Eat More Fruits & Veggies | Confetti Lettuce Wraps #Recipe

It’s the most wonderful time of the year. Hum along now. There’s fresh produce for shopping with vine-ripe goodness a popping, to nourish my family held dear. Yes, it’s the hap- happiest season of all, with foods so darn delicious and purposefully nutritious, for friends come over to call.  Okay, while I might not be a songwriter at heart, I certainly am a natural-born lover of warm weather and the wonderful bounty of byproducts the spring season brings – namely an abundance of fruits and vegetable, beautiful flowers and the invitation of mild mile upon mile on the running trails.

Today I’m so happy to share a trail running tempo run I created for CorePower.com (and awesome, high-protein recovery shake I frequently drink) and a rainbow-inspired dinner idea for Confetti Veggie, Fruit & Bean Lettuce Wraps – perfect for a  #MeatlessMonday!

Now, onto the food! I love this healthy recipe because it uses more fruits and vegetables that can be counted on two hands. Gobble up a few of these lettuce wraps for lunch or dinner and you’ll be well on your way (if not exceeding) daily consumption goals for fruits and vegetables. Did you know, according to the Center for Disease Control, only a third of American adults report eating two servings a fruit a day and less than 27 percent consumed three or more servings of veggies, the minimum recommended daily amount (RDA)?  Notice how I bolded the word minimum? That’s because the RDA sets forth only the lowest level of nutrients needed for the average, already healthy person to keep from becoming malnourished. The minimum.

I truly believe we should all be eating more fruits and vegetables, as opposed to the minimum. I wrote a post for Living Litehouse about how, as Americans, we are blessed to live in a country with easy access to high-quality, fresh foods that are reasonably affordable in the scheme of things. If you don’t agree, put your Starbuck’s latte or iPhone down and think about it for a minute — I’m taking a soapbox stance here.

I recently gave an affordable healthy cooking demonstration in a 300+ packed auditorium in the lower-income part of town. The participants were friendly, engaged and open to learning my healthy cooking tips. Many approached me afterward talking about the woes of chronic health conditions (created by being overweight). I got home and, at first, thought it unusual that I had about 250+ more “direct” referrals in my Google Analytics for the day – that is, until I realized that as I was on the stage, all these low-income people were hitting my blog from their smart phones.  This argument that eating healthfully is too expensive gets a reality check. Remember,  you don’t need to shop at Whole Foods (unless you have money to burn) to eat well. Put down the $6 fruit cup and buy a sale-priced 10-pound bulk bag of the grapefruit (or whatever) for half the price at the “regular” grocery store.

A recent Harvard study reports it only takes $1.50 per day to eat a “healthy” diet as opposed to the processed, packaged and convenience diet that has become a way of life for many – I’d even say it costs even less if you know how to shop sales. So, in the end – it’s a priority, do you want a data plan or to die? Okay, I know that’s a little extreme – but you know what I’m saying.

Confetti Veggie, Fruit & Bean Lettuce Wraps Recipe.

  • ½ cup seeded and diced cucumber
  • ½ cup grated carrots
  • ½ cup chopped red onion
  • ½ cup diced strawberries
  • ½ cup diced pineapple
  • ½ cup diced papaya
  • ½ cup diced mango
  • 1 15-oz. can black beans – drained and rinsed
  • 1 tbsp. chopped fresh cilantro
  • 2 tbsp. diced fresh Jalapeno
  • 2 tbsp. green onions, sliced
  • 2 head washed and dried baby romaine lettuce leaves
  • 2 oz. crumbled feta cheese
  • 1 oz. snow pea shoots
  • 4 oz. Litehouse Food’s Huckleberry Vinaigrette* (extra  for dipping)

*You can use any “sweet-ish” vinaigrette you prefer like a poppy seed, honey Dijon, balsamic, etc.  I just love the Huckleberry Vinaigrette by Litehouse Foods because it is so fresh and flavorful, not too sweet – and has actual whole huckleberries in the bottle!

  1.  In large bowl, toss together cucumber, carrots, red onion, strawberries, pineapple, papaya, mango, black beans, cilantro, jalapeno and green onions.
  2. Stir in Huckleberry Vinaigrette (or dressing of choice) and allow mixture to sit for five minutes so herbs rehydrate.
  3. Add a spoonful of fruit and vegetable mixture to the center of lettuce leaf. Repeat for remaining lettuce leaves and mixture.
  4. Sprinkle feta cheese on top of mixture and garnish with snow pea shoots.
  5. Serve with additional Huckleberry Vinaigrette for dipping

Also makes a great topping for fish, pork and poultry!

