After a season of sugary, salty, greasy, and not-so-good-for-you good eats, many of us are looking for a nutrition reboot for the New Year. However, I think juicing is a FANTASTIC way for people to get an on-demand dose of wholesome fuel – especially those who don’t like fruits and vegetables or are too busy to prepare a home-cooked meal.  As for the fiber deficit, you can add the pulp from a juice machine (and there will be a lot of it) into the batter for pancakes, muffins and other baked goods – or even mix it into a soup or stir-fry. Add the pulp to whole grains and your system will be fiber-fortified and super (ahem) functional.

I’ve never owned a juicing machine before, so I was super excited when Hamilton Beach sent me a Big Mouth Pro Juice Extractor to test out. Cranberry Orange Ginger Relish & #StackandSnap Food Processor #Giveaway

Looking for an easy, healthy holiday side dish you can make CHOP, CHOP?! My recipe for Cranberry Orange Ginger Relish is a real winner that beats that nasty canned jelly stuff with a wallop of fresh, zingy flavor. Versions of this recipe have been served at my family’s Thanksgiving and Christmas celebrations for as long as I can remember – while Grandma used to dump in a cup of granulated sugar, I keep it lower carb by using Stevia instead.

Can you believe there are only four (FOUR!) ingredients in this simple recipe and it can be whipped up in two minutes or less with the help of a food processor. Seriously, all you do is wash the fruit, quarter the orange (leave skin on!) and peel the ginger, throw all the healthy ingredients along with a touch of Stevia (or you could use honey) into the food processor and pulse for about a minute. Viola, you’re done – it’ tastes even better the next day and can be used as a side salad, relish for lean proteins, topping for yogurt, or as a way to add some seasonal razzamatazz to your turkey sandwich or roast beef wrap. And, for those of you with dietary concerns, this fruit recipe is sugar-free, gluten-free, dairy-free and appropriate for Paleo, vegetarian, vegan and raw diets.

I was so excited to receive a brand spanking new Stack and Snap™ 10 Cup Food Processor from Hamilton Beach just in time for the holidays. My old one is almost 24 years old (wedding gift) and a pain in the butt to use – although, back then it was AWESOME! Today my new awesome is this good-looking Stack and Snap™ processor – it’s super easy to use thanks to a simple function guide that shows you which blade to use and which button to press. Raw Cranberry Orange Ginger Relish Recipe

  • 1 lb. package fresh cranberries
  • 1 large navel orange
  • 2-inch chunk of ginger root, peeled
  • 2 teaspoons powdered Stevia
  1. Rinse cranberries and drain in colendar.
  2. Wash and quarter orange, remove any seeds but leave peel on.
  3. Peel ginger with paring knife and cut into chunks.
  4. Place all ingredients in work bowl of processor and pulse intermittently for one minute, or until coarsely chopped.
  5. Serves 6 – 8.

Balsamic Honey Chicken – 3 Easy Recipes + Slow Cooker #Giveaway

Now that we’re well into the back-to-school routine, it’s time to kick back and enjoy the blessings of fall – however these are busy blessings that require chauffeuring, chaperoning and cheering from the stands. So, how am I supposed to provide a hot home cooked meal and gather the family round the table with everyone coming and going and looking at me for a ride? And, when I’m rewarded with a couple rare hours to take a break from mom mode, I’m often finishing up a work project or squeezing in a run  — typically cooking dinner is not at the top of my priority list, even as a food blogger!

You parents with equally over-the-top schedules already know the two lifesaving words I’m going to say – SLOW COOKER! It was only just a few years ago that I fell in love with slow cooking, my prior history with the method was only that of an innocent child dutifully eating her dinner – I have some not-so-fond memories of old-school slow cooker meals. Mom, I know you’re reading this and it wasn’t you, I think mushy carrots and fatty meats were just culinary trends of the 70s.

One of my favorite recent creations is a side dish recipe for Slow Cooker Caesar Artichokes. Side dishes, desserts, beverages – all these things can be made in a slow cooker. But, probably the most convenient slow cooker recipe is to make a big batch of beef, chicken or pork that can be rationed out over the week or frozen for later in the month. Since I’m a big fan of doing some global variation of chuck roast in the slow cooker (insane flavor and fall-apart fork tender), I thought I’d branch out and do some chicken breast  — enough to last me through a few recipes for my family of 5!

