I’ve been catching up on the pile of books people share with me and am giving you the details on my favorite seven Favorite Books: Healthy Living, Fitness, Diet and Cookbook – Summer 2018

I have been salivating over this cookbook the first minute I saw review copies floating around – so HURRAY when I found my very own copy in the mailbox today! Combining the hottest diet trend—the ketogenic diet—with the hottest kitchen appliance—the Instant Pot, this cookbook boasts 175 low-carb, high-fat recipes for super-speedy, delicious meals everyone will love.
Keto diet combines a customized carbohydrate restriction, moderation of protein intake, and real food-based fats to promote weight loss and boost energy – studies are also showing it can reduce the instance of certain diseases like diabetes and Alzheimer’s. While I am not HARD CORE keto by any means, I would say that I follow a higher protein, lower carb dietary pattern on a mostly daily basis – and that is what has helped me stay lean all these years.
Anyway, back to the book – many recipes feature full-color photos that will have you drooling. Recipes for every meal and occasion, including low-carb desserts. Whoohoo! Dishes like Butter Beef with Spinach, Salmon-stuffed Avocado and Peanut Butter Cheesecake Bites caught my attention. And, you can’t beat an instant pot for convenience and speed – it does everything, from saute and sear to pressure cook, slow cook and more. If you don’t have an Instant Pot, getcha one here – YOU NEED THIS INSTANT POT IN YOUR LIFE.

A motivating read that will inspire you to set new goals, whatever your circumstance!
Apple Cider Vinegar Drinks for Health – 100 Teas, Seltzers, Smoothies and Drinks by Britt Brandon
In my opinion, apple cider “tonics’ are awfully hard to tolerate – I just don’t like the taste. However, this practical book shares 100 delicious recipes made with wholesome ingredients that may provide positive health perks –including weight loss, increased energy, glowing skin, better digestion, and improved immune system function. I’m sold, and bought another bottle of Bragg Apple Cider Vinegar to give it another go – I started with Blue Cantaloupe Chamomile Smoothie and Watermelon Basil recipes and plan to work my way through the book. Such pretty photos too!
The Mama Mia Diet – The Secret Italian Way to Good Health by Dr. Paola Loveisetti Scamihorn and Paola Palestini, PhD
I don’t eat pasta often or even like wine, truth be told, so I wasn’t too sure about the claim “Eat Pasta, Enjoy Wine & Lose Weight” was for me. However, The Mama Mia Diet doesn’t just promote pasta and wine, actually those things should be enjoyed in moderation, but also advocates the Mediterranean dietary eating patter – lots of heart-healthy oils, legumes, fish and poultry and, yes, pasta and wine if so desired. One of the things I like about this “diet” book is that it takes a less restrictive approach to eating, allowing you to enjoy the things you do like in moderation, using healthier ingredients and cooking methods.
Taco! Taco! Taco!: The Ultimate Taco Cookbook – Over 100 Recipes for Everybody by Sara Haas
Turn every night into taco night with these tasty taco recipes with variety that will appeal to everyone, to vegans, meat-eaters, sweets-eaters and more! Seriously, what’s not to love about a taco, and the amazing photography that went along with the recipes really put me in the taco mood. The Sesame Bok Choy Tacos, Cinnamon French Toast Taco, and Beef Skirt Steak Tacos caught my eye and were made first!
Tiny House Cooking – 175+ Recipes Designed to Create Big Flavor in a Small Space, by Adams Media
Did you know tiny homes are the next big thing (but, please, please never tiny meals)! If you live in a tiny home, dorm, apartment, recreation vehicle or house boat or just want to simplify your life, yet still want to eat well, this cookbook is perfect for you! All of the recipes work for cooking in a tight space with minimal equipment, yet still taste like it came out of a great chef’s spacious accommodations. It’s hard to believe, but none of the recipes require an oven, microwave, toaster oven, freezer, full-sized refrigerator, or any other extraneous device. Also, great info shared on equipment you DO need, space-saving ideas, and creative ways to reduce and recycle waste.