 

Cauliflower and CrossFit

Okay, doing this whole 2014 CrossFit Games Open has been a real challenge for this runner who likes to cherry pick her WODs. I’m the one who won’t do the heavy squats because “I’m saving my legs for a race” or substitutes pull-ups for muscle-ups because “they are more fun and I can actually do them.” I’m made it through four of the open workouts with just one left this weekend, and let me tell you every weakness has been exposed –but my spirit hasn’t been broken.  For every double-under I tripped over and weighted lift I buckled under, I made up for with pretty-darn good abilities on the bar and lots of endurance. Really the failures (although I really can’t call them that) only put a burr in my britches to become proficient in the skill.  Check back next week for a full report on the whole experience.

Now onto the food! If you’ve been on Pinterest or crossed paths with a Paleo food fanatic, you’ll well aware that the once neglected cauliflower has been elevated to king of the cruciferous vegetables.  This big white vegetable is no longer looked upon as your grandma’s cauliflower, boiled and bland. Today you’ll find smashed cauliflower, riced cauliflower, cauliflower in muffins, soups and curries – and even cauliflower pizza crust.

My kids think cauliflower looks like a human brain and I tell them that’s because it’s a really smart food to put on their plates. High in dietary fiber and low in calories, this versatile veggie is packed with beneficial vitamins (including vitamin C, vitamin K and manganese) that have antioxidant and anti-inflammatory properties.

While you can get crazy with cauliflower, sometimes simple healthy recipes are the best. My recipe for “Oh Yes” Oven-Roasted Cauliflower will be gobbled up by everyone in the family, even the pickiest kids! Creamy and slightly sweet when roasted, my husband took a bite and exclaimed about it’s deceiving decadence — “it tastes like butter!”

“Oh Yes” Oven-Roasted Cauliflower Recipe

  • 1 large head cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 tablespoon garlic salt
  • ¼ cup fresh grated Parmesan cheese
  • 1 tablespoon fresh chopped parsley
  1. Preheat oven to 425 F degrees.
  2. Remove outer leaves from head and thoroughly wash cauliflower.  Use a knife and/or hands to break up cauliflower into approximate 1-inch pieces.
  3. Add florets into bowl and drizzle with olive oil. Sprinkle with chili powder and garlic salt; toss to distribute evenly.
  4. Place cauliflower on large rimmed baking sheet. Bake at 425 F degrees for 20 – 25 minutes, stirring once or twice, until beginning to turn light brown.
  5. Sprinkle with cheese and return to oven for 2 minutes. Remove from oven, sprinkle with parsley.

Serves 4.

{Green} Giant Taste! Cauliflower & Green Chile Tamale Bites Recipe + #Giveaway

It’s a very familiar scene. I’m in the midst of preparing a holiday dinner (or even a weeknight supper) and family and friends begin congregating in the kitchen to see what smells so good and make diversionary chit chat. It’s not that I don’t want to visit with them, because I most certainly do! My husband calls it “quality control” and my three teenage boys don’t even bother explaining away this blatant devouring of the dinner rations. Forget about sneaking tastes on the sly; mounds of shredded cheese, meticulously sliced fruit, chopped nuts and other ingredients intended for the night’s recipe disappear right off my cutting board. In all honesty, I’ve been the guilty party as a guest in other folks’ homes . “Oh, do you think that roast is done yet or should I add a little more salt and pepper to those mashed potatoes? I’ll just have a small taste, if you don’t mind – thank you very much!”

However, with a little pre-planning, it’s easy to whip up a first course that will tide everyone over until the main dish is ready. My stash of frozen Green Giant vegetables has become not just a reliable source for healthy side dishes, but also nutritious ingredients for hors d’oeuvres.   If you’ve read the blog more than once or twice, you may have noticed I love me some southwestern cuisine – the smoky flavors and spicy heat turn even the mildest-mannered menu into a boot-stompin’, chop-smackin’ experience.  My recipe for Cauliflower & Green Chile Tamale Bites with Chipotle Crema will keep even the most ravenous rustlers satisfied and out of the main dish until the dinner bell is rung. Cauliflower & Green Chile Tamale Bites with Chipotle Crema Recipe

Ingredients:

  • 1 box (10 oz) Green Giant® cauliflower & cheese sauce
  • ½ cup cornmeal
  • ¼ cup all-purpose flour
  • ¾ teaspoon baking soda
  • 1/2 cup milk
  • 2 eggs
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon salt
  • ¼ cup chopped roasted Hatch green chiles (or 4-oz can green chiles)
  • 1/3 cup grated Colby Jack cheese
  • ¼ cup bacon crumbles

Chipotle Crema:

  • 1/2 cup fat-free sour cream
  • 2 teaspoons fresh lime juice
  • 1 teaspoon ground chipotle powder

Heat oven to 375°F. Generously grease or spray 24 mini muffin cups with cooking spray. Cook cauliflower as directed on bag for minimum time. Let cool for 5 minutes and coarsely chop cauliflower.

