Skinny Mama Beef & Veggie Manicotti Recipe Makeover

Beef & Veggie Manicotti Pasta

I’m always looking for a way to lighten comfort food because, I’ll admit it; emotional eating is a friend of mine. Whether celebrating or wallowing in sorrows, getting my mouth around a good meal always makes things better.  Everyone at my house agrees that pasta is a go-to comfort food; spaghetti, macaroni and cheese, raviolis – you get the picture! This carb and cheese fest doesn’t really fit my higher protein day-to-day diet, typically if we’re doing spaghetti, I just take a taste of the noodles and a heaping helping of the sauce.

Man, oh man; wouldn’t it be comforting to have some manicotti for dinner tonight? These long tubes of pasta stuffed with meat and cheese — the word is derived from an Italian diminutive for “sleeve,” which is exactly what they are! At restaurants, I’ve had “manicotti” wrapped in zucchini and eggplant instead of a noodle, but I didn’t want to scare the kids off immediately. Instead, I stuck with a traditional recipe and made some healthy swaps. For example, I chopped up zucchini and other veggies into almost a mince so they would be discretely hanging out in the filling – like, “who me, a piece of squash? Ya, no big deal.”  I also substituted the heavy ricotta cheese with low-fat cottage cheese and kept the mozzarella to a minimum –just a skosh in the filling and a bit sprinkled on top. And, of course, our family favorite lean ground beef (more nutritious than ground turkey, people) was the meaty, mouthwatering source of protein.

The recipe makeover turned out scrumptious. The kids ate some unchartered-territory vegetables (red bell pepper) with nary a complaint – even from my youngest who likes to share his disgusted opinion about everything!  The other beauty of this family meal is that you can make ahead – or double the batch and keep one in the freezer for next month!

Healthy Manicotti

Skinny Mama Beef & Veggie Manicotti Recipe

  • 1 8-ounce package manicotti (14 tubes)
  • 1 pound lean ground beef sirloin
  • 1 teaspoon olive oil
  • 1 ½ cups finely chopped veggies of your choice (I used sweet onion, red onion, red bell pepper, and zucchini)
  • 1 teaspoon minced garlic
  • 1 tablespoon fresh basil, minced
  • 1 tablespoon fresh oregano, minced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 16 ounces low-fat cottage cheese*
  • 1 egg, lightly whisked
  • 6 ounces low-fat shredded mozzarella cheese (divided)
  • 1 16-ounce jar marinara sauce
  • Garnish: red bell pepper rings.
  1. In large pot, bring water to boil. Carefully add manicotti tubes and boil for approximately 8 minutes, or until al dente. Drain and rinse with cool water and set aside.
  2. Meanwhile, brown ground beef in skillet over medium heat, drain off any liquid. Set beef aside and add olive oil to skillet. Sauté chopped veggies until soft-crisp, approximately 3 minutes. Add in garlic, basil, oregano, salt and pepper and continue to cook for 1 more minute, stirring continuously.
  3. In large bowl, add cooked ground beef, sautéed veggies, 16 ounces cottage cheese, whisked egg, and 3 ounces of shredded mozzarella cheese.
  4. Preheat oven to 350 F degrees. Spread approximately 2/3 cup sauce in bottom of 9”x13” baking dish.  Carefully, stuff each tube with beef and cheese mixture using a teaspoon. Line up stuffed manicotti in baking dish. If any mixture remains, spoon it into sides of baking dish.
  5. Top with remaining marinara sauce and sprinkle with remaining cheese. Garnish with red bell pepper rings, if desired.
  6. Bake in 350 F degree oven for about 40 minutes, or until heated through and cheese is bubbling on top.Serves 7 (2 each)

Since this was a makeover recipe, I ran the nutrition information — my version cuts the calories in half with 326 calories per a two manicotti serving versus 668 for traditional manicotti! Plus, 12 grams of fat is totally reasonable for a recipe so gooey and comforting. Plus, with everything I’ve learned about protein consumption, the 29 grams of protein is in the optimal range amount for any given meal.

If you’re using onions as one of your veggies in this recipe (or any recipe), check out this video from Cooking Light that shows how to easily chop an onion. I never thought to slice an onion lengthwise first – genius!  Now, my tip on chopping onions is to dip your knife in water with every few slices – this will cut down on the noxious fumes that make eyes water. Yay, no more crying!

Cauliflower and CrossFit

Okay, doing this whole 2014 CrossFit Games Open has been a real challenge for this runner who likes to cherry pick her WODs. I’m the one who won’t do the heavy squats because “I’m saving my legs for a race” or substitutes pull-ups for muscle-ups because “they are more fun and I can actually do them.” I’m made it through four of the open workouts with just one left this weekend, and let me tell you every weakness has been exposed –but my spirit hasn’t been broken.  For every double-under I tripped over and weighted lift I buckled under, I made up for with pretty-darn good abilities on the bar and lots of endurance. Really the failures (although I really can’t call them that) only put a burr in my britches to become proficient in the skill.  Check back next week for a full report on the whole experience.

