Every clean eater needs a quick quality protein source on those days when life’s craziness is out of control. For me, it’s hard boiled eggs to the rescue. Each egg offers 6g muscle-making, hanger-squashing protein and only take about 12 minutes to cook to perfection – and if I meal prep eggs earlier in the week, it’s just a lickity-split matter of grabbing a couple out of the fridge.
Sometimes, if my meal intentions have changed over the course of the week (impromptu lunch invitations, traveling, post-Easter surplus, or just preference), I may have a few extra leftover hard-boiled eggs waiting to fulfill their destiny. Turmeric Quinoa Egg Salad Spread may be one of my most creative and tasty ways to use up hard boil eggs. The basic idea is a mash of hard boil eggs with quinoa and Greek yogurt for extra texture and protein. Ahhh, plus the colorful healing benefits of ground turmeric. So much dietary winning here. It’s easy to plop a big spoonful on a salad or spread on the toast of your choice. Each serving has 125 calories, 15g carb and 8g protein.
12 Minute Boiled Egg Pesto Pasta only takes 12 minutes to cook the pasta . . . but, you can trim it down to 5 minutes using a ready pasta, rice or whole grain (the kind already cooked up and in a shelf-stable bag). Zoodles or other vegetable noodles are a good, quick option too! Then, toss warm pasta with pesto, baby spinach and other fresh ingredients you crave and top with sliced, leftover hard boiled eggs. Nutrition count varies base on what your adding to the pasta toss, but remember – those hard-boiled eggs are 6g of protein each!
Cotija Corn Avocado Egg Salad adds quick, delicious ole to your day – because avocado makes EVERYTHING better, am I right?! Hard boil eggs, corn, diced tomatoes, salsa, red onion, Mexican crumbling cheese and chunks of avocado mingle together in a creamy, south-of-the-border inspired dressing. Friendly for quick salads, wraps, sandwiches and more and a yummy addition to your lunch menu if you meal prep eggs.
Easy Turmeric Cumber Egg Bites are perfect for your keto diet snacking with only 25 calories and less than 1g carbohydrate per piece. Again, with the turmeric which I used in the sauce, but I love this prized spice for it’s anti-inflammatory properties and beautiful color. A healthy appetizer for any party (especially if you’re getting tired of deviled eggs) or just a no-guilt snack between meals.
