5 Protein Packed Snacks + Enlightened #Giveaway

Giveaway for ENLIGHTENED Crisps and ENLIGHTENED Ice Cream at the end of post, read on!

Eating snacks with protein can help keep the "hangries" away.

Whether filling your tank before a gym session or taking a snack break to ward off the dreaded midday energy lull, small, protein-rich meals are tasty ways to keep on going—and going. You’ve been hearing me talk about the protein challenge and aiming for 20 – 30 grams of protein per meal or snack.  It’s not that fruit, whole grains, or even the occasional indulgent treat don’t have a place in the well-rounded diet, but, gram-for-gram and ounce-for-ounce, protein-packed snacks provide longer-lasting energy than their burn-and-crash high-carbohydrate counterparts.

In addition to regulating blood sugar and moderating hunger, protein-rich snacks play a vital role in the recovery diet of an athlete. After an intense workout, race, or competition, it is imperative to top off taxed muscles with foods plentiful in protein. Well-timed protein intake employs amino acids to rebuild damaged muscle tissue while encouraging the hormone activity needed to stimulate muscle growth. A study published in American Journal of Clinical Nutrition suggests that 20 grams is the optimal amount of post-workout protein to maximize muscle growth.

Power of Protein InfographicThis focus on protein isn’t strictly for strength athletes. While runners, cyclists, and other endurance athletes have long known that eating carbohydrates during and immediately preceding hard efforts helps to replenish energy-providing glycogen stores, newer research shows that combining these carbohydrates with a wallop of protein nearly doubles the insulin response—meaning even more energy can be stored in the body along with all the muscle-making perks. The general wisdom from sports nutritionists is to consume a 1:3 to 1:4 protein-to-carbohydrate mini-meal within a 30-minute window of exercise.

So, to help you pump up your training diet, I’m sharing five of my favorite protein-packed snacks—one for every day of the workweek. Each option is easy to make, free of meat-based protein, and completely portable. Just toss one of these snacks into your gym bag, backpack, or mini-cooler and get after it. There’s a hearty, healthy, and protein-packed reward at the end of your efforts. Your taste buds will thank me while your muscles will thank you.

Enlightened Ice Cream makes a sensible dessert - it's low in sugar , under 100 calories and has extra protein!

Often, there aren’t enough minutes in the day to make a homemade snack. That’s why I have a few go-to food brands that share my mindset for healthy, tasty and protein-rich snacking. One favorite is Enlightened from Beyond Better Foods – they don’t just make snacks that are better in a “less bad for you” way, but actually ARE better. Their ice cream bars found ME one day when I was walking down the frozen aisle – normally I eat Greek yogurt sweetened with stevia for dessert to get the extra protein and skip out on the sugar, but the creamy and delicious ENLIGHTENED Ice Cream makes a sensible treat – each flavor (think Fudge, Coffee, Chocolate Peanut Butter Swirl) has under 100 calories and just 3 -5g sugar and 7 – 8g protein. I just finished off a box of Sea Salt Caramel bars and they were pure heaven.

Enlightened Crisps are made from broad beans for healthy protein.Just recently, the company put out a new snack item that I’m really excited about – ENLIGHTENED Crisps.  These savory, crunchy morsels are actually made from broad beans (aka – the fava bean which is actually a legume) and come in awesome flavors like Sriracha, Garlic Onion, Sea Salt, BBQ and more. Each bag has just 100 calories, lots of fiber and 7g protein – plus they are free of gluten and soy. You can’t go wrong eating beans (well, unless you go overboard)! Beans are loaded with fiber, folate and magnesium, and research has shown these legumes can actually help lower cholesterol and reduce the risk of certain cancers.

So, who’s ready for some ENLIGHTENED snacks?! Five of my lucky readers will win a sample pack of the ENLIGHTENED Crips as well as free product coupons to pick up ENLIGHTENED Ice Cream at your local market. Just enter in the Rafflecopter App below!

FAST! Beef Tenderloin and Tomato Pizza with Ancho Crema

Use leftover beef steak, fresh tomatoes and naan bread to make a easy weeknight meal.

I’d hard to imagine there would EVER be beef tenderloin left on the platter at my house – but there was this weekend! That’s because I cooked an extra hunk so that we’d have “leftovers on purpose” for a couple easy weeknight recipes that were floating around in my head. I had to threaten all the boys to keep their dirty meat-stealing mitts of this extra steak, and once they saw the More-eo Blondie Bars I made for dessert, they had moved on to new conquests.

This southwestern-inspired naan pizza recipe uses leftover steak dressed up with fresh tomatoes and an creamy ancho pepper drizzle.

