Oven roasted cauliflower has always been a family favorite for simple weeknight meals, but by dressing up with blue cheese, this humble veggie becomes a sophisticated side dish that’s ready to rock alongside a roast, turkey or other holiday main dish. Making Easy Blue Cheese Roasted Cauliflower is so stress free, it’s simply a matter of cutting up a cauliflower into bite-sized pieces (no shame in buying a couple of those fresh bags from the produce department that’s already chopped up), drizzling with a “dressing,” roasting and then sprinkling with a bit more blue cheese.

With only a couple of convenient ingredients, less than five minutes of prep time, and hands-off roasting in the oven, a humble head of cauliflower can be elevated into a standout side dish, sure to collect complements from even the most discerning of food critics at your table.
Easy Blue Cheese Roasted Cauliflower is pretty much guaranteed to be polished off within minutes at Thanksgiving, Christmas or other holiday dinner. So, to prevent fighting and jockeying for position in the buffet line, I always prep a double or triple batch on the baking sheet. Even if I don’t end up roasting it that day, I can cover and keep in the fridge for “fresh” leftovers the next day.

This sophisticated side dish couldn't be easier -- just 5 minutes to prep and on the table in under 30! It's easy enough for everyday dinner, but a sophisticated way to serve vegetables for your holiday meal.
- 1 large head cauliflower
- 1 cup Blue Cheese Vinaigrette Dressing see recipe notes for alternative prep if you don't have the dressing
- Salt and pepper
- 2 ounces Blue Cheese Crumbles
- optional 1 tablespoon fresh thyme leaves

Heat oven to 400 F degrees. Line 9” x 13” rimmed baking sheet with foil.

Remove leaves and core from cauliflower, break or cut into bite-sized pieces.

Add cauliflower pieces to bowl and add vinaigrette, stir until coated.

Pour out cauliflower onto prepared baking sheet, in single layer. Drizzle with any dressing that remains in bowl.

Lightly season with salt and pepper.

Roast in 400 F oven for approximately 25 minutes, turning half-way through with spatula. Cauliflower will be done when florets are softened and turning lightly brown at edges.

Transfer cauliflower to serving bowl or platter, drizzle with dressing left on baking sheet.

Sprinkle with blue cheese crumbles and fresh thyme (optional), toss lightly.
If dressing not available, use this substitute:
- 1/3 cup olive oil
- 1/4 cup white wine vinegar
- 1/3 cup blue cheese crumbles
- 1 teaspoon granulated stevia (or sugar if you prefer)
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