Needless to say, I was pretty excited that Hamilton Beach sent me the Set ‘n Forget® 6 Qt. Programmable Slow Cooker With Spoon/Lid – the stainless-steel beauty is a real workhorse in the kitchen that will cook up ever your biggest batches in hands-free, stress-free style. It’s really helpful that this particular model has three modes — program, probe and manual. The “program mode” is super convenient for those SUPER busy days – just set the cook time and then when it’s up, the slower cooker automatically shifts over to warm.  To avoid overcooking, I really appreciate the “probe mode” – here you stick a metal probe into the thickest part of a roast or other hunk of meat and, once the internal temperature you’ve indicated has been reached, it switches to warm.

Do you like to bring hot meals to holiday parties or pot luck gatherings? Another useful feature of this slow cooker is that it has travel-friendly clips that lock down the lid so you don’t end up with a big batch of chili all over your car. Slow Cooker Balsamic Honey Chicken Recipe

  • 5 pounds boneless, skinless chicken breast
  • 1 cup chopped sweet onion (like 1015 or Vidalia)
  • 2 teaspoons dried thyme
  • 3/4 cup chicken broth
  • 1 ½ cup balsamic vinegar (don’t use your best)
  • 1 cup ketchup
  • 1/3 cup honey
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Sriracha (this can be omitted if you don’t want spicy)
  • 1 tablespoon minced garlic
  • 1 teaspoon ground black pepper
  • ½ teaspoon salt
  1.  Place chicken breasts in bottom of 6-quart slow cooker; cut into pieces if needed. Cover chicken with chopped onion
  2. In medium bowl, whisk together broth, vinegar, ketchup, honey, Worcestershire, sriracha, garlic, pepper and salt. Pour over chicken in slow cooker.
  3. Cover and cook on low for 9 – 10 hours or high for 5 – 6 hours.
  4. Transfer chicken breasts out of liquid and place on rimmed baking sheet. Let cool for 10 minutes and then shred with fingers or fork.
  5. Take 4 cups of cooking liquid (discarding any fat) and place in medium sauce pan. Bring to a boil and simmer uncovered for approximately 30 – 40 minutes or until volume reduced in half.
  6. Drizzle approximately ¾ cup sauce over shredded chicken and lightly toss. Reserve remaining in refrigerator for use in other recipes.
  7. To serve, serve between a bun or with one of the three recipes below. Leftovers may be kept in the refrigerator for up to 3 days or in the freezer for 3 months. Serves 20.

Balsamic Honey Chicken BBQ Baked Potato Recipe

  • 1 lb. cooked, shredded Honey Balsamic Chicken (recipe above)
  • 4 large russet potatoes
  • ½ cup BBQ sauce (may use reserved sauce from chicken recipe)
  • Suggested toppings: pico de gallo, fresh cilantro leaves and queso fresco crumbles
  1.  Bake potatoes in microwave or oven until steaming and fluffy.
  2. Slice each potato lengthwise (without cutting through bottom) and top with ¼ pound warm shredded chicken.
  3. Drizzle with bbq sauce and favorite toppings.Serves 4.

Balsamic Honey Chicken with Fig & Snap Pea Salad Recipe 

  • 1 lb. cooked, shredded Honey Balsamic Chicken (recipe above)
  • 6 ounces baby spring mix lettuce
  • ½ pound figs, quartered
  • 4 ounces sugar snap peas, halved lengthwise
  • 2 ounces blue cheese crumbles

For dressing:

  •  1/4 cup reserved cooked down sauce from chicken recipe (or any BBQ sauce)
  • 1 tablespoon apple juice
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon chopped parsley
  • ½ teaspoon ground black pepper
  1. Divide lettuce among 4 plates and top each portion with ¼ pound shredded chicken.
  2. Add figs and sugar snaps; sprinkle with blue cheese
  3. In small bowl, whisk together sauce, juice, vinegar, oil, parsley and black pepper. Drizzle over salads. Serves 4.

Grate Expectations – Seared Steak Thai Salad – #GrillIt #WinIt

There’s something special about summer grilling – relaxing in the great outdoors, keeping the grill master company with good conversation and a cold beer, and enjoying the season’s bounty sizzling off the grates.  It’s the perfect way to wind down after a long day, except for when it isn’t.  When the thermometer is hovering over 100 degrees, the mosquitos are as big as dragonflies, and dirty barbeque smoke is making your eyes water, it’s time to head back indoors!

Strawberry Margarita Baby Bundt Cakes (Lightened) & Mixer Giveaway!