So, the great thing about this Beef Tenderloin & Tomato Pizza with Ancho Crema is that you can use thin slices of any leftover steak like top sirloin, ribeye, flat iron — or even fajita meat! I also used naan bread for “let’s make dinner in five minutes” convenience, but feel free to do a homemade traditional crust or even a cauliflower crust if you prefer.

Tomatoes are an abundant source of lycopene, vitamin B6 and other important nutrients. The toppings are fresh and healthy with a southwestern spin – cilantro, queso fresco, hatch green chilies and a trifecta of colorful tomatoes. Red, yellow and orange – they were almost too beautiful to eat!  But gobble them up because I know how great the abundance of lycopene and vitamin B6 found in tomatoes is for athletes — you can learn more on the topic of tomatoes and working out in a post I wrote for CorePower.com.

Beef Tenderloin & Tomato Pizza with Ancho Crema Recipe

  • 4 8-inch diameter pieces of naan bread
  • 2 tablespoons olive oil
  • 1 teaspoon garlic salt
  • 1 teaspoon dried red pepper flakes
  • 1 medium yellow tomato, seeded and sliced thinly
  • 1 medium red tomato, seeded and sliced thinly
  • 1 medium orange tomato, seeded and sliced thinly
  • ½ cup chopped fire-roasted hatch green chilies (or can use canned)
  • 1 cup of crumbled queso freco
  • 1 tablespoon minced fresh cilantro
  • 1 8-ounce pre-cooked beef tenderloin steak (or other steak) sliced thinly across grain.
  •  1/3 cup Greek yogurt
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground ancho chili powder
  • Avocado for garnish
  1. Preheat oven to 400 F degrees.
  2. Lay naan bread on a baking sheet and brush tops with olive oil. Sprinkle with the garlic salt and pepper flakes.
  3. Layer each crust with tomato slices and green chilies. Sprinkle with queso fresco cheese.
  4. Bake in oven for approximately 10 minutes or until edges of bread turning golden brown and cheese beginning to bubble.
  5. Remove from oven and top with thinly sliced steak that is room temperature or has been lightly warmed — taking care not to over reheat it and make tough.
  6. To make crema, whisk together Greek yogurt, Worcestershire sauce and chili powder in small bowl. Drizzle on top of pizzas. Sprinkle with cilantro. Serve with avocado, if desired. Serves 4.

Kickstart Morning with Coconut Chai Smoothie Bowl

This post is sponsored by Almond Breeze Almondmilk.

Coconut Chai Smoothie Bowl makes a healthy breakfast or dessert dressed up with cacao nibs, hemp seeds and strawberries.

Slurping your smoothie from a straw is so last year. The tastiest trend in town is to “eat” your smoothie in a bowl with a spoon! Not only do chains like Jamba Juice offer these frozen, fruity and fiberous concoctions but smoothie bowls are blowing up social media – just search the hashtag #smoothiebowl and you’ll get over 85K results.

One of the benefits of smoothie bowls (other than getting a ton of nutrition in one easy-to-make meal) is the artistic license. I don’t know about you, but I really enjoy make my food pretty – Mother Nature has given us so many colorful and amazingly delicious ingredients to work with. Instead of throwing all your smoothie goodies into the blender, the key to a smoothie bowl is to make a thick base smoothie and then add the remainder of your fruits, whole grains, seeds and such to the top.

Almond Coconut Milk from Almond Breeze makes a healthy, creamy base for your smoothie bowls and blended beverages.

Unsweetened Almond Coconut Milk from Almond Breeze creates a creamy base for any smoothie bowl or blended beverage. Made from real almonds and coconutmilk, this alternative to diary milk contains medium chain fatty acids; is lactose, soy and gluten-free; is an excellent source of calcium; and works with vegan and kosher diets. I also love how it has no added sugar and only 45 calories per one-cup serving.  Another great thing – Unsweetened Almond Coconut Milk from Almond Breeze is available in a shelf-stable version which means that I can keep my pantry stocked for last-minute meal making.

I appreciate how I can keep shelf-stable Almond Breeze in the pantry, on hand for when cravings strike!

If you love the exotic spices of cha (like cardamom, cinnamon, star anise, cloves and more), but need something more than just of a cup of tea in the morning, by Coconut Chai Smoothie Bowl is the perfect way to get your crave on while kick-starting the day with a little caffeine. I topped my bowl with hemp seeds, cacao nibs and strawberries, but feel free to beautify your bowl any way you see fit.

Coconut Chia Smoothie Bowl makes a quick, easy and healthy breakfast or post-workout snack.

