Welcome to the club! Membership entitles you to lunch without bread, but before you accuse me of cruel hazing, you need to give my Low-Carb Turkey Club Lettuce Wrap with Ranch a chance. What this meal lacks in toasty bread and omg-creativity (basically it’s a salad that meets sandwich fillings), it makes up for in low-carb yumminess and take on-the-go convenience.
Read on to get the recipe, nutrition info, and easy way to roll lettuce wraps up.
Ahh, so a Low-Carb Turkey Club Lettuce Wrap with Ranch is my go-to grub choice when I only want to spend 5 minutes max making a meal. Plus, I know I’m getting way better nutrients over other quick-fix foods. In fact, each serving has just 298 calories, nearly 18 grams protein, 21g of fat and only 9g carbohydrates (of which 4.5g are dietary fiber). Don’t freak about the 21 grams of fat, it’s not the fat that makes you fat . . . it’s an excess of calories consumed over those burned and also the way your body is using the food eaten – when you follow a higher protein, higher fat diet and limit carbs, your body becomes more efficient (out of necessity) at burning through fat.
And, if you’re exercising and building muscle, you’re building a body that requires more fuel and more calories to keep you going. Protein is a big part of this, but you also need some carbs for the energy if you put in a lot of work– that’s why a 100% Keto diet isn’t good for my endurance athlete lifestyle, although I like the idea. However, I can use low-carb, Keto-friendly recipes (like this) on my endurance recovery days or when I’m strictly lifting at the gym and then boost with some non-processed carbs (any fruit is my favorite choice) for those days when I’m running long.
Child, fetch me a Low-Carb Turkey Club Lettuce Wrap nooooooowwwwww (please).
Not to mention, a grade-schoolercould make this lunch by him or herself (on those summer days when you don’t want to get out of your poolside chaise lounge).
If I’m at home, I often eat my Low-Carb Turkey Club Lettuce Wrap with Ranch out of a bowl and get kinda lazy about the “wrapping.” It all tastes the same, right?!
But, if I’m packing lunch for post-gym, a picnic, or just making ahead, I like to roll up the lettuce leaves tightly. I’ve found that a sheet of parchment or wax paper works great – just set the lettuce leaves down on one end, top with fillings, add a little dressing down the middle (I like the Lite Ranch from Litehouse Foods) and then start tightly rolling up. Twist off the ends to secure contents in place and then to eat, just snip through the center with kitchen shears.
Make the breakup with bread easier and tastier with these simple, simply yummy Turkey Avocado Club Lettuce Wraps. Great for lunch at your desk, on a picnic and pool -- make ahead, totally portable!
- 2 large green lettuce leaves, ribs cut out in "v" shape
- 2 slices tomato
- 1/2 cup fresh chopped spinach
- 2 ounces deli roasted turkey lunch meat I use a no preservative, no nitrate brand
- 2 slices bacon, cooked crispy
- 1/4 medium avocado, sliced
- 2 tablespoons ranch dressing of your choice
-
Lay out lettuce leaves, overlapping. In middle add slices of turkey out flat and top with chopped spinach, tomato slices, avocado slices and bacon (slice or crumbled).
-
Add dressing to middle of these fillings or fill in a take-along condiment cup for dipping.
-
Eat "as-is" or roll up to go on the by building on parchment or wax paper, tightly rolling up lengthwise and twisting of ends to secure contents.
