Balsamic Honey Chicken – 3 Easy Recipes + Slow Cooker #Giveaway

Now that we’re well into the back-to-school routine, it’s time to kick back and enjoy the blessings of fall – however these are busy blessings that require chauffeuring, chaperoning and cheering from the stands. So, how am I supposed to provide a hot home cooked meal and gather the family round the table with everyone coming and going and looking at me for a ride? And, when I’m rewarded with a couple rare hours to take a break from mom mode, I’m often finishing up a work project or squeezing in a run  — typically cooking dinner is not at the top of my priority list, even as a food blogger!

You parents with equally over-the-top schedules already know the two lifesaving words I’m going to say – SLOW COOKER! It was only just a few years ago that I fell in love with slow cooking, my prior history with the method was only that of an innocent child dutifully eating her dinner – I have some not-so-fond memories of old-school slow cooker meals. Mom, I know you’re reading this and it wasn’t you, I think mushy carrots and fatty meats were just culinary trends of the 70s.

One of my favorite recent creations is a side dish recipe for Slow Cooker Caesar Artichokes. Side dishes, desserts, beverages – all these things can be made in a slow cooker. But, probably the most convenient slow cooker recipe is to make a big batch of beef, chicken or pork that can be rationed out over the week or frozen for later in the month. Since I’m a big fan of doing some global variation of chuck roast in the slow cooker (insane flavor and fall-apart fork tender), I thought I’d branch out and do some chicken breast  — enough to last me through a few recipes for my family of 5!

Needless to say, I was pretty excited that Hamilton Beach sent me the Set ‘n Forget® 6 Qt. Programmable Slow Cooker With Spoon/Lid – the stainless-steel beauty is a real workhorse in the kitchen that will cook up ever your biggest batches in hands-free, stress-free style. It’s really helpful that this particular model has three modes — program, probe and manual. The “program mode” is super convenient for those SUPER busy days – just set the cook time and then when it’s up, the slower cooker automatically shifts over to warm.  To avoid overcooking, I really appreciate the “probe mode” – here you stick a metal probe into the thickest part of a roast or other hunk of meat and, once the internal temperature you’ve indicated has been reached, it switches to warm.

Do you like to bring hot meals to holiday parties or pot luck gatherings? Another useful feature of this slow cooker is that it has travel-friendly clips that lock down the lid so you don’t end up with a big batch of chili all over your car. Slow Cooker Balsamic Honey Chicken Recipe

  • 5 pounds boneless, skinless chicken breast
  • 1 cup chopped sweet onion (like 1015 or Vidalia)
  • 2 teaspoons dried thyme
  • 3/4 cup chicken broth
  • 1 ½ cup balsamic vinegar (don’t use your best)
  • 1 cup ketchup
  • 1/3 cup honey
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Sriracha (this can be omitted if you don’t want spicy)
  • 1 tablespoon minced garlic
  • 1 teaspoon ground black pepper
  • ½ teaspoon salt
  1.  Place chicken breasts in bottom of 6-quart slow cooker; cut into pieces if needed. Cover chicken with chopped onion
  2. In medium bowl, whisk together broth, vinegar, ketchup, honey, Worcestershire, sriracha, garlic, pepper and salt. Pour over chicken in slow cooker.
  3. Cover and cook on low for 9 – 10 hours or high for 5 – 6 hours.
  4. Transfer chicken breasts out of liquid and place on rimmed baking sheet. Let cool for 10 minutes and then shred with fingers or fork.
  5. Take 4 cups of cooking liquid (discarding any fat) and place in medium sauce pan. Bring to a boil and simmer uncovered for approximately 30 – 40 minutes or until volume reduced in half.
  6. Drizzle approximately ¾ cup sauce over shredded chicken and lightly toss. Reserve remaining in refrigerator for use in other recipes.
  7. To serve, serve between a bun or with one of the three recipes below. Leftovers may be kept in the refrigerator for up to 3 days or in the freezer for 3 months. Serves 20.

