BBQ Beef Bean & Sweet ‘Tater Taquitos #TexMexAndFlex

BBQ Beef, Black Bean and Sweet Potato Taquitos are baked and filled with wholesome ingredients. We are up to our chin guards in football season, so I’ve kicked up my family-friendly, meal-prepping madness into overtime. With just a little “overtime” work on Sunday, I can prepare a couple batches of my BBQ Beef, Black Bean and Sweet ‘Tater Taquitos and have enough for a couple quick-fix, weeknight dinners and leftovers for snacking on the big game day. By the way and sorry for the questionable rhyming (haha), I originally developed these onfleek-o taquitos for BeefLovingTexans.com, so check it out!

BBQ Beef, Black Bean and Sweet Potato Taquitos make a quick and easy dinner solution. Baked, not fried, and filled with wholesome ingredients to fuel an active lifestyle. Meal prep a couple batches for the freezer for busy weeknight meals or football game day snacks.

While my teenage boys and their always-hungry friends are munching what they assume to be merely crispy, crunchy, cheesy, beefy taquitos (rolled small tacos by any other name!), I snicker in silent satisfaction knowing I’ve snuck in some wholesome nutrition to fuel their busy, active bodies. Lean beef for muscle-making protein and iron, beans for even more protein plus fiber, and sweet potato in a whole grain tortillas for a double-whammy of healthy complex carbs for long-lasting giddy-up-and-go.  As Guy Fieri would say in his own punderful way, “You can’t beato these taquitos!”

These tasty taquitos can be devoured right out of the oven, or freeze a batch and then just toss in the oven (or toaster oven!) on those endless days that have gone into double overtime. This is an easy way to pass the proverbial ball over to the kids and let them do some quarterbacking in the kitchen.

bbq-beef-black-bean-and-sweet-tater-taquitos-preppingOne the taquito innards are made, assemble by adding a spoonful in the middle of a whole grain tortilla, rolling up and baking (no frying here and they are still super crunchy). While corn tortillas are traditional for taquitos, I’ve found that the corn-flour “mix” tortillas are more pliable and less prone to crack. If needed, insert a toothpick to keep tortillas secure, but don’t forget to remove before serving!

Lower-Fat Blue Cheese & Fire-Roasted Tomato Queso – Good Game Day Grub!

Lower-Fat Blue Cheese Queso makes a great football game day snack served with baked chips, pretzels or veggies.Football parties, tailgating and fall season gathers require dip to draw people together. Just think of all the great gossip, high-fiving and friendly smack talk that has gone down in, what I like to call, the “Chip and Dip Zone.”

But, maybe you hesitate to enter the ZONE for fear of the cheesy dip – is it made of mystery processed “cheese,” loaded with fat upon fat, or just boringly bland?  I’ll admit, these thoughts cross my mind, especially flashbacks of tepid fake orange stadium cheese on stale round tortilla chips.  That’s why I came up with my Lower-Fat Blue Cheese & Fire-Roasted Tomato Queso – it’s bold and it’s better for you made with REAL ingredients.

Lower-Fat Blue Cheese & Fire Roasted Tomate Queso makes a great football game day snack served with baked chips, pretzels or veggies.

I think you’ll definitely widen your mind (and mouth) in appreciation for my Blue Cheese & Fire-roasted Tomato Queso. This unique cheese dip marrieds the audacious attitude blue-cheese with the smoky laid-back goodness of tomatoes roasted over flames. I’ve used my fav brand of blue cheese (Simply Artisan Reserve Blue Cheese Crumbles) and canned fire-roasted tomatoes which.  Of course, canned tomatoes are convenient and taste great in recipes, but did you know that they contain more lycopene (a free-radical destroying antioxidant) than those fresh off the vine? It’s true!

litehouse-blue-cheese-queso-snack-tray-beer-day

While this cheese dip recipe requires a whisk, it’s quite easy prepare, coming together in just 15 minutes or less– and you can keep it warmed for a party but pouring into a small slow cooker. It was first whipped up to celebrated International Beer Day with Litehouse Foods.  Using low-fat dairy products help keep this snack sensible in moderation and, if you are on a gluten-free diet, it is easy to swap out flour used in the roux with a gluten-free flour blend (I use Living Now Gluten-Free All-Purpose Baking Flour, it’s inexpensive and provides the right texture for my recipe)

Serve Lower-Fat Blue Cheese & Fire-Roasted Tomato Queso with veggie sticks, artisan chips, or chunks of crusty bread. I’ve even reheated the leftovers and poured over cooked zoodles and topped with shrimp for an impromptu “pasta” dinner.

If you are hosting a huge football party, you might want to consider adding my Healthy Snack Stadium to your spread of snacks, appetizers and game-day grub.

