My recipe for Low Carb Chocolate Chip Pumpkin Protein Bars are a treat that you can feel good about eating for breakfast, snack time or dessert.
Feeling a snack attack coming on and trying to stay away from the Halloween candy? Low Carb Chocolate Chip Pumpkin Protein Bars whip up in five minutes and, using a few sugar-free chocolate chips, help assuage that “I wanna devour all the sweet things” feeling that can sometimes come over us (or maybe I’m just speaking for myself, haha).

These Low Carb Chocolate Chip Pumpkin Protein Bars are vegan, gluten-free, paleo-friendly and with only 5.7 net carbs, these bars can find a place in the highly carb-restricting keto diet. If you want to keep vegan, then make sure the sugar-free chocolate chips you are using remain dairy-free.
The recipe makes 8 good-sized bars with 89 calories, 2.7g fat, 10.6 total carbs (5.7g net) and 7.1g protein. You can also size them in half, and make 16 balls!

Low Carb Chocolate Chip Pumpkin Protein Bars - Keto, Paleo, Gluten-free, Sugar-free, with easy Vegan option. And, No-cook to make snack life super easy!
- 50 grams protein powder 4 scoops (a little under 1 cup total)
- 3 tablespoons almond butter powder or can use peanut butter powder, if not Paleo
- ½ cup coconut flour
- 1 teaspoon pumpkin pie spice
- ¼ teaspoon sea salt
- 2 tablespoons Allulose or Stevia baking blend or other cup-for-cup measuring equivalent granulated sugar substitute
- ½ cup unsweetened almond milk
- ¾ cup pumpkin puree
- 2 tablespoons sugar-free chocolate chips

In bow, mix together protein powder, almond butter powder, coconut flour, salt, pumpkin pie spice and allulose (or stevia) until combined.

Stir in almond milk and pumpkin puree, mix with spatula until combined. Stir in chocolate chips. Will be a bit crumbly.

Line 9" x 9" rimmed baking pan with plastic wrap.

Dump contents of bowl in pan, press down with hands until completely compacted together.

Set in fridge for 15 to 20 minutes, before slicing into 8 bars. Or, may form into balls, if preferred.

Store leftovers in airtight container, kept in fridge.
