Using cod, this Lemon Pistachio Fish recipe for Air Fryer has 234 calories, 5.5g net carb and 28g protein making it suitable for my Mediterranean diet lifestyle – and it’s also good for low-carb and keto diets too!
Lemon Pistachio Cod in the Air Fryer, 15 minutes prep to plate. Quick and easy clean up. Low carb and Keto friendly.
- 1 6- oz. filet pacific cod
- 1/3 cup shelled, roasted salted pistachios
- 1/3 cup fat-free Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh lemon zest or can sub dried
- 1 tablespoon minced fresh parsley or can sub dried
- Cooking spray
- Salt and pepper to season

If frozen, thaw fish in refrigerator for about 6 hours or for 15 minutes in bowl of water.

Pat filet dry with paper towel and cut into two portions (or 3 or 4 portions depending on size of air-fryer basket). Set aside.

Place pistachios in small food processor and process until coarsely chopped. Set aside.

In small bowl, mix up yogurt, lemon juice, lemon zest and parsley. Set aside.

Spray basket of Air Fryer with cooking spray.

Arrange cod pieces in basket, season lightly with salt and pepper.

Use spoon to spread around a yogurt mixture on top of fish. Next use another spoon to layer on chopped pistachios, lightly pressing down with fingers to adhere the “crust.”

Slide basket into Air Fryer and cook at 400F degrees for 6 to 8 minutes, or until tops of pistachios lightly browning and fish flaking but still moist.

Remove, plate and serve with lemon wedges.