Soccer Strong Workout, Injury Prevention + Giveaway

Fear Nothing. Give Everything.  I love this attitude of Storelli Sports, a really awesome company that makes next-gen sports protection gear for professional and amateur athletes.

TheFitFork.com SoccerThis company’s main market is soccer; you know how crazy those soccer players get – I’m being serious! Bodies crashing into each other, dives onto the turf, abrupt lateral movements, unwanted head-to-head, body-to-goal or ground contact and more.   I’ve got a kiddo who plays soccer (or you may call it football) – he also is into the rough and tumble sports of lacrosse and American football. So, it’s safe to say that sports injury prevention is always on my mind.

Storelli Next Generation Soccer Injury Prevention Gear

All this thrashing about on the soccer field sort of sounds like a day spent doing Spartan or another obstacle course race – and I’m thinking that some of their products may help me give 110% at my next race with  less worry of bumps, bruises, cuts, contusions and concussions. Yeah, that’s right I said concussion – the perfect reason to wear the Storelli ExoShield Head Guard, a comfortable and stylish soccer head guard that reduces incidence of cuts and bruises on covered areas . . . and may help lessen risk for concussion.

goose egg advilPlease note that there is no conclusive evidence on the concussion reduction, but I say “better safe than sorry,” seeing as I have given myself a concussion RUNNING (it was an epic fall) and also at the last Spartan Beast I slid through the mud and into a tree limb for a beauty of a  goose egg (and thankfully nothing worse).

Honestly, the Storelli ExoShield Head Guard (below) is so comfortable and weighs only about 8 ounces; you’ll quickly forget you’re armored up!

The BodyShield FP Sleeveless Undershirt makes you look like an intimidator showing off those guns and also offers innovative technology to help control long passes with the chest, along with protection on the ribs, to reduce the impact caused by physical clashes with opponents.  You may like this armor for trapping hard shots and reducing rebounds, I’m making sure my son wears this to every match. And then, I’m going to steal it out of his gym bag on race day to really help protect my chest and ribs as I hurl myself up onto some of the 10 foot walls on an obstacle course race or army crawl my body over craggy rocks.

Here is a great video rundown on how Storelli Soccer Gear can help you if you play a field position (also a video for goalie).

Spicy-Sweet Smokehouse Bacon Almond Granola #GameChangingFlavor

This post is sponsored by Blue Diamond Almonds. Ditch the chips and grab some Game Changing Flavors this football season! Enter for a chance to win the Ultimate Football Party Prize Pack, get great savings and ideas for delicious snack hacks at GameChangingFlavors.com .Smokehouse Bacon Almond GranolaWe take football SERIOUSLY here in Texas.  Friday nights are spent under the lights cheering on the hometown boys and socializing with friends. All day Saturday is set aside for tailgating and stomping boots in the fan stands of our hometown college team (or Pop Warner) and Sunday and Monday we gather ‘round the big screen to rally behind our favorite professional teams. Pop Warner Football - TheFitFork.com

So, during the season, it’s not uncommon to have four straight days of football. Oh, and the holiday bowl games – those may be the best because usually all the family and friends are around to celebrate! You may not believe this, but it’s TRUE – every year my family pushes our Thanksgiving feast from Thursday to Friday just so some of us can attend a very important collegiate game. Like I said, football is serious business in these parts.

Healthy Football Snack StadiumSecond to the serious excitement of the gridiron action is the snack table lineup. Actually, I know some (okay, maybe me) would say that good football grub is the most important part of the day – in fact, I go nuts for football food! Nuts, especially almonds, are always part of my starting snack lineup and they pair with everything from cold-cut sandwiches, pizza, wings and healthier things – including the over-the-top Healthy Snack Stadium I crafted for a big bowl game last year!

Salty Sweet Smokehouse Almond Bacon GranolaThis football season, I’m serving up Salty-Sweet Smokehouse Almond Bacon Granola – a real winner based on how many times I have to refill the bowl even before half-time!  People are like “bacon granola?!” and I’m like “heck, yeah!” – it’s spicy, sweet, smoky, salty, what more could you want? Everyone knows that bacon makes everything better, but so do almonds!  Almonds are little powerhouses of nutrition – a handful (about an ounce or 23 nuts) has 163 calories, 6 grams of protein and 14 grams of heart-heathy fat along with all sorts of essential vitamins, minerals and other nutrients.  I especially like almonds for a snack because they are hunger-squashing and keep me satisfied until my next meal!

A bowl full of this Salty-Sweet Smokehouse Almond Bacon Granola is definitely going to satisfy the snack cravings of the biggest armchair linebacker or peppiest cheerleader at your party. The bacon definitely pushes this easy granola recipe into the Snacking Hall of Fame (okay, I made that up), but it is also balanced with healthy ingredients like whole grain oats, dried pears (or apples), quinoa, flax seeds, real maple syrup and more.