Balsamic Honey Chicken BBQ Baked Potato Recipe

  • 1 lb. cooked, shredded Honey Balsamic Chicken (recipe above)
  • 4 large russet potatoes
  • ½ cup BBQ sauce (may use reserved sauce from chicken recipe)
  • Suggested toppings: pico de gallo, fresh cilantro leaves and queso fresco crumbles
  1.  Bake potatoes in microwave or oven until steaming and fluffy.
  2. Slice each potato lengthwise (without cutting through bottom) and top with ¼ pound warm shredded chicken.
  3. Drizzle with bbq sauce and favorite toppings.Serves 4.

Balsamic Honey Chicken with Fig & Snap Pea Salad Recipe 

  • 1 lb. cooked, shredded Honey Balsamic Chicken (recipe above)
  • 6 ounces baby spring mix lettuce
  • ½ pound figs, quartered
  • 4 ounces sugar snap peas, halved lengthwise
  • 2 ounces blue cheese crumbles

For dressing:

  •  1/4 cup reserved cooked down sauce from chicken recipe (or any BBQ sauce)
  • 1 tablespoon apple juice
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon chopped parsley
  • ½ teaspoon ground black pepper
  1. Divide lettuce among 4 plates and top each portion with ¼ pound shredded chicken.
  2. Add figs and sugar snaps; sprinkle with blue cheese
  3. In small bowl, whisk together sauce, juice, vinegar, oil, parsley and black pepper. Drizzle over salads. Serves 4.

It’s back-to-school time and my kids keep reminding me that brown-bagging can get a little boring! Turkey sandwiches, peanut butter sandwiches and hard-boiled eggs have been overdone at our house. OVER. DONE. Not only are my guys getting older and more adventurous in their tastes, I personally prefer my mid-day meal to be something anticipate with excitement rather than aversion

Leftover #Lunchspiration: While some detest a repeated, reheated performance of last night’s dinner, I live for leftovers – in fact, I often plan to make extra, just so I’ll have an encore!  Sometimes, I repurpose dinner leftovers into new creations such as transforming fajita beef strips into baked sweet potato toppings, putting pasta, rice or grain remnants into a soup or chopping up leftover veggies to eat cold in a salad. But, not trying to brag, some of my dinners are so yummy (like this broccolini and tenderloin) that the second showing is just as wonderful as the first!

Salad #Lunchspiration:  I may single-handedly eat more salad than anyone on the planet. It’s not because I’m trying to diet — I’m just a lettuce lover!  The kids always want me to buy Iceberg or Romaine lettuce, but I’m a huge fan of the Baby Spring Mix which features an assortment of darker greens – those darker lettuces are much more nutrient rich. But, eating a pile of lettuce day-in and day-out can get dull as a doorknob so I mix it up with a variety of unexpected toppings including any type of fresh or dried fruit (apples, oranges, blueberries, strawberries peaches or bananas). I dare you to put a banana on your salad – do it! Other creative ideas are leftover proteins (even scrambled eggs!), crushed up chips or Harvest Snaps in lieu of croutons, pan grilled or crisped cheese, and out-of-the-box dressings such as Sriracha mixed in plain yogurt, peanut butter mixed in orange juice or even cold spaghetti sauce. Seriously.

Yogurt #Lunchspiration:  Some might think that yogurt is only for breakfast or maybe a healthy dessert. But, I think it also makes a great start to any lunch – I use Greek yogurt because it’s packed with so much protein.  The richness and creaminess of Greek yogurt is something I don’t tire of quickly, especially when flavored with a few healthy toppings from a nearly endless array of options. Here are a few of my healthy yogurt toppings:

snap pea bento boSo, every lunch needs a little “crunch” for munching and Harvest Snaps is a favorite brand I like to feed my family. Watermelon Smoothies – Day 6 #LivingOnTheWedge

Come over to my house in the morning and you’ll hear the low hum of my blender – it seems to be in constant use!  My husband makes a smoothie to drink during his commute to work and I whip one up to cool down and rehydrate after a run. And, the kids love them for breakfast or as a healthy snack anytime of the day – especially when watermelon is an ingredient.  Everyone loves my recipe for this Watermelon Chia Seed Smoothie. It’s very good for you and very versatile – use the milk product of your choice and put in (or omit) protein powder based on your dietary needs.