I have a lot of love for kitchen gear . . . it ranks right up there with my passion for fitness gear. On birthdays, Mother’s Day, Christmas and special occasions, I will be over-the-moon giddy with excitement if you gift me with the latest in running shoe technology or a shiny, new kitchen gadget that I “absolutely must have” and will probably only use once. But the great thing about being a food and fitness blogger is that I can rationalize all these frivolities in the name of workout research and recipe development – it’s a tough job, but someone has to suffer losing toenails because she wore the wrong compression socks during an endurance event or got “too cold” in the winter because she insisted on making smoothie after smoothie in search of perfection.

A couple pieces of kitchen gear I never grow tired of are my mixers. Hamilton Beach recently sent me two of their mixer models to try out – the 6 Speed Stand Mixer (Model 3326) and the SoftScrape™ 6 Speed Hand Mixer with Case (62637) (and another pair of these mixers are available in my giveaway at the bottom of this post).  Whoohoo, I was so excited because I have had some pretty traumatic mixer distress over the last year. First, my cheapie hand mixer received as a wedding gift bit the dust in the middle of party preparations. To be fair, I had used this mixer quite a lot in the 20+ years of its life. Although, it was very convenient to have a hand mixer available for quick baking projects, I never replaced it since I had the highly-coveted Kitchenaid stand mixer begging to be put into use. But, let me tell you what happened next –  the horror!  One day, I was mixing the ingredients for a (I can’t believe I’m admitting this) Paula Deen-esque Truffle Pie, I turned my back on the machine while the machine did its thing. Then all of a sudden, a “clank” followed by a hideous, grinding noise and then total silence fell over the room.   Apparently, the Kitchenaid logo metal piece-a-part (where the big attachments screw in) had become loose and the continued vibrations from the beating shook the entire thing loose. The big screw thing, fell into the bowl, got jammed between the beaters and broke a mechanism in the engine. I was so upset, I cried.

I’m over it, especially now that I have these two new mixers! The big stand mixer is awesome and does pretty much everything the brand-that-shall-not-be-mentioned does, from what I can tell. It features that same single paddle of the “other guys” that spins while rotating around the entire perimeter of the 3.5 quart stainless steel bowl. There are three attachments for a variety of recipe needs (the paddle, the whisk and the dough hook). There are also six speeds as well as a special, slower folding setting. I used a sugar substitute baking blend and no-fat milk to take some of the guilt out of this fun dessert – oh and the strawberry sauce isn’t much more than pureed berries and lime juice with a little splash of tequila!

Mini Strawberry Margarita Cakes Lite

“Lightened-Up” Strawberry Margarita Baby Bundt Cakes Recipe

  • 1/2 -cup butter, softened
  • 2/3 cup sugar substitute baking blend with 1:2 replacement ratio*
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lemon zest
  • 3 eggs
  • 2 1/3  cups cake flour
  • 1 1/2 teaspoons baking powder
  • 3/4 cup skim milk
  • 1 teaspoon coarse sea salt
  • ½ cup chopped fresh strawberries

* if using regular sugar, double the amount to 1 1/3 cups

For the Sauce:

  •  1 1/2 cups chopped fresh strawberries
  • 3 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon tequila
  1. Preheat oven to 350 degrees. Grease and lightly flour 6-count mini-Bundt pan. In a large bowl cream the butter and sugar substitute until fluffy.
  2. Beat in the lime juice, lime zest, and eggs until well combined.
  3. In a separate bowl stir together the cake flour and baking powder. Add alternately with the milk to the egg mixture. Beating just until combined after each addition.
  4. Sprinkle scant amount of coarse sea salt into to bottom of each mini Bundt pan, distributing the 1 teaspoon equally across Bundts. Next divide approximately ½ cup chopped strawberries equally among the bottoms of each cake (about 2 teaspoons each). Add the batter to prepared pan and bake for approximately 25 minutes or until a toothpick inserted comes out clean.
  5. Remove from oven and let the cakes sit in the pan for 5 minutes. Run a knife between the cakes and the pan, if needed, and remove to a baking rack to cool completely.
  6. Meanwhile, make sauce by blending remaining 1 ½ cups chopped strawberries with 3 tablespoons lime juice, 1 tablespoon honey and 1 tablespoon tequila in blender until pureed. Transfer mixture to small saucepan and bring to a boil over medium-high heat. Reduce heat and let simmer for 5 minutes, stirring occasionally.
  7. Serve sauce over cakes and garnish with fresh strawberry, if desired.
