Ingredients
  • 3 ounces zucchini sliced into very thin discs
  • ½ cup 2% cottage cheese
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • 2/3 cup chopped fresh spinach
  • ¼ cup marinara sauce
  • 3 small button mushrooms sliced thin
  • 5 grape tomatoes chopped
  • 2 tbsp shredded mozzarella
  • Optional: chopped fresh basil
Instructions
  1. Take sliced zucchini and blot with paper towel to remove any excess moisture. Set aside.
  2. Mix Italian seasoning and garlic powder into cottage cheese until combined.
  3. In minimum 16-ounce mug (wider better than tall and skinny mug), layer 1/3 of zucchini slices in bottom. Top with about 3 tbsp cottage cheese mixture, spread to cover zucchini. Next add half of spinach to this layer. Then sliced mushrooms and about 2 tbsp marinara.
  4. Add another layer of zucchini (another 1/3 portion) and top with 3 tbsp cottage cheese mixture, then more mushrooms and marinara
  5. Top with zucchini one last time, using up remainder, and top with the remaining cottage cheese. Sprinkle with shredded mozzarella and top with tomatoes.
  6. Microwave on high for 1 minute, then let rest 15 seconds. Microwave 1 more minute (or until hot and bubbling through, then let rest for 1 minute before eating. Top with fresh basil if desired.

This 10-Minute Pomegranate Korean Beef BBQ recipe is made with a Kevin’s Natural Foods meal pouch that includes sous vide cooked beef and Bulgogi-style sauce. I put my own spin on the already delicious meal by adding a little pomegranate juice and ginger to the sauce and adding pomegranate arils, spinach, and pistachios. SO DARN EASY and it makes an easy-peasy, beautiful, flavorful and festive holiday meal (which also makes dinner any day of the year). I served this pomegranate bulgogi inspiration on rice (use a frozen rice pouch to keep it quick – I actually batch cook my rice and grains and freeze in the portions I need to save time and $$).  But, if you’re not into rice, this festive bulgogi recipe is also yummy on cauliflower rice, smashed sweet potatoes, or with veggie noodles of your choice.

Beef is 100-percent pasture-raised, grass-fed, and grass-finished and cook in sous-vide method, so it stays super tender and juicy.

Real talk: I have been eating and enjoying the chicken meals from Kevin’s for a while but have shied away from trying a beef meal kit. Why? Succulent beef tips with spinach in a slightly sweet, slightly spicy sauce that is bejeweled with pomegranate arils and pistachios! It's festive, flavorful and a fit for your clean eating meal.

Servings: 3 servings
Ingredients
  • 1 pouch Korean Beef BBQ from Kevin’s Natural Foods
  • 2 teaspoons olive oil
  • 1 teaspoon finely minced or grated ginger
  • 2 tablespoons 100% pomegranate juice *hack: if using a ready-to-eat tub of arils, just drain off the juice for this use.
  • 3 cups chopped fresh baby spinach
  • 1/3 cup pomegranate arils
  • 3 scallions both white bulbs and greens finely sliced
  • 3 tablespoons chopped pistachios
  • 3 cups pre-cooked rice white, brown, cauliflower rice, etc
Instructions
  1. Open sous-vide pouch of beef and drain of broth from beef tips.
  2. In medium skillet, heat olive oil over medium high; add beef tips and stir-fry for 2 minutes.
  3. Reduce heat to medium and add ginger, pomegranate juice, and SAUCE POUCH from meal kit, and simmer uncovered for 2 minutes, until slightly reduced.
  4. Stir in baby spinach and pomegranate arils and stir around for 30 to 60 seconds until spinach is par-wilted.
  5. Remove from heat and sprinkle with pistachios. Serve with rice or other desired side.
  6. Serves 3.

  • 1 package Kevin’s Natural Foods Thai-style Coconut Chicken
  • 2 teaspoons olive oil
  • 1 cup sliced Baby Bella mushrooms
  • 1 cup cauliflower rice

  • 1 cup coconut cream from can
  • 2 tablespoons fresh lime juice about 1 lime

Instructions
  1. Add olive oil to soup pot and bring to heat over medium-high. Add mushrooms and cauliflower rice, sauté, stirring frequently, for 3 to 4 minutes until softened; add minced garlic and sauté for 1 additional minute.
  2. Open cold sous vide bag of chicken; chop into bite sized pieces. Add to soup pot.
  3. Pour chicken broth and coconut cream into pot and bring just to a boil, about 3 to 4 minutes. Add contents of sauce pack into soup. Reduce heat and simmer for 1 minutes longer.
  4. Remove from heat; squeeze in lime juice. Stir in chopped scallions and cilantro.

True. I did see this viral egg and quesadilla hack on TikTok. But in reality, I’ve been making and eating egg quesadillas for decades. DECADES!

Growing up in the 70s, when it was my dad’s turn to cook a meal, he would usually make us an omelet or quesadilla. This was back in the day before dads really cooked OR people even knew what a quesadilla was. So, I thought he was pretty cool!  

It was only a matter of time before the eggs met up with the cheese and tortilla. Honestly, it’s a match made in heaven. As my taste buds grew up, my love for omelets and quesadillas didn’t wane. Total comfort food to me! I started adding a variety of veggies to jazz it up and make a little more balanced meal – that works for breakfast, lunch OR dinner, by the way!

Spinach and mushroom are a classic veggie combo and one of my favorites. Something about mushrooms just plays so well with eggs – it’s a plant-based umami experience. If preferred, the veggies can be swapped out for others that soften up nice and quick in a sauté pan. Think of onions, leeks, grape tomatoes, bell peppers, shaved Brussels sprouts or cabbage, chopped kale, and such.

The two eggs, an ounce of cheese and a nine-inch tortilla offer about 22 to 25g protein (even more if you can find a protein tortilla). But, if you want even a bigger protein bump, add a small handful of shredded chicken, beef or diced ham. This quesadilla hack is very adaptable to your custom desires.

Mushroom Swiss Omelet Quesadilla

Omelet meets quesadilla in this quick and easy egg recipe that is satisfying for any meal of the day — breakfast, lunch or dinner!

Ingredients
  • 2 large eggs
  • 1 tablespoon water
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 teaspoon olive oil
  • ½ cup slice mushrooms
  • ½ cup chopped fresh spinach
  • 1 to 2 oz grated Swiss cheese
  • 1 large 9” to 10” tortilla sized to fit your skillet
  • Garnish: Avocado slices
Instructions
  1. Whisk two eggs, water, salt and pepper in bowl; set aside.
  2. Bring 9 to 10-inch non-stick skillet up to medium heat; add oil.
  3. Add mushrooms to skillet and saute for about 2 to 3 minutes until softened. Add spinach and stir around for another 30 seconds or until wilted a bit. Spread out evenly in bottom of pan.
  4. Pour whisked egg over vegetables, tilting pan and swirling egg a bit to cover entire skillet.
  5. Cook for about 2 minutes (without stirring) until almost set; just very lightly wet still on top.
  6. Top with half the cheese and tortilla.
  7. Carefully shimmy spatula under egg mixture to flip entire thing tortilla side down.
  8. Add remaining cheese to top egg side and cook an additional 1 minute.
  9. Flip tortilla in half (for a half-circle) and cook for another 1 minute on each side until tortilla golden brown.
  10. Cut in three wedges and serve with avocado.