Directions: Pour 6 ounces of milk (cow, soy, coconut or almond) into blender pitcher. Add 2 cups watermelon chunks and process until smooth. If desired, add one scoop (about 1/3 cup) vanilla protein powder and another 2 tablespoons of milk; process again until smooth.  Add 1 teaspoon chia sees and pulse a few times to mix through. Serves 1.

That being said, I’m no saint – a burger with fries or pizza with the works are two of my favorite ways to splurge. After all, as Julia Child once said, “All things in moderation including moderation”! Watermelon & Chocolate Recipes – Day 5 #LivingOnTheWedge

Watermelon and chocolate are two of my favorite sweet things to eat in this world. Summery sweetness meets indulgent richness – the unusual but oh-so perfect pairing was inevitable and why I didn’t think of it sooner is beyond me! So, without further ado, I’d like to introduce you to my Whirled Watermelon Chocolate Pie – one bite and I’m sure you will also become best friends forever with this duo of deliciousness. What a lip smacking way to end a summery meal, perhaps even after a grill-up of my recipe for Grilled Watermelon Shrimp Kebabs with Sweet Spicy Glaze

Whirled Watermelon Chocolate Pie Recipe

For Watermelon Filling:

  • 5 cups seedless watermelon cubes
  • ½ teaspoon liquid stevia
  • 2 packets unflavored gelatin
  • 1 tablespoon fresh lime juice
  • 2 large egg whites, at room temperature
  • 1 cup cold heavy cream
  • 1 teaspoon liquid stevia

For Chocolate Filling:

  • 1 cup semi-sweet or dark chocolate chips
  • 1 ½ cups heavy cream (divided)
  • 2 pre-made chocolate pie shells (8 – 9 inch diameter)

Directions:

  1. Add seeded watermelon to blender; use wooden spoon to mash it up and get juices releasing. Puree watermelon until as smooth as possible.
  2. Measure out 2 ¾ cups of watermelon puree; any remaining can be used for another purpose. Stir ½ teaspoon liquid stevia into watermelon puree.
  3. Pour ¼ cup of the juice in a large bowl and sprinkle with gelatin powder; let dissolve for 2 minutes.
  4. Add ½ cup of watermelon puree that has been heated in microwave for about 45 seconds (near boiling); whisk into bowl with gelatin.
  5. Mix in lime juice and the remaining 2 cups watermelon juice into the bowl; place in refrigerator for approximately 30 minutes.
  6. Using an electric mixer, beat the egg whites in a medium size bowl until stiff peaks form; set aside; clean and dry beaters.
  7. Beat the heavy cream in mixer until it holds soft peaks; add liquid stevia and beat for a few more seconds; refrigerate.
  8. When the watermelon mixture starts to firm up, add about one-quarter of the whipped cream and beat with electric mixer until smooth.
  9. Gently fold in beaten egg whites and remaining whipped cream with a large rubber spatula, breaking up any globs of whites or whipped cream.
  10. Transfer watermelon mixture to another bowl and return to refrigerator. Thoroughly wash and dry mixer bowl and whisk attachment to make chocolate filling.
  11. In microwave-safe bowl, melt chocolate chips and ½ cup of heavy cream by heating and stirring in 15 second intervals until smooth. Let cool for 10 minutes or until near room temperature.
  12. Add chocolate mixture and remaining 1 cup of heavy cream to mixing bowl and beat for approximately 2 minutes, until smooth.
  13. Ready the 2 chocolate pie shells. Spoon in ¼ of watermelon mixture into bottom of each. Next, spoon in “blobs” of the chocolate mixture. Repeat the watermelon and chocolate layers until pie is filled (should just be about 1 more set of layers).
  14. Use the tip of knife to create a swirled pattern. Loosely cover pies and freeze for at least 2 hours, or overnight. To serve, let partially thaw for 10 minutes and slice each pie into 8 pieces. Makes 2 pies (serves 16)!

By the way, please notice that this recipe makes TWO pies – if, for some unheard of reason, you are opposed to making TWO pies, just cut the amount of each ingredient in half. I also found that any leftover fillings make really good Frozen Watermelon Chocolate Pops – just pour into a frozen treat mold or paper cups.
