12 Minute Boiled Egg Pesto Pasta

The only cooking task here is preparing pasta – I’ve used traditional noodles in a gemelli shape because that’s what I could find in the pantry and sometimes that has to be good enough. But, you can choose whatever you like including whole wheat and grain free options – even zoodles.12 Minute Boiled Egg Pesto Pasta makes a quick , healthy, and easy solution for lunch or dinner.

Cooking pasta takes about 10 to 12 minutes once the water is boiling, that provides plenty of time to prep the other ingredients.  And, when I say “prep,” I’m just talking about slicing grape tomatoes in half, opening a jar of prepared herb pesto and grabbing a pack of pre-cooked, pre-peeled hard-boiled eggs (I like the ones from Great Day Farms found in the Deli department at Walmart).  FYI, this actual post isn’t sponsored, but I have worked with the brand in the past and recently on social media.

However, if you don’t have pre-cooked eggs on hand, never fear! You can actually put the eggs into the pasta water and they will also cook in 12 minutes, just take care not to have a rolling boil, set the heat down to medium for a gentler ride alongside the pasta. Is this a life hack OR WHAT?!  However, you are still tasked with peeling the eggs, and that (IMO) is a nightmare!

Drain off pasta, toss with pesto sauce and a bit of salt and pepper. Add chopped eggs, sliced tomatoes and a handful of baby spinach or arugula. I’ve topped with toasted pine nuts, but you could garnish with whatever your heart desires – nuts, cheese, more veggies, etc.  That’s it, there is no “official” recipe, just winging it and winning for dinner!