Now onto the food! If you’ve been on Pinterest or crossed paths with a Paleo food fanatic, you’ll well aware that the once neglected cauliflower has been elevated to king of the cruciferous vegetables.  This big white vegetable is no longer looked upon as your grandma’s cauliflower, boiled and bland. Today you’ll find smashed cauliflower, riced cauliflower, cauliflower in muffins, soups and curries – and even cauliflower pizza crust.

My kids think cauliflower looks like a human brain and I tell them that’s because it’s a really smart food to put on their plates. High in dietary fiber and low in calories, this versatile veggie is packed with beneficial vitamins (including vitamin C, vitamin K and manganese) that have antioxidant and anti-inflammatory properties.

While you can get crazy with cauliflower, sometimes simple healthy recipes are the best. My recipe for “Oh Yes” Oven-Roasted Cauliflower will be gobbled up by everyone in the family, even the pickiest kids! Creamy and slightly sweet when roasted, my husband took a bite and exclaimed about it’s deceiving decadence — “it tastes like butter!”

“Oh Yes” Oven-Roasted Cauliflower Recipe

  • 1 large head cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 tablespoon garlic salt
  • ¼ cup fresh grated Parmesan cheese
  • 1 tablespoon fresh chopped parsley
  1. Preheat oven to 425 F degrees.
  2. Remove outer leaves from head and thoroughly wash cauliflower.  Use a knife and/or hands to break up cauliflower into approximate 1-inch pieces.
  3. Add florets into bowl and drizzle with olive oil. Sprinkle with chili powder and garlic salt; toss to distribute evenly.
  4. Place cauliflower on large rimmed baking sheet. Bake at 425 F degrees for 20 – 25 minutes, stirring once or twice, until beginning to turn light brown.
  5. Sprinkle with cheese and return to oven for 2 minutes. Remove from oven, sprinkle with parsley.

Serves 4.

Simple Green Smoothie Starts St. Patrick’s Day Feast

Don’t be afraid of the green! It’s St. Patrick’s Day (well, almost) and everything should be tinted with the color of Emerald Isle. But, who wants the yucky chemicals in food dyes that turn your beer –err, I mean, smoothie green?! Simple and straightforward, made with only the freshest and most natural of ingredients in all of the lands, you’ll start the day off right fueled with the vitamins and minerals (lots of iron!) from spinach and healthy fats from avocado and hemp hearts. In addition to adding a little crunchy variety to the top of this creamy smoothie, the hemp packs a punch of protein and nutrients – they’re powerful little seeds and probably what you’ll actually find hidden in the pot at the end of a rainbow!

Simply Green Smoothie Recipe

  • 10 ounces unsweetened almond milk
  • ½ small avocado
  • 1 handful spinach (frozen okay)
  • Vanilla stevia, if desired
  • Ice, if needed
  • 1 tablespoon raw, shelled hemp seed (hearts)

Blend almond milk, avocado and spinach in blender. If you like a sweeter smoothie, add a couple drops of vanilla Stevia. If needed, add ice to achieve desired consistency – but, it may not be needed, especially if you used frozen spinach. Top with hemp seed. Serves 1.

This healthy smoothie recipe will be breakfast for all the lucky leprechauns in my house — it will be a nice change of pace after drinking red beet smoothies last week! Cherry Crisp Smoothie Recipe & Achieved a Goal!

I cannot tell a lie, I just love cherries in every form and fashion, including straight-from-the-tree fresh to nestled collectively under a layer of pie lattice and vanilla ice cream. Cherries are a super fruit and studies are suggesting that tart cherries have anti-inflammatory properties, can reduce pain from chronic conditions and even help ease muscle and joint aches after exercise. Tart cherries rank 14 in the top 50 foods for highest antioxidant content per serving size – this is more than other popular powerhouses such as red wine and chocolate. A busy-morning breakfast is anything but the pits when you’ve got the ingredients to make my Cherry Crisp Smoothie. I like to buy a big bag of frozen cherries at Costco so I’ll always have my beloved berries ready – throw in some ground oats and a vanilla protein drink (check out Core Power) and this protein smoothie will be ready in a minute or less.

Cherry Crisp Smoothie Recipe

  • 2 tablespoons rolled oats
  • 10 ounces vanilla protein shake (like Core Power)
  • 2 ounces cherry juice
  • 15 pitted, frozen cherries
  • 1 drop vanilla liquid Stevia
  • Ice, as needed

Place oats in a blender and pulse until ground into a powder. Add protein shake, cherry juice, frozen cherries, Stevia and a few ice cubes. Blend until smooth, adding more ice until desired consistency is achieved. Serves 1.

oh-cherry-almond-crisp-lThis smoothie is very satisfying and packed with protein, but if you are looking for the real deal dessert, Cooking Light has a delicious recipe for Cherry Almond Crisp. What I love about making “crisps” is that you don’t have to worry about a fussy, fat-laden pie crust – just a sprinkling of grains and ground nuts on top of fruit works wonders! Plus, a little dollop of ice cream or Greek yogurt adds the perfect balance.

 

So, all this talk about cherries has me thinking about “the cherry on top” of my workout week. And, that would be making some documented progress on my Muscle Up skill in CrossFit. For at least a year and a half (off and on), I’ve been working on this most-elusive move and finally, finally made it up to the top of the bar (3x). What I lack in grace, I make up for in grit; I was NOT going home until I hustled my way up there. Still lots of practice needed though!
