Slow Cooker Beef Tips with Gravy really brings up memories, such a comfort food recipe that will please the whole family.
Load up the slow cooker in the morning and come home to a delicious, meaty meal for dinner that can work for a variety of diet types including Paleo, Keto, Whole30 and more. Read on to get this beef slow cooker recipe.I’m a big fan of beef, it’s nutrient dense and provides me important things to keep my body running optimally like protein, iron, zinc and more. I’ve used top sirloin steak in this slow cooker beef tip recipe, which is a lean, low-cal cut. This cut is very versatile if your wondering what to make with sirloin — it’s great for grilling, stir-fry, and slow cooker!
After trimming and cubing the steak, season with salt and pepper and sear quickly in a very hot skillet. The goal here is not to cook through, but to create a flavorful, caramelized crust. Work in batches, don’t try to rush the task by overcrowd the skillet – this just ends up steaming the meat with an excess of released juices in the pan. Don’t do that or this slow cooker beef recipe won’t reach it’s full potential!
Next, toss a chopped onion, the seared beef and other ingredients in the slow cooker. I like to use slow cooker liners to make clean-up really easy – I LOVE that. Use a six-quart slow cooker so you have plenty of room (or in case you want to double the slow cooker beef tips recipe, which you probably will because it’s great for meal prep).
The juice that accumulates in the slow cooker are transformed into “gravy” and is so amazing running into the sweet potatoes, cauliflower rice, grits or whatever you choose to serve these delicious beef tips with! Most beef tip recipes use cornstarch as the thickening agent, but arrowroot makes a good Paleo alternative. As for the some of the other ingredients, I recommend this freeze-dried Italian Herb Blend, it’s the next-best thing to fresh, in my opinion. However, if this is not available, then a dried Italian herb blend will do! Also, for the added broth . . . I like to use a beef bone broth for a richer, more nutrient-dense outcome, but regular beef broth from a carton or even bouillon cubes will work too.
This Crock pot beef tips recipe makes a big batch of beef (12 hearty servings!), and it’s perfect for prepping meals for the week or freezing for later in the month! One serving has 267 calories, 3g net carb, 11g fat, and a whopping 36g protein.
So yummy and comforting -- serve over mashed potatoes, sweet potato, grits, rice, cauliflower rice or whatever you can think of!
- 3 lbs. top sirloin steak
- 1 tablespoon ground pepper
- 2 teaspoons salt
- 2 tablespoons olive oil divided
- 3 tablespoons minced garlic
- 1 medium white or yellow onion
- 1 tablespoon Italian Seasoning or 2 Tbs. if using the freeze-dried herbs I mentioned
- 2 cups beef bone broth or, regular beef stock
- 1 bay leaf
- 3 tablespoons arrowroot powder or cornstarch (if not Paleo)
- 6 tablespoons water
- salt and pepper to taste
-
Cut sirloin steak in large, bite-sized pieces. Put cubes in bowl and toss with pepper, salt and garlic.
-
Heat large skillet over high heat, 1 tablespoon of the oil. Working in two batches, sear the beef taking care not to crowd the skillet. Use the remaining oil for second batch. Do not cook the beef all the way through, just aiming to sear the exterior to create a caramelized crust.
-
Transfer seared beef into slow-cooker (using liner, if desired). Chop up onion and add to slow cooker.
-
Add Italian seasoning and broth, stir everything to combine. Top with bay leaf.
-
Set slow cooker timer on low for 8 hours. Add lid.
-
In last hour of cooking, mix together the slurry of arrowroot powder (or cornstarch) and water. Stir into slow cooker and let continue to cook. This will thicken up the cooking juices to make gravy.
-
After thickening, season with salt and pepper to taste.

This looks so juicy and delicious! Would love to come home to this warm in my crockpot. Thanks!
Can you freeze the meat?
Yes! Freeze leftovers (covered with any remaining gravy/sauce) in air-tight container for up to 6 months. Either thaw overnight in fridge, or “defrost” button on microwave for a bit to get out of one big hard chuck. Break up a bit with fork and then reheat in microwave for a minute or two depending on quantity reheating.
