My body could really benefit from a refreshing jump start, a detox to all my late winter snacking. So, HELLO, gazpacho – I love every take on this cold soup I’ve tasted! Traditional gazpacho is a summer soup recipe featuring blended vegetables and quite healthy in its own right. I’ve upped the benefits and added a sweet, tangy twist with additional detox-friendly fruits and ingredients. Only 43 calories per 1-cup serving!

Detox-friendly Ingredients in Cranberry Watermelon Gazpacho

Cranberries: Cranberries are well-known for their natural use in preventing and treating urinary tract infections, but they are also fabulous for detoxing and flushing excess water and toxins from your system, in general, by stimulating urine production. Cranberries also filled with fiber (and can help body waste move along) and balance the gut with probiotics, good bacteria.  Rich in antioxidants and low in sugar, you really can’t lose with this versatile fruit. To reap the benefits of cranberries year-round (they can be hard to find in the produce department out of season), I rely on frozen-from-fresh cranberries from Cape Cod Select.

Watermelon: Drinking plenty of water is an important step in keeping your body hydrated, balanced and functioning optimally. Because watermelon is 92% water, I consider it a fruit you can drink! When blended up in this cranberry gazpacho recipe, watermelon serves as the liquid – no need to add any high-calorie juices or liquid bases.

Cucumber: Did you know cucumbers are related to watermelon? It’s true and that’s why water-rich cucumbers also a top detox food and found in my cranberry gazpacho and traditional gazpacho soup recipes.

Apple Cider Vinegar: A tablespoon a day keeps the doctor away! The basis for using this detox “darling” that that raw, unfiltered apple cider vinegar (not the cheap, processed stuff) still has “the mother” in it. The mother provides good bacteria for the gut, along with vitamins, minerals, and enzymes – all this can aid in digestion and help flush toxins from the body.

Ginger: This spicy rhizome (sort of like a root) is one of my favorite flavor profiles, and offers so many health benefits I’ve posted about ginger benefits frequently.  Some of which are that ginger stimulates digestion, circulation, and sweating, which are important routes of natural detoxification! Ginger also supports digestive enzymes that help lessen tummy problems like gas and bloating.

Dandelion Flowers (Optional): Dandelion flowers are edible (actually, the whole plant is edible including flower, bud, leaves, roots) and a beautiful addition to any detox diet.  Dandelion is a natural, botanical want to support your liver and kidneys and serve as an herbal diuretic, flushing excess retained water out of the body. This time of year, I simply pluck the flowers (which many consider weeds) and add them to my various recipes or dry the leaves out for tea. If you don’t have any dandelion flowers available, don’t fret – you can drink a glass of dandelion tea later!

How to Make Detox Cranberry Gazpacho

Preparing Detox Watermelon Cranberry Gazpacho, couldn’t be easier – it’s a raw, no-cook soup recipe. After peeling and cubing cucumber, chunking up the watermelon, quartering the roma tomatoes, squeezing lime juice and microplanning fresh ginger (or you can use ginger paste) – all that’s left to do is toss the prepped produce into a blender along with apple cider vinegar and the frozen cranberries from Cape Cod Select.  Blend, pour in a bowl, garnish if desired, enjoy! Leftovers may stay chilled, air-tight in the fridge for about three days.

Ingredients
  • 2 cups frozen cranberries
  • 2 cups cubed watermelon
  • 1 medium cucumber peeled and cubed (about 2 cups)
  • 2 Roma tomatoes quartered
  • 2 tablespoons fresh lime juice
  • 2 tablespoons raw, unfiltered apple cider vinegar
  • 1 tablespoon micro-grated fresh ginger
  • Optional Garnish: Dandelion flowers, diced cucumber, diced cranberries
Instructions
  1. Add frozen cranberries to blender along with cubed watermelon, and chopped cucumber.
  2. To blender, add lime juice, apple cider vinegar, and ginger grated using a micro-planer.
  3. Blend until smooth and pour into bowls.
  4. Garnish with dandelion flowers and diced cucumber and diced cranberries, if desired.