In addition to breakfast, I’ve been digging into Coconut Chai Smoothie Bowls for a post-workout snack and healthy dessert after dinner – use decaff tea instead. Rainbow Eats! Cumin Seared Scallops with Strawberry, Jicama and Jalapeno Confetti Salad

Scallops dusted with cumin and quickly pan seared make a quick and healthy dinner -- especially atop Strawberry, Jicama and Jalapeno Confetti Salad

My fresh and fit recipe for Strawberry, Jicama & Jalapeno Confetti Salad is truly an edible rainbow. Strawberries, papaya, pineapple, jalapenos, cilantro and jicama mingle together with a limey dressing – it’s so utterly utopian, the chances of seeing a unicorn run by increase with every spoonful.

Strawberry, Jicama and Jalapeno Confetti Salad is so colorful and healthy!

Of course, you could eat this fruit salad alone, but it’s also amazing as a salsa on fish tacos – or with my dinner tonight, Cumin-dusted Seared Sea Scallops. Scallops are so easy to prepare, it’s almost ridiculous. Get your oiled skillet really hot, pat on some spices and then sear for just a couple minutes each side is turning crispy golden brown and the flesh is still just slightly translucent in the center. Pan to plate in less than five minutes!

Cumin-Dusted Seared Sea Scallops are so quick and easy to make -- plus very healthy!

Sea Scallops from Sizzle FishI’m a big fan of the scallops from Sizzle Fish.  Plump, natural sea scallops from the North Atlantic (flash- frozen and packaged in individual serving packs of 4 scallops) are shipped right to my door! No shopping in a busy supermarket and five minutes of cooking – it’s the easiest way ever to get your muscle-making protein.

6 Allergy Busting Tips for Spring Outdoor Exercise and Running

Have a #SneezeFreeSpring and enjoy the great outdoors by following simple tips to lessen allergy symtpons.Springtime is one of the most enjoyable times of the year to exercise outside. After months of being trapped indoors, feeling the warm sunshine on my skin and enjoying Mother Nature’s endless and colorful beauty (especially wildflowers on the trail) makes me want to never want to come home from my run. That is, until the sneezing and sniffling starts. But, this year, I’m having a #SneezeFreeSpring thanks to the advice and help of MinuteClinic at CVS Pharmacy.  More than 35 million people suffer from seasonal allergies and often confuse the symptoms with those of a common cold – you can find out more about seasonal allergies, their causes and treatments here.

Spring Season Allergy Tips for Exercise and Running

6 Allergy-Busting Tips for Spring Outdoor Exercise

Avoid Mid-Day Exercise:  You may have to reschedule your “runch” (running lunch break) to morning or evening until spring allergy season passes. Experts say that most pollen in urban areas hits peak levels around noon, or shortly thereafter. Also, be warned, pollen is going to be peskiest on warm, dry and breezy days.

Wear Protective Gear:  Sporting a billed cap, wrap-around sunglasses and even a bandana over your nose and mouth (if you dare), can hinder the assault of some pollen. Opt for a full cap rather than a visor as this will help keep pollen out of your hair.

Wash Off Afterward:  Although you’ve already been exposed to allergens exercising, it’s always a good idea to wash away the allergen offenders on your skin before they agitate you further (and infiltrate your carpet and furnishings). Also, don’t forget to wash hair and skip the use of hair styling products which only further attract floating particles in the air. So, hop in the shower ASAP after exercise, or if that’s not possible, at least rise off arms and legs down with a garden hose until you get home.

Change Into Clean Stuff: Don’t hang out in your sweaty exercise clothes, the moisture traps allergens like a magnet. Change into clean clothes and toss your used ones into the wash – definitely don’t recycle them for a second wear! Same goes for your bed sheets, change them at least once a week to lessen allergy symptoms.

Experiment with Natural Remedies: Some say local honey has been linked to a reduction in seasonal allergies. It can’t hurt to try, especially considering the carbohydrates in honey will provide you with some extra energy to fuel your workout. You also might look into Quercinten, an antioxidant found in many foods like red onions, capers, cranberries and more – you can kick up the concentration and histamine-blocking benefit by taking a supplement.  Check with your doctor.

Consider Allergy Medications: Even with every precaution, allergy symptoms may persist. Don’t let allergens win and keep you stuck indoors. Visit with an allergist or your medical professional about over-the-counter and prescription medications that can keep you kicking asphalt outdoors all year long.   You can even drop in at your convenience to talk to one of the nurse practitioners or physicians assistants at MinuteClinic who can recommend the right over-the-counter medications and write prescriptions when medically appropriate.

MinuteClinic, a no-appointment-needed, walk-in service at CVS Pharmacy, offers quality medical care on your schedule – plus most major insurances are accepted.
