of choice
2ounceschocolate protein powder
2tbspcocoa powder
1tbsppowdered espresso
¼tspsalt
2cupsold fashioned rolled oats
1cuppopped amaranth
½cupchopped nut of choice
Instructions
Preheat oven to 300F.
In a bowl, whisk together water, oil, egg white, sweetener and salt.
Whisk in cocoa powder, espresso powder and protein powder until combined.
. Finally, stir in oats and pecans and stir until evenly coated.
Pour out onto rimmed baking sheet (lined with silicone baking sheet or parchment paper) and pat down into an even layer, about 1/3 to ½” thick.
Bake for approximately 30 minutes, using spatula to gently flip toss up every 1o minutes to promote even cooking. Try to keep clumps intact.
Remove from oven and let cool on sheet for at least 10 minutes before breaking up into desired-size clusters and storing in an air-tight container.