In medium bowl, mix together cornmeal, flour, milk, eggs cumin and salt with whisk or fork until blended. Stir in cauliflower and cheese sauce, green chiles, cheese and bacon. Divide mixture evenly among cups, filling ¾ full.

Bake 16 to 18 minutes or until toothpick inserted in center comes out clean and tops are light brown. Cool 5 minutes. With thin knife, loosen sides of bites from pan; remove to cooling rack.

Meanwhile, mix sour cream, lime juice and chipotle powder in small bowl until smooth. Top each warm bite with mixture or serve on the side.

Makes 24.

Halloween Appetizers so Healthy, It’s Scary!

For most, Halloween is a valid excuse to eat fun-size chocolate bars and candy corn until falling into a sugar coma – and I’m not immune. Aside from chocolate anything (natch), my favorite “kid” candies are banana Laffy Taffy, Tootsie Rolls and Hot Tamales!  There’s a reason why I don’t buy Halloween candy until the day before; if it’s in front of my face, I’m going to eat it! Actually, I’m repeating my treats last year and giving trick-or-treaters SunRype Fruit Strips (100% all-natural, no preservative fruit leathers). Now, I’m not that mom who refuses to serve something sweet and sinful. I’ll also be making this Halloween Trash recipe I found floating around on Facebook – it certainly looks to die for! So, for whomever is keeping score out there, this one is NOT as healthy! But, enjoy!

Here’s my take on throwing it together (plus I’m adding m&ms and pretzels) — 8 cups popped corn using my microwave brown paper bag method, 2 cups mini pretzels , 1 cup fall-colored M&Ms, 1 cup candy corn, 1 pound vanilla bark, Halloween sprinkles. Mix popped corn, pretzels and candy together on wax-paper lined, rimmed baking sheets. Drizzle with vanilla bark melted according to manufacturer’s directions. Toss to coat evenly. Finish up with Halloween-colored sprinkles.

School is back in session for the kids and extra-curricular activities are in full swing. Let’s see, we’ve got cross country (two different teams), Pop Warner football, band, robotics team, extreme performance percussion team, Boy Scouts, National Honor Society and school play practices. Veggies always make a great snack. Loaded with vitamins, minerals and micronutrients, plus many of my favorite raw vegetables like mini carrots, sugar snap peas and cucumbers have such a satisfying crunch. One thing I’ve noticed about getting my kids to eat vegetables for a (gasp) snack is the presentation. I’ve had lots of luck getting them to munch on mini salads by making easy-to-grab veggie cups that have a little dollop of ranch dip at the bottom.  If you want some other ideas, I did a fun post on this for Litehouse Living on mini veggie cups.

Who doesn’t love popcorn as a snack? The average American eats more than 50 quarts of it a year and I know that I can’t pass up a bowlful once I smell it popping. As an alternative to store-bought microwave popcorn which is packaged with congealed transfats, sodium and chemicals, I like to microwave mine in a brown paper bag, plain and simple!  It couldn’t be easier or healthier; most people are surprised to find out this can be done without fats or oils. For a special treat, my recipe for Caramel Almond Popcorn with Coconut Oil and Honey is fun to pack in backpacks or for movie night – and it’s even acceptable to most of my Paleo diet peeps!

Out of necessity, other snacks have to be grab-and-go – I like to call these types of “fast” foods either purse snacks or car snacks! Beef jerky has always been a popular with my family, now we have a new reason to love it even more. Recently at the TriRock Expo I bumped into the Austin rep for Krave Jerky and he hooked me up with some of their gourmet jerky – previously, I had only tried the Sweet Chipotle Beef Jerky but found out this Sonoma-based company has lots of other flavors profiles I love like Black Cherry Barbeque Pork and Basil Citrus Turkey Jerky.  Not at all like gnawing on an old boot, as is the case with some jerky; low and slow braising is Krave’s secret to its super-tender texture. I’m a #Kraver!
