Rich and delicious with that smoky mild taste of Gouda cheese offset by some salty ham and of course, veggies, this easy, low-carb quiche recipe bakes up without a traditional pie crust – so no worries about gluten or excess carbs and such.
You can’t beat the ease and accommodating nature of a crustless quiche – just sauté veggies, whisk up eggs, stir in cheese and bake.
I’ve used onion, mushroom and spinach as my vegetables, but this ham quiche can be substituted with most anything.
Don’t worry if you have a little more or less veggie than I call for, just as long as the egg and cheese mixture will hold it all together. Cheese-lovers, don’t forget to add a generous sprinkling of extra cheese on the top before baking!
Next, simply pop in the oven and bake until eggs are set and the top is a beautiful golden brown with bubbling cheese. After a 5-minute cool down, cut the gluten-free ham quiche into wedges and serve!

- 1 Tbsp. olive oil
- 1 cup chopped yellow onion
- 1 cup sliced mushrooms
- 2 cups chopped fresh spinach
- 1 cup diced cooked ham
- 5 large eggs whisked
- 8 ounces Gouda cheese shredded
- 1 tsp. ground black pepper
- Cooking spray

Pre-heat oven to 350F degrees.

Add oil to skillet over medium-high heat and sautee mushrooms and onions until softened, about 4 to 5 minutes. Stir in spinach, cook for 30 seconds longer until wilted. Remove from heat and let cook 5 minutes.

In a large bowl, whisk eggs, salt and pepper.

Mix sauteed vegetables (that have cooled), chopped ham, and 3/4 cup of cheese into whisked eggs.

Pour mixture into 9-inch pie dish that has been lightly coated with cooking spray. Sprinkle remaining 1/4 cup cheese on top.
