As we close out these last few months of the year in high gear, it’s always nice to have a 5-minute holiday appetizer in your back pocket  – and this spread (or dip) is a festive, flavorful and fast winner! Even with a bit of dried fruit, this low-carb recipe can work as a treat for those on the keto diet. Read on to get this keto-friendly and low carb appetizer recipe.

When I say this low carb appetizer recipe is easy, I mean it. It’s simply stirring together softened cream cheese with blue cheese crumbles, chopped pistachios and dried cherries. Boom, bam! So, when you are hosting a Thanksgiving, Christmas, New Year’s Even or other holiday party, this is no-stress appetizer to serve – it’s also a fabulous low carb dip and spread to take to a “pot luck” style gathering – or any keto entertaining.Blue Cheese, Cherry & Pistachio Spread is a quick and easy low carb recipe that is keto friendly. Great for low carb holiday entertaining (serve with celery or slices of roast beef or salami) . . . or even use as a spread on your bread or grain-free alternative.

To keep the carb count lower and make it a keto snack, yet still get that sweet-tart taste that pairs so well with the pungent blue cheese, I’ve used the Reduced Sugar Montmorency Cherries from Stoneridge Orchards – they have 50 percent less sugar than their traditional product, have no preservatives, and just a few dried cherries always curb my hankering for candy. Ingredients
  • 5 ounces cream cheese, softened
  • 2 ounces blue cheese crumbles
  • 1/4 cup reduced sugar, dried cherries - chopped
  • 1/4 cup shelled , roasted and salted pistachios - chopped
Instructions
  1. In medium bow, use a spatula to mix together cream cheese and blue cheese until fairly smooth -- it's okay if a few lumps of blue cheese remain.

  2. Mix in chipped cherries and chopped pistachios until combined.

  3. Enjoy with pairings like celery sticks, roast beef slices, low carb crackers, et.

  4. Leftovers may be stored, covered in plastic wrap, in refrigerator for up to 3 or 4 days.

    • Mine too! For recipes, I buy the shelled obviously — but I hide those! For snacking I get them in-shell to try and slow them down – haha, life with three teenage boys
